About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZfaq channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZfaq videos, her cookbook, and cooking classes. my mom passed away 10 years ago and i really really miss her cooking TT^TT... her thai homecooked meals were really great. i wasn't able to learn cooking thai food from her before she passed away. maybe when i move back to thailand (someday) i can learn it from my aunt and my dad

If you have relatives that cook food that you love. Learn their recipe before they pass! I made that mistake with my grandparents but I can still learn from my parents who cook amazing Lao/Thai dishes. Take advantage of that knowledge before it's too late!

In Mom’s autumn years, I told her we are not looking to inherit her dollars. I told her we are looking to inherit her DESSERTS. I asked her to gradually fill the big deep freeze with her butter tarts, her oatmeal date cookies, cornflake raisin cookies, pies, and her signature Christmas cake. Mom passed in 2010. At family gatherings ever since, we toast Mom, and enjoy her thoughtful and delicious legacy.

TIP: If you don't have a bamboo lid to prevent condensation and you are using a metal or glass lid, line the top of the rice with a piece of muslin, linen, or cheesecloth, and then put your lid on top. This will prevent the condensation from falling on the rice for an optimum steam.

I’ve been using the microwave method for sticky rice for years because it is easy and foolproof - once you figure out the precise cooking time and heating level for your particular microwave. Once you have that, the rice is just as good as when I used the bamboo steamer basket. But that’s just my opinion; everyone should find what works for them specifically.

Thanks for the video! When I was a kid, my grandmother would get up at the crack of dawn to make sticky rice so I thought it was hard to make. Sticky rice, grilled/rotisserie chicken and papaya salad is just the best meal!

We just returned home to Australia after spending two weeks in Thailand and discovering how much we love sticky rice (mango sticky rice especially!!). We bought some glutinous rice to make it at home, but the directions weren’t great and I ended up soaking overnight then boiling the rice in water and it is like glue haha. Thank you so much for this informative video, I’m soaking a second batch now and will attempt a steam later today.

Thai rice is our family’s fav rice, my Mom is Filipina. Filipino stores tend to sell Thai rice more than any other rice, the rice is so aromatic and delicious! I love Thai food it’s so delicious. Thank you for sharing your recipes.

Live in UK and been watching this channel for about 2 years now, love the videos. Here is how I do my sticky rice. Add hot water to about half of inch above the rice, put in microwave with no lid, turn the rice every 2 mins to stop it from clumping up and burn, do this about 4-5 times until it cook, works for me. If it's getting too dry after 4th turn, put the lid on.

This is perfect timing!! My SIL just had an experience of buying sticky rice & trying to do it regular rice style-I was trying to explain the soak/steam & pretty sure she thought it just became too difficult to deal with then (us USA peeps don’t steam too much) I can’t wait to share this!

My sil did the regular rice cook method . What I noticed is a lack of fragrance and since fragrance and taste is related it did lack the taste . So I’d say no way never make it the normal cooking method it’s basically a waste of good sticky rice

The traditional soak and steam method is how my mom taught me. Sometimes she would stir in a cup of coconut milk at the tail end of steaming and cook for another 10 minutes. It made the sticky rice taste sweeter and fattier. So yummy.

Hey, can you explain how exactly to do it? She would pour the coconut milk to the pot with water and steam on top of it or mix the rice with it and than steam?🙏

@@daversqq so while the rice has been cooking in the steamer, you pour coconut milk over the rice. Finish cooking for another 10 minutes and then take rice out. The rice will absorb the coconut milk. If you pour coconut milk in the steaming water below it will not do much I believe. Never tried it that way.

I love your channel so much. You give great tips in such detail that even an amateur like me can prepare things with ease. I will be trying the metal sieve method since the Asian stores nearby are always out of stock of the traditional steamers. Being Southeast Asian myself, I have been experimenting more with cooking Asian cuisine and becoming more confident because of amazing KZfaqrs like you.

this is SO helpful! I just got a bag of real Thai sticky rice and I have that same Zojirushi, so I'll try that first, but I'd also love to try steaming it! thanks for going into so much detail; if I'd just tried cooking it on my own I think I really wouldn't have done a great job. but now I can!

I'm Asian ( Cambodian) today i learned you can boiled water instead of soaked it overnight lol. My mother taught us to soaked in water all i knew. I also just discovered 1year ago i can cook sticky rice in rice cooker as well woohoo lol. I used the basket steamer sometimes it cooked and other time it's undercooked very frustrated. Now i just throw in rice cooker done in 15 mins or less. Very informative thank you!

I absolutely love my bamboo cone steamer. Perfect rice every time. I refuse to cook rice any other way unless I'm busy then I'll switch to my automatic rice cooker for efficiency.

