I saw the sad news on FB earlier. Your heartfelt post and then remembering this past livestream you mentioning that your parents were watching. As others have stated , I am sorry for the loss of your father. Before my father passed away a few years ago I introduced him to KZfaq programming and one of the channels we binged on was yours…. As a kid we lived in Portsmouth Virginia and one of our favorite things to do was to tour places like Williamsburg…. Watch your show brought us back to those fond memories

This looks so much like the contemporary Japanese dish of pork cutlet curry. In fact the only change would be the spices in the gravy. They even sell curry "roux blocks" that work like that ball of butter and flour, only it has all the spices mixed in as well.

Pork cutlet curry is a Japanese dish of British origin though. So it's not really Japanese. Its a British dish, at least the individual parts of it are.

Japanese tonkatsu is quite different from the pork cutlets made here. The panko breadcrumbs and overall spicing are significantly different, and this was simply pan-fried while a tonkatsu would be deep-fried. That said the preparation here shares a lineage with tonkatsu in the same way they both share a lineage with German schnitzel and other breaded, fried meat cutlet dishes.

John, I'm so sorry 😞 for your loss! I know nothing I can say that will make the pain of losing a loved one better! I will pray for you and your family! I lost my Son, age 32 of a heart attack 💔 did not know he had heart problems, October 7th of 2021 and the pain is paralyzing grief 💔 😢 😔. It was the worst day of my life...!!! I pray you can have peace!!! He was very special!

The butter rubbed with flour way of thickening liquid is a classical French technique called 'beurre manié', or "kneaded butter". It requires equal parts by volume of softened butter and flour, worked together thoroughly.
