I am a new subscriber and I love your cooking.Seriously what I love most about your show are your comments at the end of every episode. Like the way you react to your finished dish shows how passionate you are about cooking and eating food (lol). Indeed, a chef who doesn't love to eat, is not a true chef. Or at least in my opinion. And I am not talking about eating like crazy or becoming obese, don't get me wrong. But eating by itself is one of life's pleasures and you just have to enjoy food.Plus,you gotta have a good palate to become a great chef. And I can tell you have great taste in food. I hope you get your own cooking show on TV.

I am not Italian, so I get away with murder on these recipes, but I absolutely ADORE tomato sauces on these sandwiches. I will take leftover sauce and use it as a condiment on this sandwich, and I swear it is golden. Anything from a simple marinara to a hearty pork/beef/sausage sauce will work, but the simple marinara's really work best. I think it is the tomato acid with the sweet colored (I actually love to use yellow ones) peppers and the rich eggs over the buttered bread (I like to use french bread) just plain works. Call me crazy, but I also love to use fresh basil with the red sauce. Then again, I like to use fresh basil with anything.

Have you ever had the feeling of being the lone weirdo in a crowd? All my life I never saw anything but green peppers in pepper and egg sandwiches. That's why I couldn't wait to be on my own to make my own with red peppers. They are SO good! Love this recipe.

PEPPER- ROO I don't know how to spell it in Italian but phonetically that's what it sounds like. My first job Wayback in 1962 I worked with quite a few old Italian Guys. They were all about 40 years old or so .LOL I was 18 . They introduced me to PEPPER ROO you have to kind of roll your tongue when you say it. And I have been eating it ever since . They were all WW II guys and they broke my Stones pretty hard learning the job but I came to love them all. A wonderful part of my life in becoming an adult .

Just made this and absolutely love it. I put in cut onions and mozarella instead of provolone and also topped it off with ketchup but it still came out amazing.

I tried this a couple of weeks ago and loved it. I love onion though, and do add sliced Vidalia onion to it. I've since made it 3 or 4 times more because it has become my "go to" when I just can't think of what I want to eat and really don't feel like cooking, and I've never been disappointed. Thanks for the recipe idea!
