Nice setup my man!!!! I'm a Weber nut myself with 3 kettles and a Weber gas grill. I also have 3 vertical water smokers that achieve EXCELLENT results, but are a pain in the ass dealing with the fire through the tiny hole. I'm gonna pull the trigger on this and hook it up with the gaskets and toggle bolts. Can't wait, it's happening real soon. I'm gonna cater to 130 people for the terrible event that is my mother's "celebration of life", she passed a few months ago and this Covid crap has really put a damper on things. Hopefully it'll be soon and I can bring a little positivity and amazing food to the event by cooking my ass off on this smoker. This will be my first side fire box horizontal smoker, and I've done a fair bit of research...you definitely convinced me that it's gonna be perfect. I'm making 80 to 100 pounds of pork shoulder, I hope I can get it done in two rounds. I cut my pork shoulders into thirds to get better bark and cut the time down to about 5-6 hours...I'm doing some scratch maple bourbon smoked pork baked beans, Hellman's mac salad with carrots, onion, celery, and radishes, course chopped coleslaw that I've been perfecting over the last few months...I'm completely addicted...and some burgers and Rochester NY pop open Zweigles hot dogs that are an upstate NY tradition, and the best hotdogs on the planet...check out their website, they ship anywhere in the world. I am also hopefully doing some corn in the cob that will come from the farmer down the road that knocks it out of the park...this guy is incredible at growing vegetables and runs a little produce stand on the side of the road. The venue has a 4 foot charcoal grill for the burgers n doggies. I'm gonna do all the smoking the day before at home and basically reheat it on the smoker on location. We are gonna chop it and make some insane chopped pork sammiches with the coleslaw on gorgeous buttery brioche buns from a local bakery. Your porch makes me jealous by the way 👍 what a nice setup you have crafted for yourself!!! Have a good one dude, happy smoking to ya!!

Great review Joe, I've always like the reverse flow concept, a more distributed heat. That main chamber might just be to thin metal to support it, then add some heat to it, then bam, it sags.. A couple angle iron supports coming up from the legs, might be a mod fix idea.

Sorry to hear about your troubles with Amazon. I bought the Brinkman version of this smoker from Home Depot and it's just about the identical unit for a lot less money. The Brinkman didn't have a reverse-flow option (although the stack screws on so could be modified easy enough) and the firebox vent is crappy (but it works) compared to the Longhorn. Other than that, identical in every way that I can tell. Like all cheap smokers though, it will need a few mods to make it the best it can be. :)

Eventhough it has the firebox lean it performs really nice. I think it's overpriced and should be a couple hundred cheaper. My replacement came in today and will try to get it together this weekend. I'll get a full review and hopefully a build video with a cheap firefox mod fix. At the end of the day I really like it. I forgot all about the Brinkman's.. I'm sure it's nice too.. Thx

I had a char-griller model 8955 a while ago. It had a bracket on the bottom of the side fire box and he legs that supported the weight of the fire box to prevent the sagging. I got rid of that smoker a few years ago. I plan on getting this one, the Oklahoma Joe Longhorn. I've see this problem in several reviews. Check out the Char-Griller set up, it might be a good fix. I'll definitely be checking into it when I get mine.

did you ever get the problem with the firebox hanging too low. if you had to fix it what did you do. i have one myself. the only way i can see would be either to make a support from the bottom of the firebox angled down to the lower shelf frame bolted at each end. if its strong enough to support it. they did put 2 horizontal metal angles across the inside wall and the inside of the firebox wall. not sure if there is a way to run 2 vertical angle strips to stiffen up the wall more. anyway i will watch out for your reply. u have some cool videos. nice job.

I’ve noticed on a lot of the Oklahoma Joe’s the fire box is sagging. Even the one that Lowe’s has on display. I welded my OKJ so my firebox is straight. I leave the vent door open on my firebox to get good airflow to the splits and control the heat with the stack. You should use just splits in it as it’s a stick burner cause you already have a WSM if you want to use charcoal and add a piece of wood to it, no need to waste the money on a heavy charcoal smoker. Anyone can get clean smoke when your using charcoal as the heat source and just adding a piece of wood to it.
@BBQJOE
@BBQJOE 5 жыл бұрын
I understand your point but I'm still playing around with it.. I've used just splits with great results and most definitely had my door open too. I switched to charcoal basket so I can show the pros & cons between both. I'll get a video out on just splits soon. It'll all make sence in the end and you'll see my angle on all this. Thx for watching..

I'm in the process of getting my non-reverse Highlander put together, and the droopy firebox is because that end of the cook chamber is bellied. I'm welding mine together top to bottom, so I only loosely assembled it, and without tightening the bolts, there's a 3/8" gap on the sides where the firebox mates with the cook chamber. It's a manufacturing issue. They got the metal too hot when they were welding it, and at that thickness it expands and warps, but then it's welded in place and can't really shrink back like it wants to. There are tricks to fix it, but probably not something you'd want to do in this application.

My Highland also has a saggy firebox. I’d say it’s just a combination of weight and heat overtime. If I did it over again I’d add a couple of metal spacers/blocks between each leg and the fire box to give it some added support. The sagging has had no noticeable effect of the cooking performance of the smoker...so I’ll just live with it until I can afford a Yoder😂

Is that Kingsford? I'm trying to figure out why you're using charcoal briquets. You should be only burning wood in that box.
@BBQJOE
@BBQJOE 4 жыл бұрын
Yes it's charcoal for the break in and the best way to I found to keep steady temps of 250F or 275F for 4.5 hrs. straight is to use both charcoaland wood to start. After that time is up, I used full splits. It works great as a just a stick burner if you use small splits and want to keep adding wood to maintain. At the end of the day it's only a $600 smoker made of thin metal compared to $2000-$3500 smokers that made of thick metals. Hopefully I answered your question and thanks for watching.

