YES SALT! I forgot to mention but goes in all my brines. Do yourself a favor and and make a simple standard brine to can up all your goodies. This brine is on the sweet side, so you can definitely cut that way back if you want a more traditional pickle brine.
Recipe for my go to sweet brine:
2 Cups Water
2 Cups Vinegar
2 Cups Sugar
3 Tablespoons pickling salt or kosher salt.
Combine well on stove top and heat over high heat until well incorporated and sugar and salts have fully dissolved. Use on your canned goods as directed and following canning directions for timing based on your produce, size of jar and elevation.

How much sugar for something like a dill ? Do you still add this sweet brine to something like that?

What kind of inegar do you use in this receipe? 5%, 7% or 35%? Or? There are different kinds, and with dilluting with water I want to make sure I'm not using to "weak" a vinegar. Thank you, I love the idea of one brine for all (and the hommage to Tolkien)

I have a diabetic child. Can I omit the sugar? Any suggestions? I'm not sure what purpose the sugar serves.

I used to use a ladle to pour my brine into jars but have switched to putting my brine in a pitcher (well it's my blender w/ a spout). I can pour quickly without a funnel. Your videos are so amazing!

I used your simple brine to can red cabbage and it won a thumbs up from my picky hubby. After a tiny sample taste he took ownership of the entire pint eating it all with his grilled cheeseburgers dinner. Thank you, I love a good recipe that I can easily remember.

I write on the lids with a crayon when they come out of the canner. The crayon melts from the heat and it works great.

My mom gets some "natural" ( less toxic ?) Alum from the health food store, to use for the crisp-preserving for pickles, works ok maybe, I basically never eat anyone else's pickles ( don't get out much, plus avoid eating store bought ones) so I don't really know what other's are like. Just sharing in case anyone wants to check that out, as a potentially healthier alternative.... . For dill pickles, ever since having some from a neighbor who did this, we add a bit of hot pepper to each jar, can't go back to regular ! Just Dill, garlic clove or 2 & that. I prefer a half of a Thai hot pepper, but any kind will do. Also, speaking of healthier options, I have used ( unrefined) coconut sugar just fine. Also, watch out on Vinegar, some folks don't read labels & don't even know that some "apple cider vinegars" are just flavored & colored white vin., and if they don't specify "from grain" on the label ( of any not from apples/fruit) it can be a petroleum by-product, I'm told. To me, these things matter, besides what we support & the little that gets absorbed into the pickles, cuz I like to drink the pickle juice some, or at least have the option, for an electrolyte need. BTW- sugar from sugar beets may be GMO ( I use Coconut sugar cus it works best for my hypoglycemia ). Thanks for the vlog !

Put your pot of brine (or whatever you are dipping ) on the right side of your jars, then you arent trying to shuffle hot jars, just move your funnel from jar to jar. Also write the date in the lid so you know when it was canned. One more tip, dunno if you do it or not, a splash of vinegar in your canner water will keep your jars clean and not allow sediments to stick to them during canning.

I have made pickles till I don't want or need any more pickles or relish. Have eaten cucumbers every way I can think of. And they are just keeping on making like crazy. I give them away, and still have way too many. First time to grow them in a raised bed on a cattle panel trellis. Never have I ever had cucumbers make through a Texas summer.

I already do that it is great way doing it. I do some of my cabbage as dill pickles and it makes the best tastin saurkraut that way.

I do this also. And it can also be done by just eliminating the sugar. I'm cajun & we tend to eat hot spicy things, so I do pickled hot peppers...a mixture & will add onions, mirlitons (chayote squash), cucumbers, zucchini, etc. Can't eat gumbo with these. 😁

I have trouble getting pickle spice here in RSA so I buy Brijani spice and do exactly what you do. Fish out the "sweet stuff" and use them in my jams and the rest in my pickle and relish... My daughter now even knows what to do when mommy says please "sort" this packet of spice...

This is my favorite brine for beets. Cook the beets with skins, tops and roots. Let them cool and put in jars = cut them the size you want or use the smaller ones. Pour the brine and process as you would other pickles. Love this!

