Joe's BBQ House "SPG" and "Hot Rub" recipe..
These recipes make about 2 lbs. and fits perfect in a 33oz shaker
Put all ingredients in a bowl.. All measured in cups.
Ingredients for the SPG:
1 1/4 Kosher Salt
2 Coarse Ground Black Pepper
1 1/4 Granulated Garlic
Ingredients for the Hot Rub:
1 Ground Cayenne Red Pepper
1/2 Paprika
1/2 Granulated Garlic
1/2 Coarse Black Ground Pepper
1/2 Turbinado Sugar (raw sugar)
1/2 Kosher Salt
1/4 Chili Powder
1/4 Onion Powder)
Mix all ingredients into a bowl and add to shaker. A funnel works great for this.
If mixing directly into the container then you'll need to hold back on any 2 ingredients. Shake the container well and add the remaining ingredients and shake again.

Just finished building my Oklahoma Joe Smoker - only one H-bolt missing not bad - seasoning it now - I set mine up as an off-set smoker - I'm using one reverse plate near the firebox to see how well that does for heat control - and I have one crate in the main chamber to use as a water pan holder (great advice) - doing carry-out orders for this Sunday, Brisket, Ribs - I'll be sure to post build and cooking videos on my channel - Thanks for the build review - it came in handy!

I watched your other video and made the final decision to buy one of these 2 days ago. Today this video popped up, I guess the universe has spoken and I made the right choice. For the consumer, you did the best review I've seen on any smoker.

@@BBQJOE i haven’t got my Oklahoma Joe yet but soon as i move to Texas I will. I’m using a Masterbuilt propane fire 44 inch right now. It is a 2004 model with solid door i ordered a glass door model but it hasn’t come yet. By the time i get one ill have a few im sure. Its like fishing lures, cant have too many.

Your welcome.. I'm shocked on how well these okj cook. With 2 full splits and the rest of the basket filled with charcoal will run for 4.5 hrs.

@@BBQJOE Appreciate that. I have been waffling a bit between the Longhorn and the Highlander reverse flow. I can handle the price difference so that's no big deal. I was wondering how much more the fuel bill will be on the Longhorn to maintain the same temps. Any insights? I haven't priced the cost of a 1/2 cord of wood to be delivered yet. Thanks!

This is the 4th time I’ve watched it. I will order the larger one with the Stars on it and the stainless shelves and the lockdowns and extra temp gauge. Then it’s retirement city and cooks. By San Antonio so I’ll bass fish and smoke meat till this old vet croaks.

Thanks for the review - Great tips and info! - Really like the tip source for the insulative strip, was looking at the Highland smoker but you may have changed my mind and now looking closely at the Longhorn. My local Lowes says "Not Available" at least online anyway. Search is on! Thanks for posting!

You convinced me to buy this smoker... my hesitance was because of comments regarding the difficulties putting this together as well as the seasoning -but you dispelled those concerns PLUS hints on how to improve the Oklahoma Joe. Guarantee I will be mimicking your video step by step- who needs instructions when I got your video

The install goes by smooth with 2 people even easier if you had 3.. I know I have over 50 cooks on this smoker since this video and I'm having no issues with it.. I absolutely love it.. Thanks for watching..

Very nice video. I just bought one of these. Really looking forward to putting it together. I bought a char-griller double-play, but like the larger cooking area, reverse smoker technology, coal box, better handles of the Oklahoma Joe’s. I like your recommendations (e.g. gasket, gauges, scraper, kettle grill for ash pan and the jack stand). I also appreciate you going through the season part as well. bice job all around

@@BBQJOE I just put mine together this evening, thanks to you it went very smooth. However I did do one step differently. I attached the top half of the firebox to the smoker box; mainly because I was working alone and it was much lighter to do it that way, then once attached, I attached the bottom half of the firebox. But all your suggestions were great and worked really well. Tomorrow, I get to season it. I do notice that after adding the gaskets, the doors don’t close all the way. I did order some clamps to help that situation (2 per door). Looking forward to going out to the pit! Take care all!

That's awesome and a great way to do it yourself. I have the clamps but never installed them.. It stopped leaking after a few long smokes.

Hey joe nice video. I have the Oklahoma joes highland smoker and between the fire box and the pit I installed a extra piece of metal. I drilled holes where the bolt holes where the same. And I had no problems with it angling down like your other one.

@@Disastrousmedia Now that I have several cooks on it. The gasket around the firebox lid burnt out. I do highly recommend installing the gasket between where the 2 firebox pieces go together, between firebox and main chamber and of coarse the main chamber lid. Hope this helps..

I have grilled out of the fire box but I'm not a fan of it.. It would be ok for a family of 2 people.. It has the option to grill out of the main chamber too but I personally don't like that feature.. You'll have to remove the lower reverse sear plates to grill in it..

@@BBQJOE I'm retiring my Char-Griller Super Pro and picking this up, I would asume apart from level adjustable fire grates there wouldnt be a lot of difference. Just give me a reason to pick up a Weber kettle along with it... not heartbroken over that at all though.

