Gnocchi is one of Babe's favourites, so I made her Parisian gnocchi with butternut squash, sage and pine nuts. This dish was made in partnership with ‪@TupperwareAustraliaChannel‬ using their stainless-steel Mastro Cookware range. Ingredients
- 250g flour
- 350ml water
- 40g pecorino grated
- 170g unsalted butter
- 5 eggs
- 1 tbsp salt
- 2 tbsp seeded mustard
- small bunch parsley, finely sliced
- 2 tbsp olive oil
- 1/4 butternut squash, diced
- 2 tbsp butter
- 20g pine nuts
- 10 sage leaves
Method
1. To make the gnocchi, add the water, butter and a pinch of salt to a pot and bring to a simmer.
2. Then add the flour and whisk until you have a smooth paste.
3. Turn the heat off and let the pot sit for 5 minutes to cool slightly.
4. Add the eggs one at a time, whisking until smooth after each one.
5. Once all the eggs are in the dough, add the parsley and mustard, and mix well.
6. Bring a large pot of water to a boil, add the dough to a piping bag and pipe in the dough cutting every 2-3cm. Once they float to the top, let them cook for 3 more minutes before removing them. Drain and place onto an oiled tray.
7. Sauté the butternut squash in olive oil until tender. Remove and then add some more olive oil and the gnocchi to the pan. Once you have some colour, add the butter and let it brown.
8. Next add sage leaves, pinenuts, and squash back to the pan and finely the rest of the parsley.
9. Serve and enjoy!

So you've basically not seen anything cooking-related then, this technique is among the most basic ones in cooking for many uses ?? Basically what you're saying is "oh you make a knot to tie your shoes? I should try that!"

@@Yaumyt gnocchi is traditionally made by making the dough, rolling it out into long cylinders, cutting it into dumplings, and rolling it on a gnocchi board to create more surface area for sauce to stick to. The technique in the video skips almost all of the tedious parts of making gnocchi, which I’ve never seen before. I’m not shocked to see a piping bag used in cooking, I’m intrigued that it can be used for making gnocchi. Even if this was the very first example of cooking I’ve ever seen, so what? No point in being a condescending asshole.

@@resoleccaWell the definition of gnocchi says its an Italian dumpling made from potato so…. U can’t really call it gnocchi at that point. Parisian Dumplings (with a gnocchi-like shape) would be more accurate here. Yes. You’re on the internet. Pedants are abound.

Around 300 BC Roman soldiers started building cobbled roads and marched for their dinner, gleaned what they could find along the way. The farms they 'visited' had stores of grain not potatoes, the Spanish brought potatoes to Italy around 1600. This is an ancient recipe that was made from anything that was at hand, any oil fat grease or butter, anything that could be made into flour or pounded into paste, any veg, herbs and spices plucked along the way, and guarded stores of precious salt & pepper .... and the occasional stray chicken or wild boar. Filling, stick-to-the-ribs road building food. I think later some thrifty italian mama tried it with leftover potatoes and a new taste sensation took the lead. The potato gnocchi recipe probably traveled thru the Baltic & Slavic countries up to Russia. Both ways it's a very popular middle European peasant dish.

@@justarandomperson4237 What he used is a "pâte à chou", you traditionally turn it into either something savory (like gougère by adding cheese) or mostly something sweet like éclair for instance

Strictly speaking you can add anything you want to anything as long as you draw a distinction between what is your take on the dish and what is traditionally contained in the dish. In this case parisian gnocci is defined by the use of choux dough and cheese rather than potato, so strictly speaking the herbs he added are essentially a spin.

I think it’s the fact that gnocchi Parisienne is basically poached pate au choux with cheese added that makes it “Parisienne” rather than any particular association with Paris itself
