Okonomiyaki Recipe:
"Okonomiyaki Batter:
50g all-purpose flour
1 tablespoon (15g) dashi stock
1/2 teaspoon (2.5g) cooking sake or white wine
1/2 teaspoon (3g) soy sauce
1 whole egg
A pinch of salt
Ingredients for Okonomiyaki:
300g cabbage
2 whole eggs
80g pork belly (sliced and cut in half)
35g mochi or cheese
3 tablespoons (10g) tempura scraps (optional)
Instructions:
In a bowl, mix all-purpose flour, dashi stock, cooking sake or white wine, and soy sauce.
Add the whole egg and a pinch of salt, then mix all the ingredients together.
Finely chop the cabbage and add it to the batter.
Add mochi or cheese and tempura scraps to the batter.
Grill the slices of pork belly in a pan.
In another pan, heat a little oil and cook the okonomiyaki over low to medium heat.
Place the grilled pork slices on top of the okonomiyaki and pour the remaining batter over them. Cook for 5 minutes.
Flip the okonomiyaki, shape it into a round shape, and continue cooking for another 5 minutes.
The okonomiyaki is ready when the inside is well-cooked.
Remove from heat and pour okonomiyaki sauce over it. Add mayonnaise according to your taste.
Sprinkle bonito flakes and aonori for a more intense flavor.
For an even stronger flavor, lightly burn the sauce by heating it before adding.
