This delicious palava sauce pairs well with a lot of sides from plain rice, boiled plantains, boiled yam etc...I hope you enjoy this recipe as much as I do.
------------------------------------------------------------------------------------------------------
INGREDIENTS TO STEAM MEAT:
* 150g Tripe (Shaki)
* 150g Mutton
* 150g Tolo Beef (Optional: Soak overnight to remove excess salt)
* 200g Smoked Turkey
* Half Medium Koobi ((Optional: Soak overnight to remove excess salt)
* 3 Medum Shallots
* 5 Garlic
* 1 Scotch Bonnets
* Thumbsize Ginger
* 1 Tsp Badia Complete Seasoning
* 1 Tsp Adobo Seasoning
* 1 Tsp White Pepper
* 1 Tsp Mixed Herbs
* 1/2 Tsp Dried Rosemary
* 1 Tsp Aromat Seasoning
* 1 Tsp Smoked Paprika
INGREDIENTS FOR STEW:
* 2kg Kontomire Leaves (You can also use fresh spinach or frozen)
* 3 Scotch Bonnets (Add more or less)
* 5 Garlic
* 2x Thumbsize Ginger
* 3 Medium Shallots
* 1 Tinned Tomato (You can also use fresh tomatoes)
* 3 Medium Fresh Tomato (Remove Seeds)
* 1/4 Cup Palm Oil (Add more if needed)
* 10g Momone (Fermented Fish)
* 1 Medium Chopped Onions
* 2 Tsp Crayfish Powder
* 70g Tomato Puree
* 1 Tsp Ground Cumin
* 1 Tsp Ground Coriander
* 1 Tsp Mixed Herbs
* 1 Tsp Smoked Paprika
* 1 Maggi Cube Crayfish
* 1 Tsp White Pepper
* 100g Ground Egusi

This looks so delicious. The more I watch West African food videos the more I see where cultural African-American food gets it’s roots… jollof rice = jambalaya vegetable soups = collard / mustard greens

Momone, koobi, supaku, garlic, ginger ... These are the main spices for traditional dishes like this. Adding any other type of spice makes is .... Ah well, to each his own. Nice video 🤗

Boy I’m watching this from London, I just love to watch you cook every time. your food always looks rich & enticing & full of different ingredients, I’m Caribbean but I’m fascinated with African cooking. Looks yummy! I love Kontomire Stew. I also heard in Ghana, it’s also known as Egusi stew. My mum calls this Egusi stew but in Twi it’s called Kontomire. I know it’s normally eaten with rice or boiled yam but can I eat this with gari as an option?

It sounds like you may be allergic to the leaves and maybe you should not eat it. Have you tried replacing it with Spinach instead?

You’re right, In Nigeria we add a lot of spices to our stews quite alright, but not in our Egusi though that’s because we add local seasoning and stock fish which have their own lovely taste, and will be masked by the spices being added here…so we normally don’t use them In our Egusi or vegetable stews. ( Though I have noticed that a lot of other GhanaianKZfaqrs didn’t use all these spices for their Egusi /Palava stew, So maybe she’s just used it here as a matter of choice and taste))

Looks delicious, but not Palava Sauce. Palava Sauce is made in Liberia from Jute or Molokhia leaves. Good job on the Egusi stew from Nigeria.

please im liberian and palava sauce is a liberian dish not ghanaian. furthermore this is NOT palava sauce 😂. palava sauce does not have ground egusi in it and we don't use that leaf you used.

Ghanaians also have palava sauce and it’s clearly made differently from how Liberian makes it. Same way Jollof rice is made differently by Ghanaians and other African countries.
