Perfectly Grilled Pork Belly : Mastering Korean BBQ

Koreans have a special love for pork belly. When Koreans gather together to have fun, they always eat grilled pork belly. Except for those who cannot eat pork due to physical constitution or religious reasons, I have never met a Korean who dislikes grilled pork belly. That's why grilled pork belly is so special to Korean people.
One of the best things about living in Germany is that Germans also love pork belly, and it is easily available anywhere. I have grilled a lot of pork belly over the past dozen years. I have cooked pork belly in many different ways, including charcoal grill, gas grill, barbecue, stone grill, teppanyaki, oven-grill, etc., and have received confirmation from people around me.
In fact, pork belly is delicious no matter how it is grilled. However, if you are not 100% satisfied with your grilled pork belly, please watch this video carefully. It contains all the know-how on grilling pork belly that has been cooked over the past dozen years. This method is especially great when preparing for a classy party at home.
[ingredient]
Pork belly 2kg (5 servings)
salt, pepper
[Things that are good to eat together]
Lettuce
garlic
white rice
wine or soju
kimchi
Ssamjang
[How to make ssamjang]
1 Tbsp soybean paste
1 Tbsp red pepper powder
1 Tbsp minced garlic
1 Tbsp cooking wine
1.5 Tbsp sugar
1 tsp red pepper paste
1 bunch finely chopped green onions
[recipe]
1. Slice the whole pork belly into 2.5~3cm (1 inch) thick pieces.
2. Season generously with salt on both sides, then place in a container and leave at room temperature for about 30 minutes.
3. If moisture forms on the surface of the meat due to osmosis, wipe it clean with a kitchen towel.
4. Grill outdoors using a charcoal grill or gas grill for 4 to 5 minutes each for a total of 10 minutes (depending on fire power).
5. Place the grilled meat in a container with a lid and let it rest.
6. Place a frying pan on an indoor fire, place the rested meat one by one, and grill until slightly warmed.
7. Cut the meat into bite-sized pieces and sprinkle pepper on top.
8. It is even more delicious when eaten with ssam vegetables, ssamjang, rice, and kimchi.
9. Grilled pork belly goes very well with Korean soju, German beer, and red wine.
[Cooking Tips]
1. By seasoning the meat in advance, the seasoning of the meat will be appropriate and the meat will be tender and chewy.
2. Since pork belly is a part with a lot of oil, if the meat is too thin, flames may rise on the grill and the meat may burn black. Be sure to cut the meat into pieces that are at least 2cm thick.
3. If you grill and serve a large amount at once, you will have no choice but to eat meat that becomes hard and cold over time. If you store the meat in a container with a lid (resting) and then grill and serve it according to the speed of eating, you can enjoy warm and delicious grilled pork belly until the end.
4. Since the dish has already been cooked on the grill, you only need to lightly fry the surface on a frying pan for about 1 minute to crisp up the surface.

Was very interesting to watch. I was hoping to know more about seasoning before the grill, other than Salt. Aside from an audio walk through, this video has quality picture and demonstration. Appreciate it. Pork belly is something I know can be ambrosia. I Appreciate your information on my goal to learn to cook this cut

Thank you for your interest in my video. While living in Germany and eating Korean food, I have a lot of trouble deciding between the advantages of Western cuisine and the advantages of Korean cuisine. In the case of Western-style pork belly BBQ, you can achieve soft and deep flavor results no matter what part of the meat you use, but it has the disadvantage of having to cook for a long time, more than an hour. Korean-style grilled pork belly has the advantage of being grilled directly on a pan and eaten, but it has the disadvantage of requiring a good cut of pork belly, strong heat, and having to grill it on the table, causing a lot of oil to splatter. Also, because the meat is thin, it is delicious to eat right away when grilled over charcoal or high heat, but it has the disadvantage of eating hard and dry meat as the fat solidifies after just 5 minutes. Therefore, Korean-style pork belly has developed into a form that is grilled and eaten right on the table in restaurants. As I invited many guests to my home, I did a lot of research and found the best way to overcome these shortcomings. I don't think there is any information about Korean-style grilled pork belly that is grilled twice like this. Before guests arrive or before a meal, grill at least 90% over charcoal to give it a charcoal aroma, and then rest (the resting time doesn't matter how long). After that bring it to the table and cook it once more on a small pan before eating. You can enjoy soft and delicious Korean-style pork belly without too much oil splattering on top. My video contains everything. There is not a single scene that is not needed, so you can learn it perfectly by just watching the video. And Koreans also use various rubs when having a Western-style BBQ, but they usually do not use any seasoning when grilling pork belly on the table. I think it's because they like to enjoy the savory taste of grilled meat itself and enjoy it with ssamjang, vegetables, stew, etc. In my case, I seasoned it with salt and sprinkled a little black pepper. @dinnerprep I whole appreciate your in depth reply and I truly hope I didn't offend in any way. I've only personally done pork belly once and it didn't come out how I'd hoped. At on point in my life I was lucky enough to work at a very high quality restaurant, and i discovered that a lot can be done with few quality ingredients. For example. I had always thought pulled pork was bad. While at this restaurant, the owner asked me to try the pulled pork they had made. I couldn't say no, so had a taste. And I was blown away. I told them it was amazing, and I had never enjoyed pulled pork before, and the response I got was about like this "That's because people smother it in sugar and BBQ sauce " - I asked what they used for theirs for flavor and the owner and executive chefs response was "salt, pepper and garlic" I was blown away. I have enjoyed your vodeo, and the information you've given me, I look forward to taking it into consideration when experimenting with my own personal cooking. My main question though, is what sort of things would you add for seasoning aside frome salt?. Porkbelly is magical in its ability to taste pretty good even when prepared the worst, and I'd know because I've done it poorly myself. Are there any marinade styles or rub styles that you personally like for pork belly? Also, saving pork belly fat to use one baked potatoes wedges helps them come out very tasty, and also not burn as easily :3

@@Mickwithanumber I didn't understand the question properly, so I said something else. 😅 I just love this kind of serious cooking talk. There are many different ways to cook pork belly in each country, and even in Korea, it is cooked in many different ways. In most cases, marinades are done with simple seasonings, just like your restaurant chef. Just salt and pepper. When I want a stronger and more exotic flavor, I mix in Indian curry, masala powder, rosemary, thyme, onion powder. However, rather than seasoning the meat directly, the Korean style fills in the missing taste with a side sauce called Ssamjang. I wrote about the Ssamjang separately in the description section, but I will write down the detailed recipe here as well. I don’t know if I gave you a proper answer this time. I hope you have happy cooking experiments.

삼겹살을 숯불에서 구울 때 불쑈가 나지 않으려면 우선 고기가 좀 두꺼워야 해요. 기름이 녹아서 흘러내리기 전에 겉만 바싹 굽는게 중요합니다. 저는 최소 2cm 이상의 두께로 썰어서 굽습니다. 그리고 화력이 쎄야 하구요, 뚜껑을 덮고 짧은 시간에 빠르게 굽는게 중요한것 같습니다. 숯불에서는 빠르게 겉만 바싹하게 구우시고 영상에서 처럼 레스팅을 하시면 시간이 오래 지나도 다시 팬에 올려서 구웠을때 바로 구운것 같이 부드럽고 맛있게 즐기실수 있을거예요. 집에서 삼겹살파티를 하도 많이 하다보니 자연스럽게 연구를 많이 하게 되네요. 😍 감사합니다. 🥰