I would highly recommend getting a Weber kettle along with this OKJ Longhorn.. especially if going to be grilling a lot. I promise you won't regret it.

@@BBQJOE do you regret buying it? Is it not a great smoker? Do you feel it’s too thin or a profile for steel? Is money spend better with the pitts and spitts and Yoder and that obvious or is it similar and just higher cost. Thanks.

I don't regret buying it at all. The metal is thin but you get what you pay for. If your budget will let you, most definitely get a Yoder. Those are high quality smokers.. And to answer your other question, yes you can grill in the main chamber but you have to remove the reverse flow plates and set the included coal grates in.. I don't recommend it as it's a hassle to convert over and over time the fire will destroy those cooking grates. I own a mobile smoker made of 1/4" and 1/2" steel. It's 20' long x 8.5' wide. Weighs in at 7500 lbs. She's a beast but only use it for catering. I use the okj for family and friends. Hope this helps.

You're welcome.. I'm really liking this model for a cheap offset. Some of the nicer units cost upwards to $2500-$4000. I would've bought one but I invested in a mobile cooker that I hope to have by this weekend. Thx for stopping by.

I'm torn between one of these or a 22" WSM which I saw in the background of the video. If you had to pick just one which would it be? I currently smoke on a 22" kettle with a slow n sear but am limited to how much I can cook.

That's a really hard question cause I love them both.. It's a backup incase my mobile smoker doesn't arrive for the big party. I'm estimating around 200 lbs. of meat.. I could do it with all my cookers but would be a lot easier the mobile smoker. Thx

Great tutorial video Joe. Now for the tough question. If you had your choice for only one cooker based on cost, quality, versatility and cook quality; would you go for the WSM 22.5 OR THE OKJ reverse?

That's really a tough choice.. Ok.. if they were both stock from the factory, I would choose the OKJ Longhorn Reverse Flow hands down.. But as of right now i would say my heavy modified WSM 22... Keep in mind I have close to $1300 invest in it from new... I've done 65 lbs. of meat at once, hung ribs and chicken, cold smoked tons of cheese and it can be broke down to use as a large travel grill. Now I have some future mods for the OKJ that I've never seen before and if it all works out as planned, I would go with the OKJ over the WSM.

Thanks for the detailed feedback. I really had expected the WSM to come put on top, given all the assecories available. did not realize you had $1300 invested in your WSM. Wow!! I do agree, it is nice to be able to break down the WSM for a travel! People are amazed by it and now that I can follow your path on hanging ribs for family events, it will be eazy-peazy..

Nice tutorial of the unboxing and burn in. I've seen pretty much all those fire boxes drooping on that brand. Have you figured out a way to adjust it yet? Cheers!

The only way I can think of is to shim the bottom of the main chamber and firebox with steel plate and use a thicker gasket to compensate. I'm fine with the way it is with the jack stand. Thx for watching..

Just got my Highland model home and it was warped out of the box, at the firebox hole. Thankfully they are sending me a new smoke chamber. 🤞

It burnt out within 6 months. I had lots of cooks on it though. I'm going to do a updated video on this.. The fb tape is still holding up between the firebox and cooking chamber..

Could you please share the link to the gasket? I’m buying one of these smokers in a month and I’m not completely sure that our local resellers will follow this guide to have the smoker assembled properly. Also , huge thanks for an awesome guide!

Congrats. Mine still works as the day I put it together.. It's an awesome smoker for the price. Just be sure to season it and pay attention to the temps. You'll see the that the grate temps will be the hottest towards the firebox.

Happy Memorial Day to you too. No I wouldn't recommend them on the rack do to the feet on the bottom. I just tried setting the big oven on and and it was boeing the grate. I'll play around with this more and see what I come up with. Thx

No I sure don't.. I used too and the sag came back. It doesn't effect the performance at all. I've gotten used to it and it doesn't bother me. Most people won't notice it either.

I have a Oklahoma joe if you season properly 1st time before you cook on it everything will seal just fine with any seal,and i had my firebox welded together before i mounted it on mine 1st time i used it .

Because it's thin metal and you will burn the fire box out within a couple of years. It's best to mix small chunks or splits with charcoal. More charcoal or lump them spit wood. Trust me

Hi. Great video, watched as I'm about to build an Oklahoma Joe's Highland and wanted to see not just the mods you did but how you did them. Great job! I have a question though... When sealing the firebox have you used silicone sealant and, if so, how does it compare to using the gasket? Could you use the gasket and maybe seal around that on the outside with the silicone for a double seal? Thanks!

I'm about to do another review on this okj.. I've never used silicone but the gaskets installed on the firebox burnt out where the 2 pieces comes together.. It's still holding up where the firebox meets the main chamber though.. It's still performing great with the gaskets that are burnt out and just need to close the intake a little more.. My buddy just bought a reverse flow Highlander and didn't seal it at all and it's working great for him. Hope this helps and thanks for watching..

For me personally the best barbecue is with charcoal as your fire starter, and good dry wood of your choice is your barbecue . Nothing better then real wood and good clean blue smoke .

