Today I made an orange cake that fills your mouth with fresh, juicy flavor.
I added orange zest to the cookie dough, boiled the oranges myself, and put them into the orange jelly.
I made orange mousse with orange juice and layered orange jelly alternately, and it turned out to be a really delicious cake.
The sides of the cake were layered with jelly and mousse, making it simple yet beautiful.
The transparency of the jelly was really pretty.
It's a shame that I couldn't capture it well on video.

70g graham cookies (22 small cookies)
10 g sugar (2 tsp +1/2 tsp)
35 g unsalted butter (2 Tbsp+1 tsp)
1/2 orange zest
● Orange Cheese Mousse Cream
120g cream cheese (1/2 cup +1Tbsp)
30g unsweetened yogurt (2 Tbsp)
32 g sugar (2 Tbsp +1 tsp)
30g warm orange juice (2 Tbsp)
5g lemon juice (1tsp)
4 g powdered gelatin (1/2 Tbsp)
20g water (1 Tbsp + 1 tsp)
100g heavy cream (50% whipped) (1/3 cup+1Tbsp+1tsp - before whipping)
● Orange jelly
225 g orange juice (warm) (1 cup)
30g sugar (2Tbsp+1tsp)
6g powdered gelatin (1tsp+1/2tsp)
30 g (2 Tbsp) water
● Orange confit (3mm thick)
1/2 orange
160g water (1/2 cup + 2Tbsp + 2tsp)
110g sugar (1/2 cup + 1 Tbsp)
15 g orange liqueur (Rigoll Orange) - (optional) (1 Tbsp)
