Peanut Butter Banana Mead. It's time we finish and bottle this one. In all honesty, it's not what we were hoping for. It's not very peanut buttery, but... it is very banana mead. You'd have to watch the video, but, in the end, it's always a learning experience, and something we can improve on in the future.

See it’s videos like this that sets you above the rest when it comes to brewing channels. Others will BS and say how amazing it it to make themselves look good and make out that nothing went wrong, or not as expected. The honesty with your disappointment with the lack of peanut butter flavour shows how genuine you are. It also proves that even brews that didnt turn out as expected can still turn out great in their own way. Thank you both for your continued awesome, down to earth, factual, entertaining videos. Going to be interesting to see how that bottle is after a year of ageing.

I just got a pack of those same swing top adapters and agree wine bottles seem to be best suited. Also using two pairs of pliers and giving each side a very slight bend or elbow allowed me to adjust it to fit on nearly all bottles which was handy since most wine bottles seemed to be a little loose as is. Really happy with the product especially getting to reuse free stuff without extra equipment

Just gonna say having watched most of your channels offerings y'all are metal as hell and I really appreciate the work you two do. Allot of research as well as post production work goes into these presentations and I wanted to notate my enjoyment of how much the production value has increased. The content has always been wonderful but your POST filming work has gotten better by orders of magnitude. Damn fine work the both of you.

Oh well at least its drinkable. Thoughts on PB flavor, either boil down actual (natural) PB. A PB tea if you will. Last resort, find a PB flavor extract. Good stuff guys.

Derica says she can just barely taste it. I get it on the exhale, but that's about it. You're right though it may have added and we just don't detect it. Maybe a 'if it wasn't there you'd notice' sort of thing.

Swing top toppers! Only in coming back to research peanut butter mead, did I catch the ever so brief mention of this wonderful thing! Searching KZfaq, there are no videos on them at all. Only one company makes them, it seems. I must try these!

Thank you for the swing top link! We were using zorks, but they aren't made any longer. We were wondering what we might use next. We have grommets for half gallon jugs and full gallon jugs, but they don't work for wine bottles. We like reusable mead equipment. We're going to order those swing tops when we run out of zorks.

Oils are an important part of the transmission of PB flavor. I think the below idea of using alcohol up front may be your best option for going natural as that alcohol is more likely than water to pick up the flavor.

Olivenation has a TON of flavorings and extracts, check them out. Judging from your reaction you'll probably never brew this again, but I feel like a peanut butter flavoring would have worked here.

Great video, Love your videos. I think the usage of emulsifier and a good quality peanut butter oil is a interesting thought, Dont know if emulsifier could harm the brew though.. Wish ya´ll the best..

Late to the party on this but I got decent results freezing a few peanutbutter cookies (loose term, baked without adding oils specially for this) but this was for a peanut butter jelly wine. Not the best wine but hell the peanut taste was trong.

we used liquid peanut butter extract in a peanut butter porter and it turned out very peanut buttery. a little goes a long way it seems.

You might consider extracting the peanutbutter flavor in neutral spririts and then adding it to the mead. I haven't tried it, but I've heard it is the easiest way for fatty flavors like peanutbutter or chocolate.

Simmer the peanut powder in some of the water. Let it cool then add it to the mix. It might bring out more flavour.

I'm not sure what peanut powder you may have used, but most of the peanut powders I know of are largely the powder you get after extracting oils and such for other uses. Making it mostly the fibers, sugars and proteins and not as much of the flavorings. I think if you wanted a real peanutty flavor you might look into making a peanut extract, or distill out the essential oils of peanut. although now that I think of it I'd bet an almond extract would work pretty well in flavors. By the way that's for sharing your experiment. I'm hoping to do a bit of experimenting myself this year. I'm thinking of doing a holiday spiced mead, I'm debating doing a mead that I later back sweeten with apricot (I feel like I would want to add someth else too but the only thing I can think of is ginger), and maybe for summer time to roll around I should see if I can make a melon mead (honey dew and watermelon).

During a Barbecue of PB&J ribs we have to take beer and boil the PB&J in it to create a mop for the ribs while they smoke and cook. Just an idea to maybe take a little bit of water with plain jarred PB and get it hot and stir it in, giving it more of a liquid consistency that may be able to mix in better.

Perhaps, but the oils in PB can go rancid pretty quick, on a grill, you're using them immediately so no issue...

I found an essense from brewers best. Peanut butter. Made a 2 gallon batch of straight pb mead. Came out quite tasty. Took 2 bottles to a get together with some friends. Went home with 2 empty bottles. The brewers bottle called for 1oz per gallon. I used 1 1/2 oz for both gallons. Got a pb flavor with just the right amount of honey flavor .

