It's no secret that Singaporeans love spicy food. This Sambal Fish (Stingray) is a popular fish dish that we usually have for dinner at hawker centres of coffeeshop. Now you can enjoy this at the comfort of your own home without making a mess. You can also prepare this in advance for your BBQ parties. We're very sure that your guests will love this. Remember to squeeze some calamansi juice over the fish for the extra punch.

Ingredients:
Serves 4 pax
Sambal chilli
-----
50g of dried shrimps (soaked in 1 cup of water)
200g of shallots
30g of garlic
20g of ginger
1/4 cup of cooking oil
25g of dried chilli - hydrated & deseeded
150g of fresh red chilli - deseeded
4 stalks of lemongrass (use only white part)
50g of dried toasted belacan
1 cup of dried shrimp soaking liquid
0.5 cup of cooking oil
2 teaspoons of sugar
Other ingredients / stuff needed

440g of stingray
1 piece of banana leaf
1 piece of baking paper
1 piece of aluminium foil
Some calamansi
Bake for 20 mins at 200C or until fish is cooked.

Thank you for sharing this recipe. It looks so delicious, definitely will give this a go. I really appreciate the detailed instructions and most of all the weight of the ingredients because the weight of x number of shallots or garlic cloves etc varies depending on the size. Hi Hem Joo. Thanks so much for watching our video. We had leftover. Cooked sambal sotong with some of the chilli and still had some left which we kept in a jar. It was all eaten up after a few days. Hahaha. Very nice Sambal. We will share our sambal sotong recipe tomorrow.

Yes you can use salmon but white meat fish would be best. Go for one with less bones. Happy cooking!

I tried your recipe, but cheated on the chilly paste by using prepared sambal chilli paste. The stingray tasted just as good as outside hawker fare. Thanks ! Keep it up. I watch quite a lot of your recipes.

Hi today I tried the baked fish but it turn out very salty, is it that the fish was descale and I place the salt aftertaste left it for a while b4 baking it, therefor the salt turn watery abit.

I try it,bake inside the oven,and it work so great,the fish bring juice and the bananaleaf aroma Omg😰 yummy yummy😋the taste soooo delicious chef,because of the dry shrimp make it more like seafood taste,we didn't think about it "dry shrimp"👍👍👌👌👏👏 Chef,If we don't use dry shrimp,can we use ikan bilis??

Hi Sam! In Malaysia, apart from Stingrays we usually use a fish called Cencaru (the C sounds like CH-eese), or Jacket fish as we like to call it. Never called it by that name, but hopefully you can get some in your area! :)

If you haven't, here's what the uploader replied to some other comment: You can use snapper, Sole fish, or any other fish that you like. There is no hard rule as to what fish you want to use. You don't have to use expensive fish for this though. Expensive fish is best used for steaming. 🙏🏼

Hi Nur, so sorry for our late reply. if you wanna fry this on a frying pan, you can try using the following steps: 1. add some oil to your pan 2. add banana leaf after the oil has heated up 3. add some oil on the banana leaf 4. after the oil on the banana leaf has heated up, add stingray or the fish of your choice 5. pan fry the fish until cooked then flip to the other side and cook. 6. once the entire fish is cooked, lift the fish up slightly and add some sambal chilli on the banana leaf. place the fish on the sambal chilli then put another layer of sambal chilli on the fish - so that both top and bottom of the fish have chilli. 7. put the lid on and cook for about 5 mins or until the chilli is slightly hot - keep an eye on them to ensure the chilli doesn't get burnt. 8. serve and makan! enjoy!!! :)))
