Pastele gets turned into a delicious stew. My family enjoyed this until it was gone, which does not happen often!
3-4 pounds pork butt, cut in cubes
Salt and pepper, to taste
1 tablespoon cumin
1 tablespoon oregano
2 onions, chopped
2 bell peppers, chopped
2 bundles cilantro, chopped
1 clove garlic, crushed
4-6 Hawaiian chili peppers
3 cups water
1 small can tomato paste
1 can pitted whole olives
8 green bananas (I used four and it was PLENTY)
Achiote oil
1 cup vegetable oil
Achiote seeds
For "Masa": First, slice the skin of the green bananas all the way down on each side lengthwise, then soak green bananas in really hot water for five to 10 minutes. This makes removing the skin very easy. Peel bananas and grate (using fine grater) into a bowl. Set aside.
For Achiote Oil: Heat vegetable oil in an old pot and add achiote seeds. Cook for 5-10 minutes and remove from heat. Keep oil in pot and allow to cool. You can store oil for later use in a glass jar. Use extreme caution when working with achiote oil, as it will stain.
For Stew: Cut meat into cubes and chop onions, bell peppers, cilantro, chili peppers and garlic. Cook pork with oil in a large pot, adding salt and pepper. Add cumin and oregano. Add onions, bell peppers, garlic, chili peppers and cilantro to pot and cook for 30 minutes. Add 3 cups water and cook another 45 minutes.
Taste and add additional salt, pepper and seasonings, if necessary. Add tomato paste and cook another 30 minutes. Add half of the achiote oil to the stew, stir well, then add remaining oil. Add olives and green banana (masa) one large spoon at a time, slowly, until desired thickness is achieved.

I never saw this before but I have made them in packets to boil. My mother is Puertorican and this a typical dish for the holidays. You made it look easy but it takes hours. We use green olives and not black. We put the oil and meat sauce to the masa too to make it change color from the Achoite.

I make Pasteles stew a lot and mine is so different from yours but I use the recipe that I use to make Pasteles. I even use the skin.

Beth, I never realized how many Puerto Rican like dishes are made in Hawaii! In PR we pronounce it differently-Pas-te-les. We take the masa and meat and fold them into banana leaves or wax/parchment paper. They are similar to Mexican tamales. You can leave out the oil entirely and just use the achiote powder in with the water or liquid that was rendered from the pork. Thank you so much for the idea to put all that yumminess into a stew!

Many Puerto Rican immigrants settled in Hawai'i to work on plantations. My grandmothers side of the family is from Puerto Rico so Pasteles and Arroz con gandule (simply called gandule rice in hawaii) were definitely staples at family get togethers :) Also because of language barriers amongst different ethnic groups settling in hawaii, the pronunciation of words got skewed over time. i.e. pasteles are pateles and gandule is pronounced gandudi

Omg living away from Hawaii is difficult. Not the easiest thing to find laulau or pastellas. However making a stew should satisfy my pastels craving

It’s getting better though. I can get chicken katsu, kalbi ribs, and kalua n cabbage at a nearby restaurant. They make the best Mac salad too!

Laura Marquez I would definitely say use way less of the oil. My mom said it was a little too spicy for her, but that doesn't mean much, since she doesn't like spices at all. My brother enjoyed it. I don't eat it, so I cannot personally say anything other than what she added to it. Sorry.

How long should you keep cooking after the bananas are in the pot?

I don't cook it for very long, just to get it to heat up. Remember, the banana is grated, so it will cook fast.

By the way my family had many restaurants in P.R. and made many pasteles. This dish is made in Hawaii and adapted by Puerto Ricans there which easier to make. If you go to a restaurant in P.R. you will not see this dish or any Puerto Rican cooking book.. The would look at you funny.

If I use the powder I do not add it to oil, you can add it into the pot because the pork has a lot of oil already.