I also prefer natural ingredients. Well now i am going to try a pb and apricot(dried and diced). Have natural pb from a local peanut farmer. See if i can get some of the oils out and use the solids. Hope the oils don't affect the yeast too badly. Will let you know.

I just picked up some Brewer's Best Natural Peanut Butter Flavoring to try in a mead. I think what I'll do is just put a teaspoon (or less to start) in one bottle of finished product to see how it is, because I don't think it needs to go in during fermentation. I'll let you know how it turns out!

CS Mead and More I had some I needed to bottle yesterday, so I added some to a partial bottle. I don't know how I like it in this one right now, but I'm also not crazy about how the mead itself tastes right now. So I put some in a full bottle and I'll let it age a while. But the PB flavor itself is good and tastes pretty real, IMO.

Far as the marbles go you can go to a auto parts house and get one of those parts grabbers with the little fingers to get in tight spaces grab a marble set it to bottom and release it. Wouldn't Peter pan work when you have the banana in it. ?

I got an idea, for the peanut butter flavor, using syrup meant for coffee. Davinci brand peanut butter syrup. I get my flavors from Amazon. Maybe using it at the end to taste.

I've read that nut flavors are hard to add to wine because something about the lipid content of nuts (or beans in this case) holds onto those flavors. I'm experimenting with making extracts via soaking in everclear. It's my preferred method for infusing herb and spice flavors, and I've got a jar of cacao nibs soaking now to see how well it extracts.

One bonus is if you add the extract at the end it bumps the alcohol up to guarantee no rogue fermentation restarts

Oh and for that peanut butter flavor your looking for have you considered infusing a vodka or maybe a little everclear with the peanut butter powder and just fortify the banana wine that way it should give you that pb&b flavor you want with a little more abv lol but of course that would have ment more time to have to wait for those two ideas to meld together

I'd assume you'd want to steep the peanut butter powder first in your water to release any remaining volatile oils and boost extraction. It's why you add peanut butter powder to the wort when hot when making peanut butter porters and stouts. I've tried adding it at fermentation temperature and it doesn't seem to extract much flavor.

I’m curious about the storage of all the bottled brews you’ve made. It seems like you have A LOT of bottled beverages. Perhaps it’s just because we don’t see it and our imaginations can go crazy on it, but how do you store your finished brews?

Not as many as you might think. Also, my mug holds half a bottle, and that much has about 0 effect on me so if I had one a day, that's 3-4 bottles a week gone. Add in Derica drinking a glass with dinner for another 1-2 bottles and we're going through over a gallon a week without even binge drinking. Since we make a gallon every 2-3 weeks, that's not so bad. We do have about 60 bottles in storage right now though.

You probably need the fatty oils in the peanut butter to transfer the flavor. Powered is just the proteins and fiber. I was hoping this one would have the peanut butter flavor too. I liked the sound of the Banana wine and thought this would be a really awesome version! You guys should try it again with real peanut butter.

Love your guys’ content! Started the wine from store bought juice and let my mom try it and she said it was better than the wines my dad usually buys!! Thank you for all your help!! One question tho; does clarity matter? I.e. if the abc and taste is how you want it in a week does it really matter to let it go further like y’all usually do? Or is okay that I’ve been bottling as soon as it tastes good and the ABV is where I want it?

I think the only real trick is to make sure that fermentation is complete before bottling (in order to avoid the bottle bombs). To make sure fermentation is complete: check for stable specific gravity, heat pasteurize, or chemical pasteurize.

@@WTB1327 Yes. Pasteurization kills the yeasts. I would look up how to pasteurize. There are at least two methods (heat and chemical). I'm not an expert on either of them. I do have a sous vide immersion wand, so I would go with the heat method.

Well... technically you could pasteurize that early, but.. after a week? I'm not convinced it's fermented much by that point. It's far better to let nature do it's thing and let fermentation complete before consuming.

This recipe and the banana wine recipe gave me ideas at the same time my 6.5 gal fermenter showed up...so 15lbs of bananas, 4 vanilla beans, 5gal of water and 10lbs white sugar is nearing the two week mark and bubbling away. Will remove bag of banana mush and have 5lbs of dark brown sugar to step feed so as not to be left with a higher than desired gravity. My success with mead making has been poor, as both times I've developed a, well, what can only be described as a suspended snot jellyfish. I'm guessing it was a bacteria or something introduced via the raw honey as it was the same honey both times. Only times I've ever had this issue, so... Keep up the great vids!

I might have used 1 vanilla bean and remove it after a week. Strong stuff! That jellyfish like thing might have been acetobactors forming a mother culture for vinegar. It's pretty hard to do actually! Did it smell of vinegar?

