i used to make this in a german restaurant i worked at, had to make sure the sauce was suoer flavorful because we only served it with our liver and we bought a pack of liver every 3-4 months. im sure the liver would have tasted just like licking a crusty urinal at a sports stadium but some people kept ordering it cuz of this sauce. we didnt do the horseradish tho

Well Iam the first then, I would have used green peppercorns not crushed black pepper, black pepper has a harsh pepper taste where as green produce a better sauce with great flavour. My first meal as an apprentice chef cooked by the head chef (1984) was an Eye fillet steak with a green peppercorn /brandy /cream sauce with chips. The best steak ever

Is the brandy necessary? The sauce looks gorgeous but I don't think I could bring myself to buy brandy just for a sauce. The horseradish is a good idea though!

Ive done it plenty of times without alcohol and still got a very good result. Just use some water, the key is to clean all the bits off the bottom of pan with the water. This create a cheats stock that gives the peppercorn sauce the depth of flavour.

The above comments are false, the peppercorn sauce made without brandy / alcohol may be good but it wont compare to a sauce made with brandy, alcohol causes different flavour molecules to release in food meaning it causes the other ingredients in the sauce to taste better, that's real depth of flavour, hope this is informative for you!

Meat doesn't caramelize. Proteins undergo the maillard reaction, sugars undergo caramelization.
