Helga's Pennsylvania Cooking

Make these autumn winter treats in your own kitchen!
Pastry Recipe---
2 C flour
2/3 C Lard or shortening (3/4 C butter if using butter instead)
2 tsp baking powder
1/2 c milk
1 tsp salt
Sift flour, salt and baking powder together. Cut flour mixture with cold shortening (lard or butter) and blend in. Add milk, form dough and roll out to about 1/4 in thick.
Peel and core Mackintosh apples to place in dough.
Cut squares about 5 in and fold up around apple, leaving top center open. Put in a a half pat of butter, and then spoons some cinnamon sugar on top. Transfer to a baking sprayed deep dish to bake.
Syrup---
1 C sugar
1 C water
1/8 tsp cinnamon
1/8 tsp nutmeg
2 tbs butter
2 drops red food coloring
Bring water to boil, add all ingredients except butter and food coloring. Stir and bring to boil, add butter and food coloring, stir a minute or two and remove from heat. Ladle over the dumplings.
Bake the dumpling at 350 degrees F for a 1/2 hr. great served with vanilla bean ice cream.

This was fantastic, exactly my grandma's recipe except she used a "scoop" of this and a "pinch" of that... I finally worked out measurements and it is much like your recipe.

Near Erie PA, my dad served Amish Apple dumplings with a warm vanilla custard "gravy" poured over top. I still make them that way. Give it a try, it's heavenly.

Nice view! I've never seen dumplings made this way! I like the way the crust is wrapped around the fruit! The syrup is a bonus! Looks tasty!

Thanks Todd! This is the PA Dutch version, but Lord knows there are lots of ways to make them. I just make them the way I like them, LOL!

So THAT'S where you came up w/ the cookie sheet sticker board! I love it. It took an hour for me to watch this because I had to get up and make a couple. I had to conjure up a quicker simpler way since I am hurting. I will definitely try out your way if/when I get better. Thanks Helga.

Yummy!!! Yea, we just made applesauce with mac apples on Tuesday not we have the closet filled with them! I love this time of year and your Dumplingss are yummmy!!!

I LOVE applesauce. I eat it with everything and like mine nice and cinnamony, if that's a word, LOL! Yup, apple dumplings are a favorite here. They charge like $5-$6 each at the fair for them, but they are good!

OMG!...OMG! I have been waiting for this video for ever. I will go out and get whatever ingredients I am missing so I can make these. I haven't even checked out any other KZfaq videos on *Apple Dumplings* I had to wait for yours'. I love your sticker board. I thought it is a great idea and fits into the theme perfectly. I watched this video and man those loook soooo goood. I gotta try it, and yes I am going to have to use store bought pastry, my attempt would be a train wreck and I don't want to ruin something that looks that good first time out of the gate.

Yup, you shouldn't miss out! If you can get the pillsbury brand, it's quite good. Let the refrigerated dough sit out abut 10 minutes to warm a little so it is more pliable for you to roll out and use. I'm sure they will turn out awesome! Thanks!

This looks really good. I have always admired those who could make a really tasty apple dumpling with a good crust. I am a crust person and do not like one that is tough. Kudos! Will give this a go.

Thanks Angie! That's actually a Princess House Fantasia Lasagna dish that I have had for many years. I used to seel Princess House at one time, it paid for my stainless cookware, silverware, and bakeware, LOL! Love it!

They sure are! But to tell you the truth, you can buy many of the pieces much more cheaply if money is an issue through ebay. It just depends on what you want. Current and new items you need to have a party, and I sure had fun having those as well! I have the Barrington stainless silverware, the stainless cookware, the Fantasia bake ware (most all pieces) plus the Vintage Garden. I also watch local yard sales. I needed a couple of the blue fantasia goblets to replace 1 that broke and my best friend found them at a yard sale for $5. Score!

Wow, it's beautiful up there. I've had a lot of apple dumplings in my time but I've never seen them prepared in that fashion. That's quiet unique and attractive. I read Steve's comment and I can't believe he's never had apple dumplings. I hope he comes for a visit so you can take care of that issue! (ha ha) I like your idea for the sticker board. It fits right in, and as your collection grows you can add more cookie sheets.

Well, these are PA Dutch apple dumplings, which are made differently than dumplings down south are, so that may be part of it. We do them with peaches as well. I know, Steve has huge gaps in his education, LOL! Thanks on the sticker board, I was looking for the right thing and when I came across these in the basement, I thought, eureka! LOL! Thanks, Wyatt!

Helga I am drooling over those dumplings I just made apple pie and chicken stew and packaged up my daughters lunch and dropped it off to her but I think those apple dumpling will be a hit so I am going to give it a try and make up a batch and I will let you know how they come out. I'll have to get your address so I can send you out a sticker that cookie sheet board looks awesome!

Your dumplings look so yummy! I love your baking dishes. They look so romantic country. Thanks for the lard tip. When you core the apples, do you core all the way through or do you stop to keep a bottom? I'm worried that the sugar and butter will make the crust all soggy if the core is cut all the way through. If you don't core all the way through, what about the pointy bits on the underside of the apple. Do you leave it or scrape it off? My husband calls that pointy bit the b*ttholes. Great tutorial!

I core all the way through. As it bakes, that sugar on the bottom caramelizes and isn't soggy. Trust me, I don't have soggy dumplings, ROTFL! My baking dish is actually a Princess House Fantasia bakeware lasagna pan. You can find one just like mine on ebay. Mine has the pan holder as well, which I love. The lasagna pan is bigger and deeper than the 9x13 casserole. Thanks for watching!