@@CitySteadingBrews the smell was pretty rough, not quite vinegar but then again I dont know what freshly made vinegar would smell like. Its weird that I've never had any issues with possible acetobacter other than using that honey, and it didn't really form until it was a couple weeks into conditioning and ABV was 14%+. Then again, I guess they're like yeast and dont read. Thought with using 1 bean for a 1 gallon that 4 in a 6 gal batch( 5+ banana must) would keep it from overpowering

So I tried a banana mead which turned into a fail. Had issues on my end but have learned a lot since then. I was wanting to try a strawberry/banana mead now and trying to put a chocolate twist on it at the end. Does this sound possible. I think this sounds delicious

I want to make a chocolate peanut butter mead using the Chocolate PB2 powder. What do you think about making a "tea" with the PB2 and using that with the honey instead of trying to put the powder in the must?

So i started an experiment last week and i have some ideas for it but you guys k ow a lot more so maybe some pointers lol, so what i did was i spiced some apple juice i believe Martinelli's 3 cloves and 2 small cinnamon sticks After 6 days of that i took the juice and put it in the fermenter and topped off with some apple cider i added yeast (13% tolerance) and 1.5lbs of wildflower honey my goal is to make an apple pie mead by new years next year once it zeros out i want to rack it off the lease and divide it in to two fermenters where i then want to top them both off with more spiced apple juice and a few apples any ideas or opinions on this would be appreciated

Seems fine? You may get some refermentation when you add the juice at the end since most juice is only 1.050 or so OG, and 1.5 lbs of honey is like 1.052, so you have 1.102 or so. Which is a potential of 13.7%. Depending on how consistent that yeast is, you 'could' get more fermentation but just watch for it. As you add juice, you dilute that 13.7%, so if it went below the tolerance, it could kick back up again.

Maybe try the red peanut skins. I don’t know how it would be but I know they have a lot of the peanut oil in them. Might work out.

what if the pb powder was made so it dissolved? and added first with water. then steep with the bannas?

I’ve made a chocolate peanut butter porter using peanut-infused vodka for the peanut butter flavor. It worked really well but the infusion process released a lot of oil that killed head retention. Might not be an issue for mead though.

@@CitySteadingBrews It was really simple actually, I just took a 750ml bottle of cheap vodka and dumped it into a glass jar full of unsalted, dry roasted peanuts. I forget how many jars of peanuts I used but it was enough so that the peanuts were just below the surface of the vodka line. I sampled it along the way but it didn't take long, probably less than a week. Other than the oils that were drawn out, the flavor was great!

@@CitySteadingBrews Oh man, I'm not sure, it was years ago. I do know that it was a 5 gallon batch and I had plenty left over though. Made for some extra tasty White Russians :)

hello guys, great channel and very informative keep it up. i just started brewing and i made a hard cider from no preservative apple juice on September 26th 2020. it stared ok until yesterday while i was checking the airlock it did not move for several minutes. i got board and closed the closet. my initial SG is 1.09 and i used levin 1118. do you think am stuck, and if yes should i add more sugar or what do you think i should do? thank you

Try adding PB2 during Conditioning not fermentation. I have made 2 Peanut Butter Beers and have the same issue. I want to remind my self to add it in Conditioning.

On your question as to how do you think you could get the peanut butter flavor in. Would a few Reese's Peanut Butter Cups work? Then you be adding a little bit of chocolate as well

As much as I love them... I don't think this would be a good thing. The oils will go rancid.

Would planters dry roasted peanuts work. Rinse off the light seasoning and boil them in a small amount of water and simmer. Run them through a blender with the water they were boiled in and put in a little bag. Might that not be a less oily way and still give a peanut taste. I might give it a try if I can find them. Hard to find here but bananas are everywhere, 4 different varieties.

You might need the peanut oil present or crush some peanuts and allow your mead alcohol to extract the nut flavor

Could you warm the water and dissolve the peanut butter that way or would that fall out of suspension to fast? Also, I imagine you would get stronger flavor if you made your peanut butter yourself that away you could control the roast of the peanuts.

Maybe put a small scoop of actual (not powder) peanut butter in right now you drink it? I have no idea what that would be like, but it would be easy to test, just put a little in a taste cup.

HELP PLEASE. I prepped pears and put them in a fermenter bucket, all sanitized etc, I left the bucket to ferment for 4 days with a bubbler when I opened it this evening it had 5/6 mildew spots on the top! What do I do, dump it or siphon and continue brewing?

Hmm, fresh peanuts roasted in the oven, then ground in a processor would seem good. Also, the peanut flavored oils in suspension would need a low abv brew, because high alcohol ratio could make them fall out of suspension into the lees, from what I understand. A wild ferment or cider yeast could work better. Not an expert, though.

When you say you’re putting a bottle away for a year or so what kind of environment are you keeping that bottle in? The same/similar place as fermenting? Could you possibly leave it in the fridge for that time and if so will it do anything to the brew?

