Authentic Jamaican Jerk is done over pimento wood/coals. This dish use Jerk MARINADE to capture some of that flavour but conveniently done in the oven.
INGREDIENTS ⬇️ ⬇️ ⬇️
- 2 Whole snappers or desired fish, cleaned (weighing about 10 oz each
- About 1 tbsp Olive oil
- 1 - 2 tsps fresh thyme, minced
- 1 - 2 stalks scallion, minced finely
- 1 - 2 tsps paprika
- 1 - 2 tsps onion powder
- 1 - 2 tsps Spice Jamaica Jerk seasoning
- 1 tsp crushed all spice berries
- 2 tbsps Grace Fish and Meat Sauce
- 1 - 2 tbsps Walkerswood Wet Jerk Seasoning
- Salt and Black pepper as desired
- Bell peppers
- Onion
- 2 cloves garlic, minced
- Olive oil
- Black pepper to taste
- Maggi All purpose to taste
Garnish:
Parsley
