"Ir was too much" refers to the nature of sardines as food. You always eat them with bread, or tomato, or a salad, some type of side dish, because it has a very strong taste.

Sardines is a palimpsest. Most of the poem and description of the painting refer to palimpsests. Current experience erases previous experience yet leaves a residue. Both the poem and painting could be called palimpsest or reside. Referring to them as "meta" is a stretch - it has more to do with experience or, as the professor points out, it's about the process. Looking at medieval manuscript art, there are palimpsests and marginalia that area as meta-meta as a poem.
