Illium very Intelligent guy ..He knows people should know how tp make all essentials ...- True story .- my mom as a child in another country used to complaint was hard to find pasta in stores was to expensive ..she had to travel long distances 2 hrs when she was able to do it only if she thought of it and teach . see how simple when learning

I couldn't get 00 flour, so used general purpose flour, which I sifted twice, and it all worked out really well. First time I've ever made pasta, and the difference between home-made and shop-bought is phenomenal. Well worth the small effort and very satisfying. You gotta love Gennaro!

Gennaro, Jamie and all the people who work at Food Tube. You know have been aware, but it is good to repeat: you're fantastic. I simply love your videos teaching us your perfect recipes. Let's say that making the perfect pasta dough is romantic and exciting, but the last time I have followed Jamie's tips, my wrists have hurt for several hours. For perfect pasta I use 1/2 durum 1/2 semolina wheat( they are basically the same thing but the grind is different) and water. With 00 flour you get a softer dough and with the addition of eggs the dough is good for silkier pasta's like Pappardelle or Fettuccini . For Southern Italian pasta's Ravioli, Ziti etc. The harder wheat product is better and more conducive to filled and stuffed pastas. It is less likely to tear or fall apart.

I was surprised to see eggs used, since Italians are known for looking down on noodles. A lot of the recipies almost look like nokedli, which makes me think why not have paprikash instead.

Double Zero flour is referring to the fineness of the sift. Triple sifting regular flour will give you a very similar consistency. Just make sure to at least use a basic bread makers flour for the higher protein content.

In the USA you will have a problem finding 00 Definitely not at my local supermarket Maybe at the Italian old market in Philadelphia and for a premium price because it’s imported from Italy
