So the main problem areas I could see were the cuts of bread, the cheese thickness, pan temperature, and choice of cheese. Placing the kimchi between layers of cheese was a good call because all the cheese would ideally melt around it to hold it in place. You want your bread to have a thickness similar to the presliced stuff you can buy at the store. Ramsay's bread was just a hair too thick. If it's too thick, your cheese won't melt. If it's too thin, it will have no structure and your grilled cheese will be a mess. As for cheese, you want to choose at least one cheese that melts easily and gets all gooey when melted. If your other cheeses don't have the same properties, then it's not the end of the world. Some cheeses I'd recommend are mozzarella, muenster, cheddar, and pepper jack. Avoid shredded cheeses if you can but if you must use them, be careful when flipping. Also, try to cut your slices long and thin (To increase surface area, which will make the cheese melt faster), and arrange them in even layers to make sure the taste is relatively consistent. You don't want to be like the guy in that one Tumblr post whose burrito he ordered had it's layers arranged vertically instead of horizontally, with each filling having it's own section of the burrito. As for your pan, medium-low to medium **on the stove** is the way to go. You want it to be hot enough to melt the cheese in time, but not burn the bread. Ramsay's biggest issue was that he cooked it over a fire. The high heat caused his bread to burn before his cheese melted. Also, spread your oil around the pan before you put the grilled cheese in and remember that too much butter will make your bread soggy while not enough won't make it all nice and golden brown. It will take practice but I'm sure you, whoever is reading this, will figure out your preferred proportions and temperatures in time. Just keep trying and and you'll eventually make a grilled cheese that will make you very happy. Cooking takes practice. No chef came out of the womb with a spatula in their hand. Furthermore, if you're looking to experiment, you can try eating it with tomato soup or adding things like red pepper flakes or replacing the butter with a spread made from butter, mayonnaise, and a bit of garlic salt (Makes it taste like garlic bread).

God, he went from the Gorden Ramsey scrambled eggs, which are basic, yet have a great texture, good flavor and a whole process to make them that is quick and intricate, to a grilled cheese which the only thing that made it special are the "exotic" ingredients he substituted the basic stuff for that don't even taste good, and cooking it on a fire place to make it look special but all it did was cool it unevenly. Not to mention the kimchi which I'm pretty sure overtook all the flavor of those "exotic cheeses" 😭

Gordan was probably once arguably the best chef of our time in his field of expertise, but now he is more of a personality than a chef. He probably still has the spark, but he is so focused on producing content that he never ignites it.

As a grilled cheese self proclaimed master, I can confidently say that the butter would soak into the bread and would not spread evenly if you used liquid butter. To actually have an even spread with liquid butter, you would practically need to soak the bread entirely into butter. Which don't get me wrong, that stuff tastes really good. But you don't want soggy butter bread with 250 grams of butter every time you have a meal. As a Norwegian I can say it is like eating the common American food every day.

As long as they don’t put added sugar in the bread, I think any grilled cheese can be pretty flexible and in terms of goodness generally speaking, I personally would add a lot of cheese and make it as spicy as I can with kimchi. I’ll probably put pickles and jalapeños maybe even banana peppers.
