This authentic, Maryland-style cream of crab soup is pure and simple perfection! My classic recipe is made with 10 ingredients and finishes in 35 minutes.

Ingredients
4 Tablespoons unsalted butter (56g)
1 medium onion, finely chopped (about 1 cup/140g)
3 Tablespoons all-purpose flour (25g)
1 Tablespoon Old Bay, plus additional for garnish, if desired
¼ teaspoon table salt, plus more to taste as needed
¼ teaspoon freshly cracked black pepper, plus more to taste as needed
4 cups half and half (1 quart)(946ml)
2 cups heavy cream (1 pint)(473ml)
2 Tablespoons dry sherry
1 lb jumbo lump crab meat, picked over/shells removed (453g)

Instructions
00:00 Introduction
00:31 Melt butter in a large pot over medium/low heat. Once melted, add onion and cook, stirring frequently, until softened.
01:43 Add flour and whisk until absorbed by the butter. Add Old Bay, salt, and pepper and continue to cook, whisking or stirring well, another 90 seconds longer.
02:51 Slowly whisk in half and half until all has been added. Bring to a simmer, stirring occasionally, until mixture is thickened (it should coat the back of a spoon).
04:43 Slowly stir in heavy cream, then add sherry and crab meat. Stir gently (don’t break up the crab meat too much by stirring vigorously) until combined and reduce heat to low. Cook 5-10 minutes longer, stirring occasionally, taste-test for more spices then serve.
Notes
Half & half
Instead of half & half you may use 2 cups of milk and 2 cups of heavy cream (this is in addition to the other 2 cups of heavy cream called for).
Crab meat
Use fresh crab meat, jumbo lump is my preference, but backfin could be used instead. Lump crab meat is finer and will shred more, but will work if it’s all you can find. Do not use imitation crab meat.
Sherry
Dry sherry is best for this recipe. If you don’t have any, a splash of wine would work, just make sure you try this recipe with sherry at least once to know how it should taste. If substituting wine, I recommend a dry white wine but my mother in law, who this recipe originated from, just uses whatever she happens to have on hand and it always turns out phenomenally! Add the wine to-taste (I usually need a splash more than I do of the sherry).
Storing
Allow soup to cool then store in an airtight container in the refrigerator for up to 3 days.
Freezing
This recipe may be frozen for up to 4 months, note that I don’t personally love freezing this soup as it tends to degrade and may separate when thawed, but usually comes back together with some whisking. To reheat, thaw overnight in the refrigerator then reheat on the stovetop over low/medium low heat.
If the soup becomes too thick you can thin by adding a bit of water, but it usually becomes a nice consistency again once reheated.

The sherry is a nice touch! I was hoping that you were going to add something like this to counteract all of that cream / milk. I’m putting this on my winter soup list to be cooked the night before and served reheated in a homemade bread bowl. Great job!!!

Oh, I'm excited. I'm also a Maryland native and miss good cream of crab soup. I've seen lump crab meat at Sam's club and it's pretty good for those looking.

Here in Oregon we catch dungeness crab, so the next time we get some, we are going to make this. Crabbing hasn't been so good lately due to all the rain, but oh boy can hardly wait.

I am not familiar with restaurants in the Virginia area. I recommend the liquor for best flavor here. It can be left out but it will definitely change the flavor of the soup.

Because I rarely ever drink any kind of alcoholic beverages, when I come across a recipe that calls for sherry or wine, I NEVER know what to buy.🤔 I remember once being in the wine section of my local grocery store and trying to find bottles that said Sherry but couldn't find any. I love seafood though and I haven't ever even heard of cream of crab soup so I would love to try this. I grew up eating oyster stew made with some kind of milk, half n half or cream and have always loved it so this crab soup sounds delicious! Although I have never seen crab meat sold in containers like you showed. Only fresh crab or canned. I am going to look for those containers now and hopefully I can find them for this recipe.

Cooking sherry is not in the liquor section. It’s by like the balsamic vinegar in the grocery store. And fresh crab meat is what she is using.

@@Brandi_the_Baker yes, I knew that but on her video she says not to use cooking sherry but to use regular sherry. And yes, I know that's fresh crab but where I live, I have only seen fresh WHOLE crabs where you have to get all the meat out of the crab shell yourself. I have never seen it like she had where the crab meat is already removed from the shell.

Next time you are in the grocery store you could ask for the grocery manager. He/she should be able to help you find sherry that is not cooking sherry. You heard her correctly! Sam absolutely said don't use cooking sherry. It is way too sweet. Jumbo lump crab is quite costly and for a good reason. The meat is hand picked and picking crabs is time consuming for most people except for the pros in the packing plant. Blue crab is for sure the sweetest if you can find it. I'm going to my local Sam's club and check the price if they have it. I expect the size tub she had will be over $25.

@@virginiadaneke2362 thank you. I doubt I can find blue crab as I live in the Northwest and it's not sold here as far as I know. In fact, I have met many people in my life that have lived in this area their whole life like I have that haven't ever even heard of blue crab. But Dungeness crab is available here and it is very good, too. I just hope I can find it in a tub like she showed as I am too lazy to try to get all that meat out of the crab shell myself and it would probably mean having to buy several whole crabs to get that amount too. Dungeness crab is very expensive as well, even just the whole crab.

You can use an even blend of milk and heavy cream for the half and half (it’s just half milk half cream)