I know people that use them without the seals and very happy with them. Paint will blister on any firebox unless its insulated or made out of thick steel. It's well worth $650 shipped to your door. Now if you have the money to buy a $1800-$2500 offset then you shouldn't have to seal it plus it'll be way more efficient. Either way both will produce nice bbq. Thanks for watching..

So I got my new longhorn reverse flow out side being seasoned right now. I installed gaskets, high quality silicone, lava lock clamps, and grommet. I currently have the baffles in along with the grates and I have a new maverick xr 40 thermometer keeping temp. My question, is it normal for the smoker to not go above 300 degrees very easily? I assume since I have the baffles in and it's such a much bigger cooking chamber than what I had before I would require more fuel, but I have the basket may e 3/4 full and I think the highest temp I've seen is in the 280s. I'm not complaining, I just hope my new thermometer isn't off. I would also assume if I wanted to really turn the heat up to cook a nice steak hot and fast, I could remove the baffles and switch the smoke stack to the other end, perhaps then it would get hotter 🤔 if that's what I was going for. Any input is appreciated and thanks!
@BBQJOE
@BBQJOE 3 жыл бұрын
First test your xr 40 probes in boiling water to make sure they are accurate.. Water boils at 212F.. Are you using just charcoal or wood or mixed in the basket..? Are all of your vent's wide open..? Did you stoke the fire..? Or check if the ashes under the basket was restricting the airflow.. I don't recommend the main chamber temps over 400F.. This is a smoker and not a grill.. You'll burn the paint right off the firebox with extreme heat.. It's an amazing smoker for the price and you should watch my Oklahoma Joe's video playlist on some of the cooks I've done.. Hope this info helps.. Thanks for watching..

@@BBQJOE its not something I'm going for, I'm just trying to get to know my smoker. If I really want to cook a steak how I like it (medium rare with a nice sear) , I'll cook it in the firebox itself. The vents were all open I was using a mix of wood and lump charcoal. I'm actually excited that it doesn't overheat so easily. I'm used to having the OK JOE combo grill and the the placement of the firebox and how small that cook chamber was, made it finicky and able to get VERY HOT 🔥. With this big of a chamber and the firebox installed lower, the baffles to spread the heat out more evenly seems to be a HUGE difference and I love it. I'm just not used to having that much actual fire in the box and such a nice low heat. I'll test my thermometer today, I know better, like I said, I was just wondering if it takes some serious fire to get the heat high, which would be great because in the combo grill, a small fire can put you past 300 no problem and it took a lot more attention. Thanks!

As far as taste, how does the WSM compare to an offset cooker?
@BBQJOE
@BBQJOE 3 жыл бұрын
Imo nothing is better than clean burning wood from an offset. Don't get me wrong the WSM will produce great bbq and I love using mine for family and friends. If I had to choose it would be a good quality offset or reverse flow..

I average 5 hrs. on a full basket using Weber briquettes and 2-3 splits of wood. I have done a 8 hr. smoke and added 4-5 splits to finish that cook off. I'm very impressed with it for a $600 smoker.

I'm very impressed so far with this smoker. It works best with one large split in the basket filled with charcoals. Hope you get a good stone soon. I'm really liking this XR50 but don't understand why it won't save my settings on that one probe. No matter what I do it defaults to 32 degrees..

@@BBQJOE The thing I found is if you attempt to adjust your high reading from a previous cook to a lower number lower than what the low alarm reading is currently on, the high adjuster will stop on that current and previous low readimg number and will not go past it to go any lower until you adjust the low reading to read lower than what you are trying to move the high reading to. Also same thing going up for the high settimg.The high low numbers can not be set independently if that number goes past the other number. Not like the smoke will. You just have to know this. Your issue seems a little different. Try resettimg to default settings and start over.

@@ASTRONOCPRODUCTIONS I promise you'll enjoy it.. The only mods that held up for me was the gasket around the main chamber and between the firebox and main chamber. I need to get a updated video out on this. If you take 1 or 2 splits on the bottom of the charcoal basket and the rest filled with unlit coals then full lit chimney over the top, you'll get an easy 4 to 4.5 hrs burn with ease.. Temps around 250F-275F.. My stack is always wide open and the firebox door around half open. Don't forget to take 2 or 3 of the included charcoal grates and rotate them in the firebox to get better airflow.

Yes this was returned and they sent me out another new one.. All the mods help with temp control to improve fuel efficiency.. The inside is raw metal so you want to season it to prevent rust.. Seasoning is a must on most offset smokers.. This is a very low end cheap smoker and the mods just helps improve the quality. I have about 30 cooks on this Oklahoma Joe and absolutely love it..! @@BBQJOE Can't wait to see what you have in store! One more dumb question for you. I haven't received my smoker yet, and have been anxious to know if the sort of minion method you use to light and run it still produces the same "depth of flavor," that folks like "Mad Scientist BBQ," claim you can only get by using an offset with an all wood fire. How does the flavor and smokiness with your method compare to pure stick burning in a large pit? Since this burns charcoal and wood, should I have stuck with the WSM?

@@BBQJOE This is true; even my weber kettle produces good barbeque. But I'm wondering if the use of charcoal compromises that authentic wood flavor.