Just a few words of advice here. This is not a true original American made oaklahoma Joe’s. This is built roughly to half of the metal and quality of the the original. This is a charbroil built by charbroil in some overseas country. Please do not take my word about it just research it yourself. I have a original that is much much more heavier built. Also take notice that the big brass oaklahoma brass symbol is missing from the lid that are riveted on the original. I learned of the change when I went to reorder a new cover for my original. After much searching and a call to the original company I was told by them that they had sold to charbroil. Also take notice to the very small spot welds every 10in apart. Our friends bought one after a grill we had done in 2015. And to say that they were disappointed is a understatement. This needs to be known in order to not deceive people. Do some research.

It's crazy to me that when you pay that much money for one of theirs that you have that many issues to be addressed? I'm not sure if you have seen Allen's smokers at country built smokers but for roughly the same price (maybe a little more) you could get heavier walled steel and better craftsmanship. Just my opinion though. Like the videos showing all of this though. Keep up the good work.

Can you put charcoal in the main smoke chamber and use it to grill steaks or burger like any normal charcoal grill?

Yes you can but before you start a fire you'll have to remove the basket cause it's to tall for the cooking grate. When I get home tonight I'll place the fire grate in the stock position and see if the if you can use the basket that way. Thanks for watching.

Yes you can.. It comes with extra fire grates for the main chamber. I use them along with the one that comes with the firebox to create a cross pattern to save on my amber. One of these days I'll demonstrate on how to use them if you like.

Getting ready to pull the trigger and purchase a Longhorn. I have a quick question for you. What size are the thermometer ports? I want to purchase new river country for it. Just want to make sure the size I want will fit. I bought one for my 22" WSM and had to drill out the hole.

I had them take it back cause the firebox was slanted downwards. But come to find out that's just how they're made. This pit was new to me and wood warped the crap out of the basket but after it cool it kinda reformed itself back into shape.. I have many videos out on this OKJ.. Hope you enjoy yours.. To be honest I went back and watched that clip and I don't remember why I muted that clip between the gauges.. It could've been one of my kids calling me the wife.. I really don't remember but I still use these gauges on all my pits and they do great. The Glow in dark feature doesn't last long though.. That's for watching and being observant..

Or you can run over to Lone Star Grillz and buy one you don't have to mess with. Just Uncrate and away you go. No assembly required. I will never regret spending 4 times, as much for 1000 times the quality and durability. I could have gone less expensive with the squarish models but the smallest round one was the one I went with.

I agree with ya 100%.. Not everyone can afford a high dollar offset. I bought it as a backup incase my mobile smoker wasn't going to be finished by next week. I figured while I have the OKJ I could help people protect there investment. My mobile smoker will cost 12x the amount of the Lone Star.. Its made of 1/4" and 1/2" steel. Thanks for watching.

@@BBQJOE The cool thing about LSG is that they offer financing right on their website. That was the other selling point along with a really nice upgrade selection. I hear what you are saying though. $600 vs $2300 is a huge jump. Thank you for making this awesome video and now I am jealous. Sounds like you are getting an awesome rig.

I didn't really know how to reply to these.......and now that you've shown your Custom Creation Beast of a Pit.......it only makes me wonder ever more...........WHY????? I just don't understand? Please explain! .......Is it the challenge of trying to tame this animal??? And for you to run it with charcoal briquettes and smoke wood.....I just don't get it? You already do that in your WSM Monster! I really wanted to see You burning only wood splits in it! It's all good brother.. The only reason I bought this OKJ is because I didn't think my mobile smoker would be finished in time for my sons graduation party. I bought it as a back up and kinda wanted a offset on my deck. Now I tried using just wood in the original okj that's being returned and it was destroying that firebox within the first few of cooks. Imo that firebox would only last a 6 months to a year with heavy use. I have several cooks on the replacement with no issues running charcoal/wood.. You have a very nice offset and I personally don't think you'll like the cheaper offsets at all. My new mobile smoker is the only thing I own that I will use wood in.. At the end of the day I needed a plan B for this party and that's the only reason I bought that okj.. I didn't read anything negative in your comment. Your good dude and I live watching your videos as well. Thx

Kinda hard to tell what kinda bug that was but you never know what learches in your cookers when left outside especially when food residue is on your grates.. If you're concerned about a bug on the outside of "Styrofoam" then you should throw all of your grills/smokers in the trash lol.. Thanks for watching..

These are low quality thin metal smokers but they work great once you get to know it.. I use it just about every other weekend when it's nice out and I have no complaints especially for the price. It doesn't make for a good stick burner at all unless you cut up the splits in fours so the wood will ignite easier and not smolder.. But, if you use the included charcoal basket and add 1 full split and the rest with unlit charcoal with 1 full chimney of lit coals on top, you'll get just about a 4.5-5hr burn.. It's pretty much set it and forget it as long as you have your vents dialed in which is easy to do.. Just remember that the thin metal firebox is attached to the main chamber so it will be hotter on that side. For only $600US I would recommend this smoker in everybodies backyard. Hope this helps and thanks for watching..

Lavalock is absolute trash. The gaskest burn up and peel off and even the sealant burned up and flaked off..... Of the far side of my chamber
