It is the Corn season and for those of us from the southern part of Nigeria especially the IKA people, it calls for massive corn parties from compound to compound, street to street.
Corn pudding is seasonal so the season is enjoyed with making this pudding to use up the excess corn after boiling and roasting as much as they can eat,
Recipe is very easy and takes just a few key ingredients. Corn, salt, Onions, Pepper to taste, palm oil and seasoning. Blend everything together (preferably coarsely) then wrap batter in cooking leaves (you can garnish with choice protein, traditionally dried prawns or shrimps are used) then steam till done.
You can use ramekins or mugs to cook them if you have no leaves.
Corn pudding is a beautiful recipe and your whole family can enjoy it.

This awakened my childhood experience. I am not from agbor but I attended Marymount college.as a boarding student I spent my stipend buying corn pudding and akpu and egusi soup.wow wow wow. I am going to make mine.

Remind me of my service year in Agbor Delta State. Ika is a nice place and people. Would try to make it myself. Ukpor Oka is really a great meal.

We called this "asuru asu oka" growing up. I must have been about 5 years old the last time i had this, and yes, it is usually pounded in the mortar, hence the name, "asuru asu oka." Thank you for this video. Now I know where Ika land is. I was surprised that i could understand some elements of your language. ❤

Yes ooo am from Ika too and I seriously don’t joke with Ukpo but am missing it right now in Atlanta .. I tried making it two days ago but the sweetness of the corn here in U S is too much that I didn’t really enjoy it

Maybe if you add some cornflour, it will balance out the sweetness. Lots of you are complaining about that oyibo sweetcorn 😁

Wow seems u are my ika sister ❤️ nice meal, I love it. The only challenge is that the kind of corn 🌽 they sell at the stores here are too watery. When I tried cooking it it was sooo watery and we couldn’t eat it.

Find a recipe that adds dry corn flour or maize meal to it or leave the store bought corn to age a few days

Cool recipe. Looks delicious. Can you consider doing a video on wara? It's a snack made from soya beans, commonly eaten in Northern Nigeria. Ideal for those avoiding meat consumption and very delicious😋

My beautiful Agbor sister that looks so yummy and delicious, l wish you can ship some to me over here. It used to be one of my favorite food back then at home when l was growing up. Over here in California l still can’t find a strong enough fresh corn to make it. Is it possible to use the dry dry corn from Africa?

I am not sure very dry corn will give the same texture but probably when mixed with canned sweet corn, it may work. Maybe if you use the normal corn in its husk even if its soft then mix with cornflour, it will work. Ndow Nwene 😘

Ọka - igbo(Nigerian) for corn. Ukpọ is igbo for pudding. So, Ukpọ ọka is corn pudding.
