What CrimsonButterfly84 said isn't wrong though, while she used drugs and alcohol to manage her anxiety back then, she now uses stuff like Xanax. There are older concerts of her where she even says "It's really scary when everyone can see you and you can see them". And then again she is not stupid, she also uses it now as a marketing, because the bob has become her brand.

As an Adele fan I can solemnly confirm that Adele does that trick a lot, but not when she had to sing a high note. She does that before the high note for some rest and to make the performance even more emotional, because it's unbelievable feeling when the whole audience is singing your lyrics.

Love the interaction between her and Kurt Russell. She's a gem and he's a treasure. "Big Trouble in Little China" and "Tango and Cash" were two of my favorite action/comedy films from the 80s growing up.
