Okonomiyaki is considered the soul food of both Osaka and Hiroshima, and both styles are must-try dishes in Japan ー but how are they different?
Let’s go to Hiroshima and Osaka to learn from local chefs and see what’s inside those savory pancakes. What exactly are the ingredients? Which okonomiyaki do we recommend?
Nicknamed “Japanese Pizza” or “Japanese Savory Pancake” Okonomiyaki is a fun dish served all over the country on teppanyaki tables but no where is there a passion for it than in Hiroshima and Osaka.

"Hiroshima or Osaka Okonomiyaki" is one of the never ending argument in Japan, like "coke or Pepsi." As a Japanese, I recommend, no matter which one you like, you should not tell Osaka locals that you prefer Hiroshima style better, and don't tell people from Hiroshima prefecture that you love Osaka style better. It can hurt their feelings very badly. lol Thanks for interesting video!

I just got back from a month in Japan, and on my last day my host mother taught me how to make Hiroshima Okonomiayi, what came to be my favorite food. She cooked the first one to show me how to make it, then I made the next 2 or 3 and fed the whole family. My host parents were impressed that I knew to eat it with a spatula, and they even gave me the spatula, which has the Hiroshima Carp mascot on it, as a gift to take back to the US. After dinner, the whole family walked me to the train station, and from afar watched me board the train. I had to hold back tears for the entire train ride until I got to the business hotel where I was staying for the night until my flight in the morning, where I could finally let it all out. Thank you, John, for introducing me to Okonomiayi in your videos, and inspiring me to go to Japan and have the greatest time of my life becoming a member of a Japanese family.

Yeah that is a huge advantage. Hiroshimayaki is generally a "restaurant food" since it needs skill to make one, and teppan is a must. Whereas Osaka okonomiyaki is a household soul food that anyone can make at home in a frying pan.

This is the case for me as well. Although I've made so many Osaka Okonomiyakis at home that when I'm out at a restaurant, I prefer to get Hiroshima Okonomiyaki because it's more different than what I usually eat.

I have seen this dish made in several different ways. My favorite was a little hole in the wall place and they make it in front of you, has eggs, octopus, pork, batter, sauce, mayo, veggies and noodle. This is my favorite variant of it and excited to try it in Feb. next year when I visit.

Japanese mayo uses rice vinegar and only the yolks of eggs. They are creamier and has a stronger tangy sourness to it.

Neil P in my opinion, it tastes a little sweeter and has a different tangyness than for example the heinz real mayo. I have tried making okonomiyaki with just regular mayo but the japanese one (kewpie) just hits the spot. Also its better to mimic that egg sandwich from the convenience store, but not really my choice when it comes to spreading it for my ham n cheese sandwiches. It is worth going out of the way to get it specially if you are making takoyaki or okonomiyaki. Hope it helps! 😉

Which one do you prefer? Let me know below? Notes: (1) Okonomiyaki is not vegan friendly but it may be vegetarian friendly. Osaka version does contain Dashi (fish soup stock) but Hiroshima’s version seems okay. Please ask each shop as they use different ingredients (2) Should it be considered a Japanese pancake or a Japanese pizza? - or neither? What’s your take? Thanks you for the feedback!

The batter itself contains both eggs AND dashi... and dashi nearly always contains broth made from katsuobushi (dried tuna.) So unless you are an ovo lacto vegetarian and or Pescatarian chances are either version of Okonomiyaki may not fit into the dietary restrictions of some vegetarians. Dashi is nearly synonymous with Japanese cooking and in the majority of recipes are made from katsuobushi. There are some exceptions where dashi may be made without it, but that is rarely the case. I think there is often some confusion by the Japanese, where the lack of a meat presence makes food "vegetarian" and they don't consider the dashi to be a source of meat. So a vegetarian may unknowingly consume food that was prepared with meat unless you ask specific questions. Even a bowl of boiled vegetables may look innocent enough but was often prepared with dashi made from tuna. (reposting this seeing as someone flagged my comment as inappropriate in retaliation of vegetarian discussion?)

