You saw the word "sardines" and skipped right over this recipe. Come back! If you like salmon and eat tuna fish, you'll like this recipe. It's not too fishy, I promise! I admit, I'm not a fan of strong fish either but I've been trying to find ways to boost my omega-3 fatty acid intake and canned sardines are a convenient choice. This is one of my husband's favorite recipes, he would eat it every week. I found the recipe in an old, but fabulous, cookbook called The New Basics by Julee Rosso and Sheila Lukins (authors of the The Silver Palate Cookbook). Sardines and fennel are typical foods found in Sicilian cooking and this dish truly shouts Mediterranean. The flavors of fennel, onions, white raisins and sardines complement one another for a well-balanced dish.
