How to make Yaki Tonsoku.
Yaki Tonsoku is grilled pork's trotter.
While there is little meat to this part, there is plenty of skin, tendon and cartilage.
It is commonly boiled or simmered in other dishes, in Fukuoka Yaki Tonsoku is often found at yakitori or Ramen shops.

2000 ml water
1 tbsp salt
some ponzu
some Sudachi Kosho
Sudachi Kosho(200g)
35 Sudachi
200 g green chili
32 g salt
8 g sugar