We are actually testing a cold versus room temp aging to see if there is a difference. But, what we do is leave it in a closet at about 74F.

Hello. I am just starting out with making my own mead. My father got me a few 5 litre bottles for it. But I remember that you moved your ginger mead from a 1 gallon jar to a 3l one. I do not have any smaller bottles, nor can I really find any smaller than 5l when I check on various danish sites. Is there anything I can use to fill up the 5l bottle without damaging neither bottle nor mead?

Well, honestly a smaller vessel is best, but short of that, use sanitized marbles. The idea is to have as little headspace as possible after you rack from primary.

@@CitySteadingBrews Marbles ight be easier for me to get a hold of. Will spend the time until racking from primary to see if I shouldn't be able to find a smaller vessel, but failing that, marbles aren't that expensive. Thanks a bunch.

So , sorry not a comment on this video but have a question. Making blueberry wine from berries in a bag. Ig was 1.10, racked at 1.05,to remove berries, then added water to top up to 5 gallons and reading was 1.04. Does that mean i have lost about 1.3 potential alcohol overall?

Yes, adding water dilutes your brew.

A lot of pouders don't mix with water. Try cinnamon, curry, tumarick .... and you well see that they don't mix.

I have not tried this, so I'm working off of third party information here, but... that doesn't work so well and the oils in the nuts can go rancid. That was my first thought when we were making this one too!

@@CitySteadingBrews I know it's possible to wash the fat out of peanuts with hot water but I don't know how much flavor is stuck in the fat. Could be worth trying, that's certainly what I'd do.

I'm not sure either, you may have to use a substantial amount. But worst-case scenario, you should get a decent amount of nutrient from it.

All my research and third party experiences say it didn't add any flavor and some said the oils actually went rancid! That's why we didn't use that method in the beginning... but that was my first thought, lol.

So I tried making a kilja. I started with a sg of 1.15 and after two weeks fermentation was done. I went to test sg again and the entire hydrometer sank below the liquid level. Used 71b. Any idea what abv would be

Something may have gone wrong here... with a 1.150 OG and below 0.990 FG, that's 21.6% ABV. I've seen 71B do some crazy things but that's a bit more than I think is possible. Did you maybe read the original reading wrong?

@@mikefrost5660 That's 2 lbs of sugar. Your OG should be around 1.090. As for the hydrometer going under the level... I've never heard of that. Most, the scale stops at 0.990 which is the theoretical lowest the specific gravity can be, since you're only achieving under 20% alcohol. So... something is off, maybe your hydrometer is broken or miscalibrated? No way to know for sure, but, Sounds like you have about 13-14% ABV at most.

@@CitySteadingBrews I'm not the expert, :-) Banana, chocolate, pineapple, hint of cherry. You've got the banana thing down, a little chocolate thing down... not sure about the pineapple and splash of cherry. I'm all game for ideas as well.

I had a good result with fresh pineapple, honey, and a splash of lemon juice in a double boiler. Ended up with a great pineapple syrup that i added into conditioning. I enjoy it very much. Plus i ended up with some great tasting pineapple to munch on.

@@CitySteadingBrews according to their website they flavor there whiskey with real peanuts, but I agree they must use an extract as well. I bought a bottle once and was prepared to have my nuts roasted by someone for buying it. An older customer didn't disappoint...so I went and but some grape juice. Went home to made a different version of a screwdriver and made a screwball in his honor. Note* The whiskey was sweet enough on its own and had to add regular whiskey to cut the sweetness down a bit.

I would think peanut oil would give a good peanut flavor and the alcohol would pick up the oil decently well. Check in the Asian foods section at the grocery

I know of a brewer who uses Uncle Roy's Plum Essence is his plum porter and swears by it. I'm thinking of trying to brew a peanut butter stout myself and was thinking of using Uncle Roy's natural peanut butter essence, I'm not sure if you can get something similar there www.uncleroys.co.uk/natural-flavours/natural-peanut-butter-essence.html

Let’s combine a couple of your recipes! Your peanut butter didn’t give the flavors you wanted here, something in it needed to be broken down for further processing by the yeast (??). The koji mold you used in your sake can also be used to tenderize steaks because it breaks down fats and proteins. Hey... peanut butter is full of fats and protein. I don’t know if it’ll work... just brainstorming. Thoughts anyone?

@@CitySteadingBrews sorry, a bit more detail: the koji you use for brewing sake can also be used to tenderize steaks (search koji steaks). The reason for this is that the koji processes the proteins and fats in the steaks, similar to how it processes the starches in rice, converting them to usable sugars. I’m not sure if it’ll work, but what if you koji the peanut butter in the brew? Perhaps it’ll breakdown the PB into a usable form for the yeast, and extract more of the flavors. Just a thought experiment...
