MiMi's is the closest to what my mom used to make. My mom used to add dried & yellow mustard because she didn't want it exclusively tasting like mayonnaise. I haven't had potato salad since before she passed in 2014 because I'm that picky. She last made some for us on Thanksgiving 2013. My very German grandma used to make 2 potato salads--the standard plus one w red taters, bacon grease, eggs, bacon bits,chives, vinegar, dandelion greens, finely minced green peppers and onions. Old school delicious.

I always get compliments on my potato salad. I put a little vinegar and mustard in my mayo. I season with celery salt, pepper and garlic powder and paprika. In addition add a little chopped onion and celery. Don’t overcook the potatoes.. they should be separate but not too large. For taste you can slice up some boiled egg and add or decorate the top with. For my taste, I prefer no egg but many people like it.

Mimi's potato salad is the only dish that looks appealing and the type of potato salad I am accustomed to seeing. The sweet potato dish seemed more like a dessert, perhaps a souffle. The vegan potato salad needed a different texture and those large vegetable chunks to be diced into smaller pieces.

Make mayo from scratch (except if you know it's gonna be a hot day and the salad is sitting unchilled for a while, then use store bought bc it doesn't spoil as fast), chop up parsley and wrap that in an old kitchen cloth that you don't mind going green. Run water over the bundle of parsley until soaked and wring it out multiple times until the water you wring out the parsley is clear, this will prevent the mayo from turning green when you add the parsley to it. Use waxy potatoes of course, if you don't want to end up with mashed potatoes. Season the water you boil the potatoes in generously with salt, you don't want the potatoes to be bland spots coated by flavor, you want the flavor in there. Boil diced onions in vinegar and a bit of sugar until soft and then dump that on the freshly cooked, diced hot potatoes and let them rest for a couple hours, so they can take in the flavor as well before you mix in the mayo. Add sliced up pickles, cured and cooked ham (or canadian bacon) and eggs if you want to (I like mine without eggs even though it's more tradtitional and ham usually goes in south german potato salad which isn't made with mayo, but in the years I worked as a professional chef I found this to be the best combination for me). Add a little bit of neutral oil, pepper, some more sugar and a little mustard to get some kick in there (also it's better to let it take on the flavor over night), and you're done. Greetings from one potato salad culture to another.
