I love this video. Definitely a throw back style to when youtube was YOU-tube. What a great memory for you and your son and food turned out amazing. That LSG is a beast man. One thing is certain...I think we all underestimate the results you can get from an iPhone this days.

First off, the camera footage and audio were fantastic! That phone makes a killer camera! The food turned out great as well brother. Very AWESOME Mike! Man, the memories with your son is priceless. We did pretty much the same here. Brisket, Ribs, Hot dogs, beans etc. I filmed a lot but with everyone coming over, I didn't get enough for a good video... But, I did make burnt ends with our brisket and they were the hit of the gathering. Now, yours turned out great on that beautiful offset! Man, the bark, the smoke rings, those ribs!!! Makes my mouth water. And that offset is just plain beautiful... I've got a few years on you ;) and Happy Birthday when it arrives! I won't stay up all night anymore, I just get up at dark thirty, get it all set and lay back down for a couple more hours until the first look. Thank you for sharing this and I look forward to more great cooks on that Lone Star Grills offset!

This brought back to my younger days I just turned 39 lol. When I was in high school my friends would come over and we would play basketball or just chill all night. We had a grocery store close by and we would go buy meat there. This is also around 3,4, 5 am and were out there Grilling burgers, pork chops, chicken, sausage anything we could find young slim and always hungry lol. Now not so slim but still always hungry lol. Lol, I know that feeling. There are times where I think I could just slap a brisket out directly on the patio before I go to bed and then get up the next morning to a fully humidity cooked piece of meat.

Dang!!! What a spread!! I ordered out July 4th. LOL That's a nice heavy duty smoker there. Reminds me of my offset smoker days getting up very earlier or staying up overnight throwing log after log in the firebox. I'm too old for that now though. LOL I like my sleep.

It’s not uncommon. Can’t always cook them right away and they take forever to defrost lol. This one was dang near defrosted if I remember correctly.

I'm a few years older than you, I cant make it through the night anymore, Especially when its 103 degrees here in West Texas. So I do what I call a hybrid cook. Start it out on the LSGz 20x36 for a couple 3 hours then fire up the MAK 2 star pellet and switch it over to that for the remainder of the cook. that way I'm inside in the cool house and I get to sleep!! (a little less if I decide to wrap at 165 ish) depending on how cheap I am lol I may even ,once I wrap, Finish off in the oven (ok that only happen once when I ran out of pellets) friends cant tell the difference that I didn't do it all on the offset! (I'm sure BBQ savvy people like you could but hey its free food for them so why make waves! lol) fun cook Happy you got to spend the one on one time with you son!!

I know a lot of folks use the oven after the smoke is done absorbing. I may use that method someday but I wanted to do this for my son and I. I’ll always remember and cherish it.

I use a mixture of white oak and cherry cause that’s all I can source locally. For the grates i typically just use a brush. It works well when they’re warm.

I love watching a fire in the dark but I bought an insulated cabinet smoker from LSG so I can sleep all night. After 3 to 6 hours, you have all of the flavor you are going to get in the smoker. I put it in the oven to finish and go to bed.

Leopard Spots, what’s your take on the quality of cook from insulated cabinet versus stick? I’m torn between an LSG vertical offset or insulated cabinet. I’ve cooked 8 years on Weber Smokey Mountain though it turns out well, the bark looks thicker from a stick burner. I’m ready to up my bbq game. The insulated cabinet smoker reminds me more of the WSM but on steroids. What say you? Thanks much!

Stick burners definitely produce more bark and smoke flavor. It’s old school bbq. Really can’t beat that. There are lots of ways to make good bbq but yea in almost all cases the stick burner wins

Everyday BBQ & Cooking thanks that does help. Some reason I’m drawn to playing with the pit. Have done many all nighters though now I just cook at a higher temp, wrap, and get ‘er done. Pork seems to do just as well with a charcoal vertical smoker but I can’t get a great bark or make brisket look anything like what great bbq is like.

Nice video and a great experience Mike. I've got a question. I'm about to pull the trigger on the same smoker as you. If you had to do it all over again, would you still buy the 36" unit, or would you go with the 40" or 48"? When I watch these Lonestar videos on youtube, sometimes the 36" unit seems like it might be a tad bit small. The price difference between each model is only a few hundred bucks, but with all the extras it does add up. Also do you ever wish you purchased the optional warming oven that sits above the firebox? I'm also considering that as it appears to have some nice additional uses. I like that you can hang meat in it allowing you to use it like a Smokey Mountain/Pit Barrel Cooker for a different taste.
