Grill over open fire and coals… okay. Not cooked for long enough… Not rested Too rare. In my opinion… this “chef” did not do this right at all. A big piece of meat like that… and he grills it for (if) 10 minutes.. takes it off… and cuts it immediately…. 🤔🧐

I've never understood the hype behind the Galician beef like this. Young grass fed beef has a much more "gamey" taste than corn finished, older cows have a much more "gamey" taste plus is much tougher than young cows. Put both of those together and you get a tough gamey tasting beef which is exactly what this is. Sure, some people like gamey tasting meat and that's their choice but I'll take beef from a young corn finished steer over this any day.

I guarantee you the steak taste suck, inside not cook at all and he put a few salt on top . why dont you just eat raw steak then , no need to BBQ to make look brown. why do you think people from from Europe, middle east, US, Australia, canada love Chinese cusine: beef Mongolian, beef sate, beef curry etc?

Depending of steak size it should be rested min 5 to 10 min before cutting.
