Hey Chef John, I just wanted to say, I've been watching your videos for about a year now. And at the time I was just a sophomore in high school who had no idea what I wanted to do. And I always liked cooking but never wanted to pursue it as a career. But after I watched a few of your videos, that was when I knew wanted to cook. So I took a 2 year class in my high school where you learn to cook, run a restaurant, make your own menus ect. And I'm now interning at a good local restaurant, I love it. So I guess I want to thank you for inspiring me to cook.

What I love love about cake videos from chef John is that he always eats what he bakes and show the insides of the cakes. Many other youtube channels just show beautiful cakes or beautiful performance without attempting to show insides. They are afraid of "real eaters" or " real bakers" know that they do wrong. I have seen many channels like that and they have 1-2m followers. Unbelievable!

These came out fantastic! I made 3 each with peach, pear, raspberries, and candied orange peel. My favorite was the pear and raspberries, actually, I do have to say though that I reduced the sugar by half and they were plenty sweet for my taste.

AMAZING - these are so simple to put together and yet SO delicious! They lasted only a couple hours with a family of FOUR. I made them into little birthday cakes with candles for my son's birthday. I recommend using a mini SILICONE muffin mold because they DO stick - Next time I will use coconut oil spray ON the silicone molds. I used strawberry slices instead of PEACH.

Financiers means Financials in French and the reason why it got that name "they say" is because the bakery was next to the Paris stock exchange so the baker made it for his clienteles who works mostly in the financial district to have a small cake on their way without dirtying their fingers.

DearChef John, I just made four dozen Financiers topped with the following; Dark Chocolate, Toasted Almonds, Raspberries and l left the last dozen plain. I use a Baking Spray with added flour. The girls are coming over this evening for a little Poker and to brag about our Grandkids. It’s just suppose to be Poker but... You know us Grandmas! I’m definitely going to try topping mine with Peach 🍑 as soon as they’re available. ♥️👍🏼👏🏼👏🏼👏🏼

Nora pls This is a direct quote from the Nicholas Cage/John Travolta movie Face Off where Nicholas Cage's character tells an airline attendant, he can eat a peach for hours. It is definitely dirty, but in a very subtle way.

Maybe this isn't for Chef John, but for those of you who really like almond cakes and want a more pronounced almond taste - toast the almond meal before putting it in the batter. Just spread it around in a thin, uniform layer on a baking sheet and put in the oven for just a few minutes (you should probably stay by the oven to make sure it doesn't burn). Just like any other nut, the flavor of the almonds really intensifies when you toast it.

Little tip: to make your baking tin even more non stick with the butter + flour method, butter the tin first, refrigerate until the butter hardened again and then add the flour just before filling them up. If the butter is too warm and soft, it just absorbs the flour instead of creating an insulating layer. It's not a huge thing but it does make a difference when using sticky tins.

Pro Tip: If you do a lot of baking that involves this technique (which works fantastically and if you you aren't using it on all your cakes, you should start) you can make a schmear of butter and flour ahead of time and keep it in the fridge, then when you are in need of prepping your pan in this manner just take a portion and smear it around the pan and you are done in one easy step.

I can share with you a nice tip of my own; while dealing with a runny batter you can use an empty ketchup bottle with the "clean top" it will make work so much easier and you can also use it to shake the batter. all the best Yochai

I made these exactly as directed here last night...The only difference was I didn't have a mini-muffin tin. Pretty tasty. I actually found I enjoyed them more at room temperature than I did warm. I will note that I was surprised at how easy it was to find almond meal at the grocery store.

Regarding butter & flour, i like to put a little more flour and then gently tilt the recipient & tap & rotate. This way you get flour on the sides too. When done just turn back the recipient et tap again to remove the excess floor :)

I haven't smell durian or seen it at all but wanna know what's another really stinky fruit? Try courbaril or as we call it in spanish Guapinol. I don't know if somebody actually exports that to the US (probably not since it's so stinky that nobody would try to eat it) but if by any chance you are on a vacation on a tropical country and find some of does you would know what I'm talking about haha btw, the recipe is awesome and tastes delicious, I didn't used fruit at all, just topped them with some sliced almonds and they're great!
