正宗娘惹棕(食谱)
餡料
1000克 糯米
800克 雞腿肉
100克 冬瓜糖
1粒 洋蔥
4辦 白蒜
80克 蝦米
8片 斑斕葉
香料
3大匙 芫西粉
1大匙 黑胡椒粉
2支 香茅
2根 紅辣椒
10克 南乳
15克 黃薑
調味料
少許 黑醬油
1大匙 豆瓣醬
2小匙 生抽
2小匙鹽
6大匙 食用油
先將藍花清洗乾淨倒入鍋裡熬出濃縮藍花汁液過濾待涼備用然後把糯米洗乾淨泡水4小時後瀝乾水份,將糯米取出3分之1(小份)放入藍花汁液,然後將剩下的糯米(大份)倒入清水,水必須要蓋過糯米備用,然後把餡料全部混合依順序將香料和調味料放入並炒香後備用,將50片棕葉頭尾剪掉放入鍋裡燙軟洗淨備用,用真面棕葉對折成漏斗形並放入糯米,餡料和斑斕葉後將兩邊的棕葉按壓並折下按壓緊實後用繩綁上就可以了,粽子包完後放入預先燒開的鍋裡並放入一小匙的鹽,蓋上鍋蓋氣壓上升後開小火煮至35分鐘就可以了,取出掉乾水分就可享用,謝謝
