IF YOU DON'T HAVE A SCALE: 135g of paneer that has been through the food processor equals about 1.25 cups, unpacked. IF YOU CAN'T GET PANEER: You may be able to substitute queso fresco (Mexican crumbling cheese). In my experience this is a higher moisture cheese than paneer, so it will likely affect your cooking time.

I came across a recipe to make paneer cheese and oddly enough the recipe was the exact same as on i saw to make queso fresco

Were there any differences? The big thing I found (at least in the brands I buy) are that queso fresco has a higher moisture content.

I love this base recipe! So many options. It led me to experimenting with a 'ched-head' dough for a Cheezit replica. My wife's favorite. This recipe is really close! 1/2 cup of Lupina 1 oz grated smoked cheddar 3 oz grated sharp cheddar 1 oz grated parmesan 2.5 Tbsp butter 1/4 tsp sea salt 1/2 tsp baking powder garlic powder to taste 1 Tbsp ice water - finely chop the butter and refrigerate. - cut/blend remaining ingredients with pastry knife or processor into fine meal & refrigerate. - cut/blend cold butter into chilled mixture and add 1 Tbsp water. Mix until dough forms. - wrap and refrigerate 2 hours. - between parchment, roll out half the dough to 1/8" thick rectangle and cut into squares (use a bench scraper to separate every cracker for even baking). - bake at 300F for 20 minutes, rotating half way through, until golden brown. These turn out buttery and flaky! Keeping the ingredients cold really makes a difference! Using pre-grated parmesan gave it a rougher finished texture. Fresh grated produced much better results.

I just discovered lupin flour. A lupin flour Reviewer on Amazon posted this cracker recipe I Just made some crackers no cheese needed!! Can use whatever seasoning you want on top I used salt & everything but the bagel seasoning took 10 minutes on one side and then flip them over took the out that were done on edges and did another 10 minutes maybe less. (Depends on how you roll it) And no cheese needed and they turned out amazing. Thought I would pass it onto you because if you have no cheese around you can use this recipe and you will not be disappointed I used your tips about wrapping it in plastic wrap and letting it sit I also used your tip about rolling it out with plastic wrap on top and cutting the edges and keep adding it to thin spots that was a game changer thank you for that also once I put the salt in the everything but the bagel seasoning on top I rolled it into the dough also. Recipe is 1/4 olive oil or avocado oil & 1/4 cup water & 3 tablespoons flaxseed meal. One cup of Lupin flour and 1 teaspoon baking powder. These were so amazing and cooked for me and less than 20 minutes 10 min each side because I had them rolled out just right and I followed your Tip bout taking the cooked ones out and letting the rest cook but I also sprayed some olive oil on top even after I flip them but I loved how I put the seasoning on top and rolled it into the Dough the pizza cutter the fork holes everything worked beautifully! Try em you won’t need the cheese for these crackers they came out very crispy I had some with some onion dip and I do not need potato chips or Doritos ever again no more cheating! Also Go see “the keto kitchen” youtube he has a recipe for 100% lupine flour bread. Texture is amazing the next day I made a cinnamon version and I’m going to make a lemon version! Thought I would share to give you something to do in the future🙏🏼🕊 fully I’m not allergic to nuts they say some people could be allergic to this flour if you have a peanut allergy 😾 but this flour is my new go to. Definitely want to get a sweet white that is 100% lupine bean and fine milled Amazon has a great one. It’s expensive so is keto bread I’d rather make my own. Actually had a sandwich with the bread I made egg salad!! Also the keto kitchen has a whole video on different lupine flour if you want to learn about em

This is a very tasty and versatile recipe. I use my tortilla press and parchment rounds to make dough circles and my pizza cutter to pre-score the rounds into wedges. No effort at all, no rolling necessary. Uniform thickness too!

I made these tonight. Had to use Queso Freir. I cut it and wrung out moisture. Added onion powder, garlic powder, poppy seeds and toasted hemp hearts. DELISCIOUS!! Thanks Steve.

Yet another winning recipe! So glad that you are taking the time to make meaningful recipes rather than so many others who just throw ingredients together and claim the outcome is "the best"! Also, thanks for recipes by weight...after 50+ years of baking and cooking, I've found measuring by weight (especially grams) yields consistent results every time.

Hej Steve, Not much Indian cheese available here is the dank forests of the PNW. I make cheese, so I looked up how to make paneer. Super simple! Half a gallon of whole milk heated to gentle boil with the addition of 1/4 cup of lemon juice/ACP (Bragg's). Low heat to separate curds from whey. Into cheese cloth & rinse with cool H20. Squeeze out the remaining whey. Form a bag and press. Should give relatively inexpensive paneer. with minimal effort. Look up recipes for more detailed steps. thank you for your Quality. Still working on the mayo,tho'

Just be aware that your moisture content will be higher with the homemade paneer, so you'll need to play around with the water in the recipe or the baking time. 👍

Off to the store to purchase Paneer (ordered Lupin a couple weeks ago since you indicated you were going to work with it)! Steve your eyes lit up when you described the crackers!! As soon as I have the paneer am off to baking these. LOVE your channel and your ideas. You have found your calling! Hope and pray you get more followers so you can stay with this.

