Required Ingredients:
750g of chicken (thigh meat)
= for the mixed liquids =
300g of water
30g of salt
30g of sugar
= for the seasoning =
3 tablespoons of cooking sake (45g)
3 tablespoons of soy sauce (54g)
1.5 teaspoons of sugar (6g)
1 whole egg
12g of ginger
2 cloves of garlic (12g)
1/2 teaspoon of salt (3g)
= for the batter =
150g of potato starch
2 tablespoons of rice flour (18g)
Preparation:
Prepare 750g of chicken thigh meat.
Cut the chicken thigh meat into pieces of about 40g, leaving the skin on.
In a mixing bowl, combine 300g of water, 30g of salt, and 30g of sugar.
Soak the chicken pieces in the salt and sugar solution and refrigerate for 30 minutes.
Pat dry the excess water with paper towels.
In a bowl, mix 3 tablespoons of cooking sake, 3 tablespoons of soy sauce, 1.5 teaspoons of sugar, 1 egg, 12g of minced ginger, 2 crushed garlic cloves, and 1/2 teaspoon of salt.
Coat the chicken pieces with the seasoning mixture and refrigerate for 20 minutes.
In another bowl, mix 150g of potato starch and 2 tablespoons of rice flour.
Dredge the chicken pieces in the starch and flour mixture, shaking off the excess powder and wrapping the pieces with the skin.
Heat the oil to 160°C and fry the chicken pieces until they are well-cooked and golden.
If the color is not yet dark enough, continue frying. Once the desired color is achieved, increase the oil temperature to 180°C.
Remove the fried chicken pieces and drain the excess oil on paper towels.
Your delicious crispy and juicy fried chicken is ready to be enjoyed.
Note: The frying time is approximate, it is best to rely on the color to determine the cooking level.