Love your channel. I use a bamboo knitting needle as my debubbler and to dig stuff out of the hot water pot. I found new in the package some very large ones at the second hand store. For 50 cents a pair. They are amazing

I don’t know how it works yet but I used this little tip two days ago.... if you put a grape leaf or a blackberry leaf in the bottom of each jar of your pickles, the tannins in the leaves will keep the pickles crisp...? We shall see!

​@@theresaglass1831I know this is an old comment but my grandma taught me to only waterbath my pickles for 7 minutes. I do 8-10 personally. But the consistency is good and it works, they keep perfectly.

What a great idea, sometimes I only have a few cucumbers , peppers, etc., not enough for a full load of each and in Georgia canning in the summer is brutal for just a couple of jars, never thought of canning a jar of this and a jar of that together. Thank you so much 😊 you just made my day!!!!!

Thank you for this, I just need this for the brine aka pickle juice. I have bad cramps at night when I try to sleep and the juice really helps. Your recipe is a little different than others I've seen, they don't include sugar. I'm gonna give it a try!

Mustard seed - soooo easy to grow! I haven't tried celery seed yet. Zucchini preserving is something I need to learn now. There's Zucchini ready and I only know about relish and zucchini bread. (never made either)

Question please; I am getting confused on the correct amount of salt/sugar/vinegar to use. everyone does it different. If you could please. If I was pickling beets/greens-beans or onions in a 32oz Mason jar, what is the best mixture please. trying really hard to eat better and healthier.

It's a delicious relish to be used any time you would typically use relish - burgers, sausage, sandwiches, meats etc.

Rachel, I wonder instead of using magic marker before boiling, maybe buy that garden permanent marker that can take rain. doesnt fade. I buy them on amazon.

I need help, does anyone know is it unsafe when your pickled mixed vegetables sealed after the water bath, but the brine level fell below the top vegetables, they’re not covered by the brine anymore? if anyone can help me I really appreciate it because this is my very first try at Canning. Hi, let me start by saying that I Love Love Love your channel! I have learned so much by watching your gardening and canning videos. For your simple brine, if I’m doing dill pickles, do I add the sugar if I don’t want them to be sweet? Thanks again, I have two raised garden beds and a container garden and I have vegetables coming out faster than I can handle lol! So I’m trying my hand at canning.

I've always wanted to learn to do canning. Do you have to grow your veggies yourself? Then make brines. You have to sterilize jars and lids right. Do they have a book on how to do this?

Yes The Ball Complete Book to Canning and Preserving is a great resource. You can preserve produce and meats from the grocery, farmers markets or your own garden.

Here's a shout out from southgate mi. I am not too far from u. I can pickles and peppers from my garden. Right now I have a big restaurant pot from Sam's club to do my water bath canning. I bought a pressure canner which I am waiting to be shipped. I plan on canning green beans from my garden. I am just getting into canning. I like it a lot. Except it makes the kitchen hot. For pickles I been using mrs wages dill pickle mix for my brine. U can pick that up at meijer. That's what I been using. Hope everything good down there. Take care

Good idea on a base brine but I could never eat anything with so much sugar and vinegar. I do mine one cup vinegar to 4/ parts Walter. Sugar and salt to taste.

When I write on lids with sharpie before pressure canning it often smears or some off. So I only do it when I’m canning mixed batches, especially meats.

I stumbled upon your channel last week and am loving your videos! Thank you for all you share. I’m curious if you have a canning book you recommend? My husband and I just moved our family to the country and are working on getting more self reliant and starting our garden, and along with that wanting to get into canning and preserving. How long after you pressure cook your pickles can you eat them?

You are water bath canning the cucumbers? Just checking wanting to try these I made pickles before mine was soggy but I didn't use the pickle crisp. So want to see .

I've got a question, maybe I didn't hear. Are you pressuring canning or water bath canning? My grandmother "pickled' just about everything, some meat. I can't lift a pressure canner.
