ORIGINAL RECIPE FOR COTO MAKASSAR, SOUTH SULAWESI
Coto Makassar is a dish native to South Sulawesi which is made from beef and beef innards drizzled with coto sauce which is very tasty and fragrant. Coto is usually used as breakfast by Bugis tribe people, and can also be used as a holiday and Eid menu.
ingredients :
- 1 kg of beef and offal
- 250 grams of peanuts
- 20 red onions
- 15 cloves of garlic
- 3 large segments of galangal
- 4 lemongrass stalks
- 2 small pieces of ginger
- 8 candlenuts
- 1 orange
- leek
- celery
- fried onions
- 1 pack of ground pepper.
- 1 pack coriander powder
- 1 tsp cumin
- 1 tsp nutmeg
- 2 tablespoons chicken stock
- 2 tbsp salt
- 2.5 liters of water (2 liters of clean water + 1/2 liter of rice washing water)