My husband said to tell you thank you I have created a small cookbook with all of your travel recipes all the way down to lemon pound cake toppers which was a comment in one of your segments now we will add a divider and put in this Dough because I have missed tortilla chips and crackers and if I'm going to mess up it is with that thirdly we would love to thank you for the jicama recipes I made scalloped potatoes with in this weekend for a family get-together and nobody knew the difference I was thrilled

The other name for the Mexican Cheese you can substituent Paneer is named Panela. I will be trying this very soon and report!! YUMMY LOOKING! Thanks!

I've had trouble finding Paneer but did try Panela in the tortilla recipe. The tortillas were a big disappointment. Very rubbery. I'm still going to try to find Paneer and see if that makes a difference.

Thank you Steve!!! I made my best crispy cracker yet using most of your directions. I did not know what paneer cheese was,, looked it up and found I could make it myself easily using only milk and lemon juice or vinegar. Several recipes online to choose from. Only takes a few hours and mostly just letting it sit and curdle while you do other things. Did not have lupin flour either, Used nutritional yeast and followed rest of directions. Then mixed in everything bagel seasoning. Baked several minutes, scored and forked BUT!! Then I was called to help outside (adding on to shed for new horses) setting posts, so I just shut off the oven with crackers inside. Checked a few hours later and oh what great crackers!!! Thank you so much. I may try making a sweeter version with cinnamon. You are awesome!!!

I posted a reply and now it is gone...so I will try again! Made these today. I baked them on the convection setting and almost over cooked them in less time. But I must say the wonderful cracker crunch is amazing! I ate several of them with a little slice of cheese on them. I did add some spice to them and add a bit of salt on top! Thank you for this recipe and all of your work you do to give us some great food. If my tummy had room I would have eaten them all!

I've had a lot of my comments disappear the last day or so too. Very confusing. I never bake crackers on convection, I find that they cook too rapidly -- especially around the edges. Anyhow, I'm glad you enjoyed them.

Ok Steve, I just made your lupinflour crackers, and they turned out great! My dough didn't form a ball after a minute or so, I added a bit more lupin, it never did ball up, so I just took it out and formed it like you said. In the end the crackers were so crisp and tasty! Not mad at the lupin flour at all! It did turn purple, but after baking, nicely brown. Thanks so much for this recipe! I will definitely be making more crackers, especially with holidays coming. A celery stick just isn't a cracker!!!

So delicious!!! Best keto crackers ever, I improvised a little. I tried a sweet version by adding a few drops of monk fruit sweetner, cinnamon powder and graham cracker extract. So good!!! Thank you for sharing 😊

Made this recipe today and it’s so delicious! I used greek seasoning and black pepper. The texture is interesting…unlike the almond flour crackers I have been making.

I just wanted to update on making Paneer. It was super easy and turned out great and it worked beautifully for this recipe. My non Keto hubby loved the crackers. Now I need to try it for the tortillas and tortillas chips from your video that I just watched. Love that you do this. Thanks so much.

Looks great Steve...lot's of work though. We don't have a lot of Indian markets in our neck of the woods and I haven't seen Paneer here in Utah so I'll have to go the queso route. But someday I hope to have a subst for tortillas.

Frankly, I don't consider it that much work. It's like maybe 10 minutes of active time. My tortilla recipe is coming Monday or Tuesday, and since you are making them on a griddle, that's going to be considerably more active time.

I spent 3 hours yesterday looking for paneer cheese- finally found it at Jewell- 9 bucks for 6 oz. I think I will use your viewers suggestion and use queso fresco. to cut (or draw) a straight line pull towards yourself, don't push, and place the tool at the starting point and look at where you want the line to end, your hand will come to that point naturally (weird brain magic stuff). Hi Steve, Love this recipe so much. I made them for the 3rd time today but I only had about 50 grams of Paneer, so I added the rest in Feta. The paneer I can buy is 255 G so it doesn't always fit the recipes. It made a bit crispier cracker, in fact I diidn't have to keep any in the oven longer than the 40 minutes. There was a bit of a salt aftertaste, but I think that is desirable on keto. I'm so happy with alternatives to Mozzarella. I'm grateful to you and Vernaz! I think there is other cheese choices for new creations. Thank you so

What I like about this recipe is that I think it's going to be very customize-able. I have a number of other ingredients/seasonings I'm looking forward to experimenting with on this.

looking at Gruyere as a substitute to the Paneer. (Since here in central Wyoming I have no way of getting it here) And I plan to use coconut oil. I'll report back as to how it all goes. ;)

This is very encouraging. I've been using Lupina for about 3 years, but hadn't managed to eliminate wheat flour and still get good results. I've made biscuits and yeast bread, and pizza crust with 2/3 lupin, 1/3 wheat flour, and a little vital gluten added. I'm not doing full-on keto, but I'm diabetic and trying to reduce carbs where I can. I haven't tried paneer. This sounds like it will be a real game-changer for me. Thanks so much for your experimentation and videos!

So easy. If you have milk, and some kind of acid (lemon, vinegar) you can make it. Might need to get muslin cloth (may be called cheese cloth) and a sieve but the rest you probably already have.

If you place two paint stir sticks from Home Depot on the sides, your thickness will be uniform and your edges will be straight.
