Good things take time. At Loo's Hainanese Curry Rice, their 70-year-old Hainanese Curry recipe takes three days to cook.
Talk about dedication! 😋

Its so beautiful to see so many of our older generations reject the ease that comes with automation, and upkeep handcrafted, traditional and often time consuming methods instead of taking shortcuts in order to preserve that traditional taste in each and every item. My respect to him for being able to stand firm to doing just as he did years and decades ago even when the alternative of machines, other workers or even store bought curry powder and breading is now available. It is these noble people and food that truly make up our Singaporean food identity.

It's usually either the old folks or the chinese from Malaysia. Speaking english isn't wrong but kids these days think it's funny not knowing Chinese. Hopefully they won't give them all up though, I just wish them the best for the future

@@rayaya3342 Honestly, it's not because they think its 'funny' to not speak Chinese, it's mostly because they do not have a need to use it in their daily lives. Back then, subjects in school were taught in Chinese, and people spoke Chinese to communicate. Nowadays everyone speaks english and although Chinese is very useful, the younger generation just doesn't have a need to speak it fluently. Actually, the majority of Chinese students can still speak Chinese well, from my experience. There are just a few kids that have trouble with a second language, but most actually want to improve.

It’s so sad that old traditional food like this will die because they’re kids don’t wanna follow tradition or they can’t find anyone. Because id happily learn from them just to keep the tradition alive, not only applicable to this dish particularly but you get my gist

Easy to say that, but life in Singapore has its challenges, and people make their choices, some continue, some don't, for reasons they know. You don't have to be born into it you know. You can choose your master and offer yourself up for mentorship.