Nosh Abroad not all batter contains it despite what you read on the internet. I don’t believe there is dashi in the Hiroshima Okonomiyaki (it’s just flour) and I make a point to mention that each shop makes their own batter in their own way with secret ingredients. (You can ask NOT to have the layer of pancake with Hiroshima Okonomiyaki if you choose.) It’s a highly regional and “as you like” dish. There is halal Okonomiyaki, vegan Okonomiyaki, desert Okonomiyaki - but all vegans should ask when in Japan. Note: there’s halal ramen, vegan ramen etc too :)

@ONLY in JAPAN I was taught by my friend Azumi from Hiroshima.. so it probably just comes down to the individual shop, family recipe. I am no expert at Halal traditions but my understanding is skipjack (used to make katsuobushi) and eggs are Halal friendly.

I prefer Hiroshima style. Have you ever been to Tonchinkan in Kyoto? In my opinion, the best place for Hiroshima-style outside of its namesake city.

I live in Hiroshima and everytime I eat authentic okonomiyaki I can never finish the whole thing. It’s so good but very huge! 😂 I’ve never tried the Osaka version but I’m sure it will never beat the Hiroshima one. Layers over pancake any day! 😁

I loved to eat the authentic Okonomiyaki, when I was in Japan. I had tried both Osaka style and Hiroshima style. I liked the Hiroshima style better than Osaka style that Hiroshima style as like a pile of pancake with layers of different food! The Osaka style is less likely to my personal taste!

Hey guys ! Okonomiyaki is always super good, especially when its home made, every family add their personnal ingredient :) I will say Osaka's one is better, because it was the first one for me, and it was the first meal that i had with a girl... and she became my wife :)

I tried an AMAZING okonomiyaki in Osaka, before I even really knew what okonomiyaki was. When I got home I tried to research which one it actually is and I think it was a mix of both. The guy mixed noodles, cabbage and batter altogether, fried it with the pork on top and then topped it with the mayo and sauce. It was heavenly, I just can't recreate it.

Hiroshima style! I went to Shin Chan as well, and tried a really good variant: instead of soba, go with udon, oysters, and cheese. Gives it both crispy and chewy layers 🤤

Firstly I can't thank you enoguh for this channel. My dream is to visit Japan and it's culture as a whole, seeing all the different aspects and regions. From watching, I think the Osaka would be my flavor of choice because most of what I have seen as far as videos of Okonomiyaki have been in that mixed style. But I want to try both, experience it all, and just immerse myself in the culture of Japan. Your channel does a lot for fueling that fire.

I have to agree with you John. The Hiroshima one seems more appetizing especially with the noodles and other layers. That part puts it over the top as the winner! Hopefully I will be able to try it one day :) Hope you have a great time on your honeymoon!

Had my first okonomiyaki in Hiroshima and it was just amazing. Tried two more a few days later of my trip in Osaka and gotta say Hiroshima is the winner for me. As its said in the video I feel like you can taste the ingredients more. You can taste the cabage, the noodles the sauce. Goes well together. Whereas in the Osaka one I couldnt really taste the cabbage in my opinion. The best way to enjoy it however no matter whether Osaka or Hiroshima is with the Mayo. That just brings it to another level!

I went to Japan in 15 and enjoyed Okonomiyaki so much I learned how to make it. I encountered it in Kyoto which was more of a Osaka style, so that is what I tend to make. I canoe a lot and it has become a staple camp food using the fish we catch as the meat in it. Often for breakfast - bacon and left over fish (if there is any) are used. Great food, filling and so easy to make.

Hiroshima style! I tried that one first. I completely agree with you on the noodles! They're the best! When I make okonomiyaki, I make it with kimchi and add some chunks of cream cheese. My mom likes it with avocado. The latter two may be unconventional, but they add a creaminess that we like.

