The moment you pointed out he has a soft Irish accent completely blew my mind, every word with and "or" sound like Ireland or airport he pronounces "ur" with an Irish accent! It reminds me of a Japanese friend I had who learned English in Australia and had the weirdest accent you've ever heard

A friend taught American English to students in Poland. The teacher before her was from Tennessee. The students were confused by the word chair because they had learned it as "chay-yur."

My sister got her degree in Spanish but primarily learned the language from a professor from China who spoke no English, so apparently she has a slight Chinese accent to her Spanish 😂

It could be from the tea, but I think it's a known measure of the egg being boiled too long. The sulfur (?) in the yolk starts to gather around the edges and turns green. I think the English generally soft-boil their eggs, so they probably don't see that very often.

@@sarahcoleman5269 yep you are most definitely right. it’s definitely overcooked eggs. Tea eggs are often left to cook in the herb tea broth, and left it in for hours for the flavour to seep into the egg. So they are most often overcooked, hence turning the egg yolks greyish blue. But that’s normal. But nothing to do with tea, just overcooked hard boil eggs.

@@sarahcoleman5269 yep true. It's very common in Asian countries to soak eggs in water filled with herbs for hours or even days depending on the recipe. Also boiled eggs are often eaten like snacks, so overcooking the eggs help get them firmer to be eaten wherever, and last longer if we don't want to eat them right away.

I’m one of those who’s never seen Steven He but has heard of “Emotional Damage”! My lower grade students kept saying it in class, but I had no idea where it came from and they couldn’t tell me either… 😂 Glad to finally know it’s from Steven He! His regard for people and his positivity even in the face of failures is truly inspirational.

Funny thing about the sandwiches, Steven specifically ordered Peanut Butter Sandwiches He never said jelly. So as is the case in most Chinese businesses. He got exactly what he asked for and nothing more.

Reminds me of the time my mom asked for a snow pea noodle dish and she wanted it with green beans. She did not specify that she wanted the other vegetables that already came with it and only wanted to get rid of the snow peas but assumed they understood. Well they just gave her a bowl of noodles with green beans. Technically they gave her what she asked for so

Blue around the egg yolk is fine, it happens when you boil an egg for more than 15 minutes or so, which is needed to get tea flavor to seep into the egg

Let's explain it clearly: There is a small amount of sulphur in egg yolks Sulphur evaporates when food is cooked but it is trapped inside a boiled egg and migrates out of the yolk the longer it is heated. We need trace amounts of sulphur in our diets so it's all good.

It’s a chemical reaction from the sulfur and the iron that occurs naturally in the egg whites and yolk.

"Overcooking" an egg is a Western concept. Traditionally, hard-boiled eggs in Chinese culture, especially tea eggs, were cooking and infusing in roadside stalls before refrigeration, and had to keep. It's similar to how hot dog carts are continuously boiling the hot dogs. It's only recently that it became trendy to avoid the sulfur reaction when hard-boiling eggs. Otherwise, Chinese people don't really care.

I relate so HARD to Steven's "I was at school by noon". My family immigrated from Beijing to Melbourne and I got dropped into first grade not knowing a lick of English. That trauma has stayed with me lmao EDIT: since this comment is still getting replies lol, I left Melbourne after 2 years. I live in Canada now

Hahaa I have a similar experience as well! Went from Asia to Australia too, with only knowing 'yes', 'no', 'I don't know'. Traumatised as hell... but it did make me panic-learn how to read, and thankfully after that my grades in English classes were always great. I've also come to love reading itself ❤️. You're gonna have an awful lot of emotional traumas being raised by Asian parents, but I just consider them as fantastic learning opportunities now. You need to gigantic efforts to overcome them, but once you do you do feel invincible 😆💧💧.

I understand Steven's pain. At the age of 8, I was suddenly taken from Stoke On Trent in England (where the accent is almost as indecipherable as Scottish) and dropped into Gravelbourg, Saskatchewan. I was taunted mercilessly over my accent - which, I quickly learned to adapt to "Canadian, eh?"

In case anybody wondering, the egg yolk turn blue when u cook it at high temperature, or if u cook it for too long. it still perfectly save to eat..💜💜

For anyone that could be confused, I think Steven says the mandarin word for the dish 肠粉 (chang fen), but the subtitles use the Cantonese word (cheung fun). It is a Cantonese dish so cheung fun is the name you'd see more commonly used for the dish

I was going to say the same. Something they might not know or rmbr, is that KZfaq was created in 2005. Super early 40 year olds were in there mid 20’s. We have seen the entire evolution of YT and know how it can evolve into a full time job. Not everyone can understand or comprehend that concept(Seeing the evolution of things) 😉

It's so strange to hear that his parents were supportive while he plays judgmental and always unsatisfied parents so well. I'm huge fan of Steven He (a.k.a Unkle Roger 🤣🤣🤣) and I love his videos so much. When I have kids I'll teach them English as fast as I can so they can watch his videos and take notes. 😂 We would've payed for such collaboration, but thank you for doing it for free.

His parents weren't supportive at first. I've seen other videos where he mentions this parents wanted him to stay in school first and then have his acting (thing)on the side. It wasn't until he hit a million views on KZfaq before he got a pat on the back.

