Recipe :
Sabudana Khichdi
Preparation Time: 20 minutes + 4 hours soaking time
Cooking Time: 15 minutes
Serves: 2-3
Ingredients:
1 cup sabudana (Sago Pearls)
¾ cup water
¼ cup peanuts
2 medium potatoes, boiled
1 tsp jeera
1 tsp chopped green chilies
8-10 curry leaves
Coriander leaves
2 tsp lemon juice
Rock salt to taste
½ tsp crushed black pepper
Method:
Wash 1 cup sabudana well and soak drain out all the extra water.
Soak the sabudana in ¾ cup water for 4-5 hours.
Dry roast the peanuts till fragrant. Remove to a cloth and rub between the cloth to remove the skin. Once the skin is removed, crush the peanuts to a coarse powder in the grinder.
In a large bowl, take the soaked sabudana, add the crushed peanuts and rock salt to taste. Mix well.
Heat the ghee in a pan. Add the cumin seeds, curry leaves, chopped green chilies and sauté till fragrant. Add the sabudana peanut mixture and toss for a few minutes. Cover and cook on medium heat for 3-4 minutes. Toss well. Add the chopped coriander, black pepper powder and lemon juice and mix well. Serve hot.