They opened a Hiroshima Okonomiyaki here in los angeles (Chinchikurin) and it's one of my favorite places. Noodles is definitely the thing that makes me prefer Hiroshima style.

When I was in Japan I tried okonomiyaki in every single place we visited. I got so addicted. I had it as a street food and in restaurants. I was never disappointed. When I came back home I started making it and I seem to do it differently every time...depending on what I have on hand. There are so many videos on how to make okonomiyaki I encourage you to try. It’s so easy. It’s also a quick meal on those nights when you are rushed. I also sometimes eat it cold for lunch. :)

I LOVE both, but find myself craving Hiroshima style more often. Though that's because it's easier to replicate the Osaka style at home. Your previous video has encouraged me to try making Hiroshima style okonomiyaki! I just need to find a day when I'm willing to do all the prep work.

Well, making the Osaka style is easier to make at home because the ingredients are all mixed. Hiroshima style is a bit more difficult to make it at home because you need to flip it constantly to add the layers.

Hiroshima style for me. Okonomi-mura is heaven! BTW. there are other styles: Tokyo-style is actually called "monja-yaki". There's a Hamamatsu style with takuwan in it.

Couldn't choose, both look amazing. Hiroshima style looks more filling while Osaka style looks very classic and I'm sure both are exceptionally savory. Nice vid.

I just found this video because I've been looking for the way the only authentic Japanese restaurant we had here made their okonomiyaki (they sadly closed down after the 10 years) and I remembered all their ingredients but never knew how to make it 😭 bless you.

Had okonomiyaki at Sakuratei in Shibuya for the first time last March. We were so jetlagged and tired, had no idea we had to make it ourselves and it was kind of intimidating! It was so good we went back the next day and taught another foreign couple the ways of the grill lol. Absolutely cannot wait to go back and do it all over again.

Just made my first osaka style okonomiyaki. Absolutely delicious! At first, I wasn't onboard with the bonito flakes and mayo but it all works!

I prefer Osaka because it’s not too dense from the noodles, and I enjoy that the ingredients are mixed together so you can always taste everything. Also, Japanese mayonnaise and bonito are a combination I can never get enough of.

It's settled, we need to travel to Japan in the name of science to decide which one is better! As an initial step, I highly recommend trying Kevin's recipe to make our own Okonomiyaki... Check it out at Kuma's kitchen channel! Great episode John :-)

Went a few years ago for 16 days, and had the dish in both Osaka and Hiroshima. I love the Hiroshima style, though I had fish flakes and mayonnaise on my okonomiyaki in Hiroshima, so it was like the best of both worlds. The cabbage was in the batter like Osaka, but it stlll had all the layers. It was like the two styles were combined. Hiroshima is an amazing city, and should be on your "must see" list. One of my favorite places, along with Kyoto, Shibuya, and Kamakura.

Thanks for your great videos, John! When I was in Osaka 2 months ago, I stayed across Potpokoutei(?), a resto that serves different versions of Okonomiyaki in Motomachi 3. I tried Modanyaki which has beef(can be customized to chicken and seafood too) and noodles inside it. Tasted awesome and I managed to finish the big portion by myself. Frankly speaking, the normal okonomiyaki can be tiring to the taste for me halfway thru eating with all that batter and cabbage. So the extra texture and taste that the beef and noodles bring blends well with the Okonomiyaki sauce and Japanese Mayo.

Osaka for me, but that's because the styles I've had at places on the West Coast all seem to be more inline with that style and I've never had the noodle heavy Hiroshima style. SOMEDAY!

Osaka style okonomiyaki is the best, but they make it in Kyoto too. I make it at home sometimes when I can find all the ingredients.

I haven't had the Osaka style, but I have had the Hiroshima style. It was delicious! Extremely filling, and fun to watch them make. Hoping to go back for more at some point!