Thanks again for another great cooking lesson. Learning so much from you. My method was steaming using a bamboo steamer with parchment paper on the bottom but I think that the muslin cloth is better based on you result. My go to dish is “sweet sticky rice with mango”...1 cup coconut cream with 3 tbsp sugar and a pinch of salt boiled in a pan until sugar dissolves. Add hot sticky rice to the sweet coconut cream mix. Serve with fresh mango. Simple.

I love this, and thank you for doing this. I really like to know "why" things are done so it's really helpful to know that yes, the basket steamer is the best but I can still get a pretty decent job done with stuff I already have, and if I only had a microwave that's not an excuse to give this a shot.

I combine the traditional way and the rice cooker.:My rice cooker has a sreaming mode and I put a bamboo steamer, that I bought in Thailand inside. 30 mins of steaming and it comes out perfectly every time :)

my grandma sometimes uses a small pot to make smaller portion. she passed many years ago, mine never turns out right. I think I needed her special pot. my siblings and I used to fight over who gets the bottom part, it is crispy and toasty.

Thanks for the alternative methods to make sticky rice. I had been struggling to process a bamboo steamer but now I guess I can try the #3 method with a sieve. Question though: the lid you used fits so well inside the sieve, mine is the other way around, the lid is much bigger than the sieve, will it be a problem ? Thanks. P/s: I also asked via Facebook messenger, hopefully you will see my question either here or there.

Steamed rice gets turned out into a big square flat basket to cool and let out excess steam so it does not get gummy. Then it goes into a mesh bag and into the 6 liter cooler bucket. Rice is served cold out of the cooler all day. You don't want it too sticky or it stick to your fingers and make a mess. Mom is outside every morning at 5am cooking the Khao Niew on her wood fired clay stoves so it can be ready for the monks to get breakfast. Serve with Steamed veggies, grilled tilapia, Larb Moo, Som Tam and Tom Gai. A real Northern Kan Toke feast. Pad Cricket is optional.

Most of the time the ingredients that you use are not available easily in India and I try to look for alternative ingredients and try the recipe, I wish I have seen your videos when I lived in Boston because Thai food is my most favorite food on earth, thank you.

Sawasdee Krab! Thank you for sharing these methods. I actually just purchased a huad after seeing the first video, for cooking sticky rice. I also learned that I've been using the wrong rice. In North America (in the U. S. for sure), we've had long-grain, every grain separate drilled into us for a long time; I prefer sticky rice, I think it tastes better plus I hate having to chase individual grains across the plate. I'll be trying *most* of these methods to find the right one for me....what else am I going to do during lockdown? (^_^)/

This was so comprehensive and wonderful! I don’t have a lot of experience with cooking sticky rices so all of the information you provided really allowed me to understand how the actual rice behaves differently. This video is what first introduced me to your channel and now I find myself coming back all the time to discover more dishes to try. My middle child has celiac disease and Thai food has been a major blessing in our house because it’s so easy to find gluten free dishes 😊

Hi Palin this is an excellent video/tutorial. Thanks for that. I’ve been cooking sticky rice for almost 30 years after I was introduced to it by my friends from Laos. It was a revelation for me. Rice was the first food I ever learned how to cook when I was a little boy. My mom never made rice for us. But I discovered that I could go to the store and buy A 2 pound box of rice for $.10. What a deal. Anyway, short story shorter, rice became my most favorite food in the world because It was hearty and I could make it myself. When I discovered the taste of real butter, the combination of the two was like heaven for me. Nowadays, now that I know about sticky rice, my most favorite combination is sticky rice with Lao sausage and jeow bong. I don’t know if you’ve covered these topics but can you do a video on homemade Lao sausage and jeow bong dipping sauce? Thanks for all that you do. It’s absolutely top shelf.

I’ve made rice ( not sticky rice ) in my relatively inexpensive rice cooker for years, but have recently changed to using my Instant Pot, and after quite a bit of experimentation have produced excellent rice. I was wondering if you or any of your followers had any ideas as to how to prepare sticky rice in the Instant Pot. Thanks, and not only do I love your channel but am a Patreon supporter of you as well.

I found cooking sticky rice in the Instant Pot is a little tricky. The amount of water needed is very much depend on a few different factors e.g. the variety of the rice, how long the rice has been aged and dryed, if the rice has been soaked, etc. From my experience, about half of water is needed when cooking sticky rice vs Jasmine rice. If I don't soaked the sticky rice before hand, I only put water about 2-3 mm above the sticky rice. It seems very little water; however, this works for me everytime. If the rice was soaked for a few hours, then I just put water at the same level of the rice itself. I used rice function with medium pressure (12 min cooking) and voila it's done and perfect. P.S. I put the rice directly in the pot not on a steamer tray. Hopefully this helps :)
