This is a pantry cooking or use-it-up challenge, where I make easy meals for my family from food we already have, and try to clean out the fridge! I made breakfast for dinner last night: fried smoked sausage coins, blueberry/lemon muffins, scrambled eggs w/peppers and onions and potatoes. Used up a bunch of odds and ends and it was easy peasy to throw together after a long day.

I’m in the panhandle of Texas and we’re dealing with 100° weather as well. I found a recipe for a cucumber, chicken salad that makes amazing sandwiches on croissants. Super refreshing and really easy to make. If you use a rotisserie chicken, it takes maybe five minutes to throw together.

Loving the escape to the mountains. That’s my goal every summer here in New Zealand, we are trying to get around all the back country of the south island one summer at a time with the kids. Also love the too hot to cook cold fridge dinners! And highlight of the video - being a good steward and finishing the wine. 10/10!

Love the idea of getting away while virtual working to somewhere cooler. My husband and I were just discussing we need to be reverse snow birds- snow bears- finding a cool place in the summers. Excellent travel meal idea- chicken tortilla soup.

I cook at night now. It is too hot to cook in the day. I also prepare salads (i.e. bean salads, Coleslaw, lentil salads, and sprouts) and my smoothies (i.e. banana and oat smoothies. I also make lighter meals like Tacos and maybe a sandwich. I also chill my teas and coffee. Generally speaking I want nothing to do with cooked food when it's so hot, unless I eat the food cold. It was 88 degrees in my house today. It was 94 outside. Ain't nobody got time for an oven with that heat.

Oh my gosh you are using fiesta ranch! My childhood right there. My mom put it in everything! She still uses it now at 60 lol😂 nostalgic for me that flavor. Her aunt used to use it as a dressing on a taco salad she made using Doritos as croutons

We have Portillo's here in central Florida, and, since we have many Spanish-speakers here, I often here it pronounced the Spanish way, the same way you pronounced it. It just seems weird to pronounce those two Ls! :D I love these fridge clean-out videos!

Glad you got to get away but unless you stay until October, OK will still be hot when you return and I’m sure that’s middle of August with school starting. There is no escaping the heat for awhile (Texas here).

WORTH YOUR SALT LIME SALT: Mash together 1/2 cup fine sea salt and 1 Tbsp. fresh lime zest until well combined. Spread onto a paechment-lined baking pan and bake in a 225 degree oven until dry, about 50 minutes. Try it on: Grilled pineapple, steak, tacos, sweet poato fries. BASIL SALT: Pulse equal amounts of packed basil and coarse sea salt in a blender/food processor until basil is finely chopped. Spread onto a parchment-lines baking pan and bake in a 225 degree oven until dry, about 30 minutes. Try it on sliced tomatoes, corn on the cob, fresh watermelon. How to make Garlic salt from fresh garlic Ingredients ½ cup kosher salt or sea salt 6 garlic cloves Instructions Preheat the oven to 200 degrees Farenheit. Place the peeled garlic cloves and salt in a food processor. Process for about 1 minute until the garlic is finely chopped. Spread on a baking sheet lined with parchment paper (important, otherwise it will stick!). Bake for about 45 minutes until dry and crumbly. Remove from the oven. Wash out the food processor. Pour the mixture back into the clean bowl of the food processor and pulse several times until the desired consistency forms. (We kept ours a bit chunkier than normal salt.) Store airtight container at room temperature for up to 1 year. Homemade Garlic Salt Ingredients 1 tbsp kosher salt 1 tsp garlic powder or granulated garlic 1/4 tsp granulated onion optional: 2 tsp. grated parmesan cheese if serving over steamed veggies Instructions Combine all ingredients in a small bowl and mix well. Use as needed. Can be stored in air­-tight container or shaker for up to 6 months (if not adding the parmesan cheese). If adding the parmesan, may be refrigerated and used for up to 3 days. For Garlic and Herb Salt: 1/2 cup sea salt + 2 minced garlic cloves + 1/2 to 2 cups ”loosely packed” minced fresh herbs (like sage, rosemary, oregano, thyme, tarragon, chives, etc.) For Chile Pepper Salt: 1/2 cups sea salt + 1/2 tsp. ground black pepper + 1 + minced Chile peppers (from mild peppers to habaneros) For Citrus Salt: 1/2 cup sea salt + zest of 1 grapefruit, or 2 lemons, or 3 limes For (sweet) Baking Salt: 1/2 cup sea salt + seeds of 1 vanilla bean Seasoned Salt Ingredients 2/3 cup fine sea salt 1/2 cup sugar 4-1/2 teaspoons paprika 1 tablespoon onion powder 1 tablespoon garlic powder 1 teaspoon ground turmeric 1/4 teaspoon dried thyme 1/4 teaspoon dried marjoram Directions In a small bowl, combine all ingredients. Store in an airtight container for up to 1 year. SRIRACHA SALT: Stir together 1/2 cup kosher salt 5 tsp. Sriracha sauce and 1/2 tsp. fresh lime juice spread evenly onto a parchment-lined 15 x10 x 1 inch baking pan. Let stand uncovered at room temperture for at least 8 hours or overnight. Store in an airtight container at room temperture. Chile lime salt (aka Tajín) For the chile lime salt blend 1 Tbsp Salt Kosher salt or pink himalayan salt 2 Tsp True lime 1 ½ Tsp Chipotle spice Or other spicy chile powder For the seasoning blend: With a whisk or slotted spoon, thoroughly blend together the salt, True lime and the chile powder 1 Tbsp Salt,2 Tsp True lime,1 1/2 Tsp Chipotle spice For the fruit: wash and peel the fruit you choose to use. Cut into planks or spears (see youtube video above for cutting illustration) 1 Small Jicama,1 Med Cucumber,1 Mango,1 Avocado, pineapple, papaya, etc. Place fruit spears in a large bowl and sprinkle with the chile lime salt. Cut wedges of lime and serve fruit/vegetable spears on a plate with lime wedges for people to squeeze over the fruit/vegetables.

As someone whose house doesn’t have air conditioning, I am curious if you do have air conditioning in your home? I would guess you do, but, if so, I don’t understand why it’s so hot inside that cooking is not possible?

We do have AC. However, the AC has to work a lot harder to cool the house when the oven or stove are going for long periods of time. If we overwork the AC it may go out, and that's very bad.

I wondered if you have any Dollarama or Family Dollar stores near you? I was surprised that Family Dollar had a lot of spices for $1.00 and also canned Evaporated milk for $1.00

I accidentally dropped and busted my crockpot. I have an instant pot, but the slow cooker part just doesn’t work like it should. I see your recipes and have decided that I need to get a new crockpot.

The solution isn’t to get a new crockpot the solution is to learn how to us your ip put your ip on the manual setting then on keep warm not slow cook and done

We have Portillo’s near me in So California. The chopped salad is my absolute favorite there. But I make my own Honey Mustard dressing. I love that I can alter it, because I can’t eat chicken

& 3 DAYS LATER IN EDMOND… it was 106 degrees outside when I went out around 5:30. It’s now cooled down to about 99 degrees 😂 & all of us Oklahoman’s know… it’s the humidity that will do you in… 🥵🥵🥵
