Nyonya Kaya (Coconut pandan spread) - Eggless + Vegan (more than veggies original recipe)

Kaya, a Southeast Asian coconut egg jam, is a well-loved breakfast spread here. Usually served on toast with kopi (local coffee). Here's the recipe video of an eggless (vegan) version, that doesn't involve pumpkin or sweet potato.

Notes:
- This recipe takes almost 3 hours to do. So do it only when you have time!
- Can be kept in an air tight container up for 1 week in the fridge.
- Never store anything homemade with coconut milk at room temperature for long, eg for more than 3 hours.
- Not every brand of coconut milk works, some give an overly strong coconut taste. You have to experiment.
- I usually prefer using non-organic tofu. Because organic tofu tends to have a stronger soy taste.
- For safety, when cooking the kaya, check near the end to make sure the pot still has water.
- Cook longer for a thicker spread, shorter for thinner.

Must keep in fridge :) up to a week or 10 days if your fridge is very cold.

Hi, may i ask how did your tofu mixture thicken up while boiling? coz i tried it did not thicken at all it was watery... :/

Maybe your tofu is not suitable. Recommend to use the same brand of tofu I used, it's from NTUC :)

My hunch, yr tofu mixture didn't achieve a high enough temperature for water to evaporate maybe? Try having your bowl submerge slightly in the boiling water.

commonly used to impart pandan smell into food here in Southeast Asia :) the blended pandan is to give more of taste, I find.

there are some vegetarian grocery shops that may sell pumpkin or sweet potato vegan kaya but they dont taste like regular kaya. Nomvnom at clarke quay used to offer vegan kaya toast breakfast set, not sure if they still do anymore. maybe you can check with them? thank you for viewing!

Thanks for the video! Had just tried it. Looks fine but coconut taste is very strong. Will try the brand in the video next time. Also, where do you get such fresh leaves from?

thank you! yes some brands of coconut milk gives a way too strong flavour. this is the best brand I've worked with so far. leaves are from wet market :)

@@morethanveggies thank you. You had mentioned that the kaya can be kept 7-14 days refrigerated? Can I keep it in freezer instead? The instruction on for the coconut milk says consume within 3 days after opening from packet. Think it doesn't apply to cooked coconut milk?

My kaya ended having a very strong coconut oil taste. Did i overcook or burn the mixture?

some brands of coconut milk can do that, try another brand or fresh coconut milk. If you're in singapore, the fresh packet ones from NTUC's chiller (used in the video) works better than UHT types.

Hi I made it, it came out perfectly but the coconut smell so strong and it overpowers the pandan flavour. I used fresh coconut milk. Please advice. Thank you.

Mine looked much white idk why.. Maybe my coconut cream was thicker.. I used gula melaka instead. But tastes good. Thank you for the recipe.
