Phil Howard is a legend, a chef amongst chefs, he had a winning formula in the square, holding 2 stars for a number of years and a beautiful restaurant that was both cutting edge and using heritage as its basis, the amount of chefs who’ve gone through the kitchen and done other things makes it one of the top five influential kitchens in the uk. All to leave that and change direction completely and open an Italian restaurant and get a star again. Extremely clever man and unbelievable chef.

To be honest, the video does not seem that interesting and easily can say it's a bit weak regarding rhythm and speed but... The Square has one of the best two Michelin star menus in the country because of it's pure creativity and elegance. Philip Howard is a top great chef.

I like how he gets flustered with people working around him. He remind me one if my old bosses, never cleaning his mess after his work.

Chefs work their whole lives and can't attain 1 star let alone 2...I've worked in the service for a long time and this chef is a boss...all this hatred is crazy.

when you blanch any vegetable or fruit it changes the properties of the meat. This adds changes the texture and makes it difficult for it to absorb flavours. Also, it's not much hassle, especially for a michellin star restaurant

Actually, if you went back around 2 seconds before that, you'd noticed he wiped his fingers on his apron before tasting the peaches for the second time.

ah ah ,pour éplucher correctement une pèche ,faut la monder et ensuite la plonger dans l eau glacée ,elle s épluche plus facilement

give the man a lapel mic or something, production of this is short selling the content. Despite the various bandwidths it can be viewed at your source material is poor (recording wise).

I am sure he is a great chef. Even though the dish wasn't for a customer, that would be a bad habit wouldn't you agree? Anyway, he is a nice man. I don't think that was intentional that he lick his finger and then touched the food. Have a nice day.