In case any one's wondering, have a blue yolk is due to over boiling an egg, it's just a chemical reaction, not because it's a tea egg, it's perfectly safe to eat. Btw, that's not really a 'tea egg'. For tea egg to properly marinade, usually they will gentle crack the shell of the egg and let it sit in this huge pot of tea and herbs until the customer picks one.

rev: Technically it IS a "tea egg", while it's more visually appealing/interesting with crazed/cracked texture, that this is not does not mean it is not a tea egg as it was still cooked with the same spices.

One of the most underrated things about America is that we have the 2nd best food from every country. We don't have the best chinese food, but we have the 2nd best. We don't have the best italian food, but we have the 2nd best. We don't have the best mexican, but we have the 2nd best. Add all the other countries, plus southern food, and it creates a really diverse food scene that is unlike anywhere else in the world

Fun fact: Peanut butter toast is a staple in old-school Hong Kong restaurants, especially in the breakfast menus. You can order various combinations such as condensed milk toast, condensed milk and peanut butter toast or just butter toast.

Funny stuff! The reason you guys got just a peanut butter sandwich is because Steven only ordered a peanut butter sandwich. If you go back in the video where he is placing the order, and listen carefully you can hear where he forgot to say “and jelly” sandwich. I’m still laughing.😂

OMG!! It’s called Cheung Fun?! I was trying to look for it for years. I had it once back in 2019, my very distant relative from China made it for us but I didn’t get to know the name and when Covid hit he just went back to China. Only thing I remember is that it’s very delicious and already my favorite food after a few bites. Gonna look for it now. Thanks a lot jolly and Steven ofc!!

Yup, cheung fun (the Canto pronunciation) or chang fen (the Mandarin one). It's also a staple item at dimsum places, so that's one more area to explore :)

@@TF_NowWithExtraCharacters dim sum is little different, they use the thicker premade fun like for chow fun noodles, these are thinner and fresh made to order. Both are good but different experience. I like the ones wrapped around the cruellers

'Cheung fun' is definitely a favourite dim sum item, and it takes skill to make by pouring the rice batter over cloth in steamer drawers, to be rolled with different fillings. It is one of those dishes that people (esp. the grandmas who are ruthless) will storm the dim sum cart for as soon as it comes out of the kitchen to get a plate. Bring your stamp card. Tip - get a table near the kitchen if you are in a big dim sum place with the carts. If you are seated really far away good luck getting your favourite items. Also, if you are in a cart dim sum place (more and more rare unfortunately), probably avoid the servers coming around with a tray of random dishes. They probably won't be quite as fresh - ie perhaps not piping hot. If you want a special large dish such as a nice pile of Chinese greens or noodles, ask your server and it will be made fresh for you. Regardless, it will be fun, and go with a group so that you can try lots of things. As with all restaurants, if there are a lot of people tucking in, most likely a good sign. Another tip - drink lots of the tea and refill for others. It helps with digestion as some things can be deep fried (and yummy). To me, my favourite kind of brunch. Don't worry if you don't know the names of things, the aunties with the carts will lift the steamer lids and things and you can see if you think something looks good and just point, and they will give you a smile.

This was really really nice seeing you guys with Steven He I watch his videos. Oh and as an FYI a "BLUE" or green edging to the yolk is similar to oxidation. The process happens when the egg is over cooked, the whites get too hard and release their hydrogen and it mixes with the sulfur yolk. If an egg is perfectly cooked you will only have the faintest hint or film blue/green layer between the yolk and the white. If you want to prevent this discoloration try "hard cooking" vs "hard boiling" your eggs. The green can also become more prevalent if you have allot of iron in your water you use to cook your eggs.

@@amylynnswe7390 Where do you get that idea? Are you thinking about Korea's more recently history with Japan from WW2? Don't forget that Josh was first exposed to the Korean language and culture when he was attending international school in China and most of the other students there were Korean. Also, a lot of the vocabulary and one of the two number systems used by South Koreans are Sino-Korean.

Its actually very obvious that Koreans do not like Chinese They have disputed so many times over the claims of cultural traditions When Josh was in hot water about the violations of Covid restrictions, people mocked him by saying "Chinese Englishman" and nasty things So yeah their hate is not subtle

@@banshee1133 the dimsum version and the meal version are different, same as how there are 2 different versions of dandan mian. Hong Kong tends to take foods and do these super interesting delicious twists (often including sesame paste or peanut butter🤣)

It’s so interesting to hear about the KZfaq journey. Especially when I didn’t get into him because of emotional damage. I heard OF it because people kept saying it but I never actually knew where it came from xD If was the off brand videos on KZfaq that got me and then learning his goal was to be an actor and although it didn’t pan out due to the pandemic, his entire KZfaq channel is all him acting and I thought that was great. He took his dream into his own hands; I loved that.

Hey I know this comment is 2 months old, n you probably don't care anymore but idk hope this explains something🤷😣 The blue greyish yolk is caused by overcooking the egg. To make egg tea you need to boil and steep it in tea for a long time thus the yolk turned blue.

So happy to see you guys in NYC, and w/Steven of all people. Those tea eggs were looking a lil' pale though. Normally you'd crack the shell a bit while cooking so the tea can seep in. Gives much more flavor and also nice random vein-y patterns to the surface. Both the eggs and cheung fun are some of my favorite foods. Oh and I can also attest to the konjac jelly being really good. I picked some boxes up at our local Hmart years ago and they're one of the few not actual sugar items that I really like.

Dude I was just thinking the same thing, that egg was super pale. Often the tea is also mixed with other things like soy sauce that should have made it way darker too. The canteen at my office lets them soak for like 24hours before serving them, so even though the shells aren't cracked they are much darker.
