Hey guys! Today I wanted to show you a recipe that I know you guys will love - Japanese CURRY! In Japan many people make curry with pre-made curry roux or kits - but today I’ll show you how to make it all from scratch!

Ingredients (2 servings):
- Two Large Tomatoes
- ½ large onion
- 1 clove garlic
- ginger (same amount as garlic)
- One Large Skinless Chicken Breast (aprox. 200g)
- 150g Daikon Radish
- ½ Apple
- 2 tbsp curry powder
- 2 tbsp Worcestershire sauce
- 2 tbsp cooking sake (or white wine)
- 2 tbsp honey
Optional
- 10g butter
- 30g coconut milk
How to Make:
- You don’t have to remove the skins from your tomatoes but doing so will give you a smoother silkier curry - to do this, score 2 large slits in the bottom of the tomato skins and place the tomatoes in boiling water for 30 seconds, transfer them to an ice bath and the skins will come off easily when cooled down
- Cut the tomatoes into small bite-sized chunks
- Dice ½ a large onion, grate one clove of garlic and the same amount of ginger - you can prepare any other vegetables to add to your curry too but make sure they are the small enough to cook through
- Cut one large chicken breast (skinless) into bite-sized chunks and remove any fatty or sinew parts and season with 3g of salt and pepper
- Heat olive oil over a medium heat and then add your onions - you want to let them caramelize for about 10-15 minutes. They should turn translucent and the liquid should start to evaporate from the onion
- At this point add your garlic, ginger and chicken - keep cooking for 5-10 minutes until no pink parts of the chicken remain
- Once the outside of the chicken is cooked add your tomatoes - continue cooking for around 20 minutes to really stew the tomatoes down
- While your curry is cooking, grate 150g of daikon radish and add to your curry straight away (this will help thicken your curry and add a sweeter flavor)
- You can also add ½ of an apple grated for a similar effect - or add both!
- To make a home-made version of a japanese curry roux add 2 tbsp of curry powder, 2tbsp Worcestershire sauce, 2tsbp cooking sake (or white wine) and 2 tbsp of honey (you may want to microwave it for a few seconds to easily stir through your curry)
- These next steps or optional but can make your curry milder and smoother - add 10g of butter and 30g of coconut milk
- Finally season your curry to taste

I remember the first time I made Japanes Curry for my family. Half of them were like we don't like curry... Years later and I will still get texts saying "hey remember to invite me over if you make curry."

Same, most of my family says I don’t want/like curry. They think I’m talking about Indian style curry and I have to show them pictures of Japanese curry to even have a hope of being willing to try it

My birthday is curry night and its the first time anyone has genuinely wanted to celebrate my birthday. normally we celebrate thanksgiving for my birthday a week afterwards, but now my birthday is one where I make curry and then play board games. This year they are playing dungeons and dragons while I provide all the food.

Yea, Japanese curry is a little more palatable for most than Indian curry. Not as spicy and pungent but I personally enjoy both.

Most grocery stores here in the states carry Japanese curry. S&B Golden Curry seems to be the most popular one, but you can find JAVA, Vermont, and Kokumaro in most Asian grocery stores. When we make it at home, we switch up the order: We salt & pepper the meat, brown up it nice in the pan on a high heat, take out the meat, deglaze the pan with a little of water and then caramelize the onions. Then we add carrots with the meat back into the pan, fill with water until covered, and add 1/2 the curry roux. That way the meat can simmer until its nice and tender while absorbing the flavor the curry and onions without worrying about burner the curry. After that I work in the rest of the curry roux to get it to thicken up. Love doing this way with chicken drumsticks still on the bone.

Wow this looks so much simpler and quicker than having to make the roux 1st using flour, which is why I don't make curry that often. Having to wash too many kitchen utensils is such a pain. I'm definitely gonna try making curry this way next time.

Dishes are a pain but sometimes when you need to think it helps to move your hands and doing dishes can help. The warm water and soap, the scrubbing. It refocuses the mind enough to plow through a troublesome thought process That or cooking It can really relax you if you let it

Dont be afraid of roux!! its alot easier than what it may seem! Also i would recommend using clarified butter instead of whole butter in your roux i think it gives it a better flavour, but clarified butter is kinda a pain to make in small batches so if you dont cook often i wouldn't recommend it.

I use one pot I just first caramelise my onions, next add other vegetables, then roast garlic, ginger, dried spices and last contentrated tomato purée, add magarine and flour and roast some more - cover with broth and let cook while stiring until just until simmering then stir occasionally until all vegetables are soft. In another pot I cook rice, noodles or just eat with bread.

I absolutely love making Japanese curry at home, it's super simple and so flavorful, but I usually find myself just using alot of store bought ingredients. I'm excited to try my hand at this recipe for a more authentic flavor!

I remember the first time I made Japanese curry using vermont curry, I didn't use any beef, just pure sauce on top of tonkatsu, so it was a total failure from what I had in restaurants

I make katsu curry that way. Just cook the sauce with onions with or without carrots and potatoes and serve it with tonkatsu and rice. Tastes good to me.

Japanese curry is still one of these dishes I make with my mom. It has such a unique sweet, spicy, savory flavor to it, it's really unlike any curry that I've had in comparison and just an awesome comfort food!

I'm horrible at cooking and honestly, I hate doing it due to bad memories from home economics class in school. However, I have interest in Japanese cuisine and there are no Japanese restaurants around where I live, so if I want to enjoy Japanese cuisine, the only choice I have is to learn to cook them myself, right? I always make a big pot of beef curry using the premade roux but I always use beef stock instead of water and let it cook for a while like a stew until the beef is super tender. It's one of my favorite things to make it's the most delicious meal.

I gotta try this. I always just buy S&B or Vermont Curry bricks (both not too hard to find in Texas) and then cook them with grated garlic, ginger, and apple along with caramelized onions, chicken thigh, and chicken stock, but have been wanting to try using curry powder instead of the bricks.

I made curry almost all the time. I always used potatoes, carrots and whatever meat I can get my grubby hands on. For the sauce, I used Golden curry blocks.

What a knockout recipe, Champ! With the sweetness of the daikon and apple, I think the honey is superfluous, for our tastes, but I like that you don't use the roux cubes.

Daikon Radish is hard to find in my region and rather expensive online so i subbed grated white turnip/swede and carrots, it was good but have bought some Daikon Radish seeds to try and grow my own as it is common in japanese recipes i am intersted in making.
