I love this woman she's so precious. If I may add I forgo adding flour to the raisins and soak them in hot coffee or hot water they are so much more plump and moist in a cake. Strain them squeeze the water out and they will be amazing! In the North we like a little bit more spice so I add a little bit of allspice and a little bit of nutmeg as well.

Wonder if you can soak them in hot vanilla water. Would intensify the flavor I think. How long do you let them soak?

I loved watching this! I'm fascinated by your mixer. I tend to make mine very plain with no nuts, pineapple, dates or raisins. When I add these ingredients, I lose people with each addition. My secret to a good carrot cake is a little hand-grated fresh nutmeg. P.S. Ina Garten says grate carrots by hand for a fluffier cake. Organic carrots tend to be more flavorful.

I’m thinking I probably never will despite seeing how easy you make it look, but then I remember I never thought I’d make homemade biscuits and after watching you make only a one cup of flour version, I now make them all the time. So, you never know!😜

You did an outstanding job with that cake. The way you applied the icing and the decorations was excellent. I can see you learned from a professional. It's a labor intensive cake with the grating of the carrots and coating the raisins with flour and the chopping of the nuts but if you have the time, I'm sure it makes a big difference in the way it all turns out. The video was very enjoyable to watch.

Oh my goodness!!! What a beautiful cake. Tammy, you sure got what it takes..... A trick I learned to keep fruit from sinking is to fold it into your batter. Don't let the mixer do it because it incorporates the flour in! The less folds it takes, the better. Hope this helps. ❤

Hello, I made your cake yesterday. I had to make a couple of substitutions. I didn't have cookling oil , so I used MTC oil. I didn't have any crushed pineapple, so I added some dries cranberry. It is very good. I think the MTC oil made it a little more dense, and the bottom and edges were a little crunchy. But everyone seemed to like the crunchy. I also added a little bit of Kitklands' orange liqueur in both the batter and frosting. Thanks.

When I was a kid.....way back in the 50's, my Mom would make me carrot cakes....my favorite cake! We always had a deal....she would make the cake, but I had to pull the carrots from the garden, peel and grate them. Sort of the same deal in the fall.....I'd pick and peel the apples and she would make the apple pies. I always considered those "deals" more than fair!
