It's great to see that you first tried the dishes as they were made, so that you can experience the creations made by these passionate people, before adding the sauces. When I was a kid I used to add chilly sauces to my food straight away and my mum taught me a lesson about appreciating the dishes in their original states before altering them with extra flavourings.

That wonton soup represents what makes Malaysia great! In Hong Kong and Guangzhou, the wontons would look and taste quite a bit different to the ones in Penang. Northern Chinese influences changes them so that they're bigger, the wrapping is thicker, and with a dash of sesame oil. Love the ethnic mix that is Malaysia ...

Every locale that Mark visits, he gives a glimpse of the history & the ingredients, his food vocabulary is top notch...Georgetown Penang unfortunately also reminds me of MH370 the tragic flight with the reference to Captain Zaharie’s hometown as the airliner dipped its wings there during its weird trajectory...

We in Malaysia especially the Chinese food loves to put in the dark soy sauce for color, it's not salty like the usual soy sauce that you had as condiment. It has a little bit sweet flavor to it, so don't be afraid of that dark sauce which most foreigners mistakenly thought of it as super saltiness. The sauce is always mixed with some soup base broth, hence it's not entirely poured from the bottle as sauce kind of thing.

hi Mark, the sauce generally consists of dark soy sauce (made with dates and soy hence it's sweet), pork lard (if you are lucky you get some crunchy chunks too), pepper, sesame oil and some stock. the dumplings you ordered separately usually have mince pork (3 part fat and 7 part meat), water chestnuts, prawns). of course comes in a bowl of hearty broth with greens and drizzle of garlic oil 😍

Mark Wiens Kon Lou is Cantonese, meaning Dry Mix, even though it is not exactly dry, but compared to the noodles in soups, this is the version that does not have soup, hence dry mixed. Wonton mee is priced for the chewy texture, the springy feeling when you bite into the noodles. Good video. Good job. Also, I see you picked up the local customs of calling older people uncles and aunties. Very good.
