The color is called Sunset Mauvish Pinkish Orange. If you buy the crayola crayons with the oversized 1200 color box (with TWO crayon sharpeners), it is usually the fiftieth color on the twelfth tier.

Made this today. The grocery store didn't have raspberries; not even frozen ones! So I substituted with black berries. Came out very, very delicious. :) Glad I went for it. Will definitely try it with raspberries another time. The smell coming from the peaches in the vanilla-lemon syrup gave me a bit of a head ache; not my kind of smell. Delicious though!

I just made this, it was absolutely delicious - the best part was the raspberry sauce, tangy yet sweet and bursting with raspberry goodness.

I just made this, and now I'm bummed I have to wait for it to chill, so I can't eat it 'til tomorrow. The smell of the vanilla peach syrup on the stove is the most heavenly aroma I've ever had the pleasure to experience. After the peaches are gone, I'm saving that syrup to drizzle on ice cream, fruit, cake, you name it!

I love food and I love opera, so after seeing this video about five times (like ya do) I looked for online recordings of Nellie Melba, who was one of the mostly highly paid and esteemed entertainment figures of her day. As with most great singers of her time (and a few from our own time!) recordings don't flatter her, and as recording technology was improving she was aging. But you can still hear what a wonderfully expressive singer she was.

A French dessert created by Auguste Escoffier, named after Australian opera singer, born Helen Porter Mitchell, better known as Dame Nellie Melba, she changed her name in honour of her home town of Melbourne. She was actually from a suburb of Melbourne named Richmond.

No you need the sugar to make the fruit go thru a process called maceration. It draws the water and sugars out of the fruit. But to make it healthier you can use splenda or natural sugar cane that isnt bleached (Raw Sugar).

I tried this and it turned out so good! Thanks for this Chef John! Now I have a question. I had some of that surgery peach syrup broth left that I used to chill the peaches in and I was wondering if I could salvage it for something else instead of just throwing it away. I made a small mixture with a little bit of corn starch to thicken it up and it made a nice little peach vanilla ice cream syrup. But I would like to know if there are any other uses for the original peach vanilla syrup?

@rockthecasba16

The main ingredient in syrup is sugar, it's the sweetener and thickener. Basically, without sugar you're looking at raspberry sauce. If you boiled it down to reduce it without the sugar it would thicken, it just won't taste anywhere near the same. Instead of a sweet syrup you'll have a sour sauce.
