Have made a jalapeno mead and found it way too hot and also don't like the "vegetal" taste it can impart. Part of the problem is that these and other hot peppers vary in scoville units making it very difficult to predict final level of heat. Also, I have made a "plain mead" and added one of my own smoked chipotles to a bottle for several days and found the heat level more controllable and love the smokiness of the chipotle pepper. Going forward, my future plan is to make a batch of plain mead and at bottling time, spike one 12 oz. bottle with a few chipotle peppers and allow to sit for a week before removing them. Will then use this "HOT" bottle to add to the plain mead at serving time; or any other mead with fruit etc.. incrementally to get the desired effect. Since everybody has their own preference to heat level, just the right amount can be added to their liking. Sounds like a good experiment anyway.

I started making this recipe a few months ago to prepare for summer and it has easily landed in my top 2. I've literally made 9 gallons of it because it's been so popular with friends even at a young age. I can only imagine how the 1 year tasting will go for the 2 bottles I've tucked away.

Oh! Good news! I was wondering about this batch. I would love a tasting over ice in the future. I'm okay with a chilled mead, likewise, chilled stones, or just chilled in the frig! I'm obsessed with this recipe and was waiting for this review to try it. Really looks beautiful.

Watching this for the 2nd time and I completely forgot to share something interesting! I've been using 3 gallon fermenters to make my delicious/popular meads, and I sometimes try different things when I rack to 1 gallon fermenters in secondary. I put a cinnamon stick in a plain pineapple mead in secondary and COMPLETELY FORGOT to take it out when I pasteurized because it was a little cloudy. It is absolutely delicious and tastes like grilled pineapple dusted with cinnamon sugar that you can sometimes get at Brazilian restaurants. It's sooooo good!

I'm glad you posted this, I'm working on a hot honey mead with habanero and jalapeno hot honey, I'm just making a traditional mead and then using the hot honey to backsweeten it once its done

The premade hot honeys often have preservatives, just check the ingredients, but if it's just for sweetening, should be fine.

Just a little salsa recommendation: Kramer's Salsa. It was originally made in a tiny Iowa town, but now that a major company bought the recipe, it's being made in volumes and shipped out to many stores. Cork Pop For The Win!

Yeah, I've had wines and other brews have fall out. It's not a big deal like Chernobyl. Chocolate covered cherry wine turned out fantastic! Pineapple & habanero sounds pretty good to me! Stuffed poblanos are one of my faves too, I stuff them with refried beans.

I've been waiting for this to come out for a couple weeks. My first brew in capsicumel is pineapple jalapeño. It's currently clearing and I have no idea if I'm going to like it. But as a mixologist, if I can finish the bottle, I can find something to appreciate

I just made a post today about how meads change over time, and if you don't expect it, it will shock you at times good and bad both can happen. For me if you like/love it at bottling time don't wait just drink it and don't feel bad about it. after 42 meads I have had them age amazingly and had some meld into meh. I can't tell you what is gonna go which way lol. It would be cool if I could but I have learned how to manipulate it to be more pleasant, but it is still a crap shoot on which flavor will take the lead over time. I have this issue because I am a mad chemist with my flavors and mix more than one fruit in almost all meads or a mix of fruit and spices. I have to expect the unexpected hahaha. Just glad over time I have gotten better and learn from my mistakes or shortcomings.

I am in the process of making your “how to make your first mead” mead (lol) and am in the conditioning phase but I am getting worried. I checked on it today and the mead seems to have gotten darker and is remaining VERY hazy. My process has been as follows: Day 1: made must according to recipe and got a starting gravity of 1.120 Day 2-22: plenty of action occurred in airlock. Swirled gently every couple days to help degas Day 23: action in airlock stopped so I took a reading which came out to 1.015. Swirled to ensure gas wasn’t causing a stall Day 28: Took another reading and it was still 1.015 so I racked to another 1 gallon carboy. Note due to a lot of lees and the fruit I had a less than a gallon in the carboy. Day 42: (today) looked at my mead and it seems darker and hasn’t gotten any clearer (I feel as though it’s actually gotten more hazy) Any idea what is going on? Should I be worried that my mead became oxidized? Any advice would be much appreciated!!

It "could" be oxidized but... unless you introduced oxygen in degassing it's not likely. As for clearing... some never do and some take a long time.

Hey guys, have you ever tried running an experiment of MAXIMUM OXIGENATION? If not, maybe an idea for a new video? 2 (small) batches of the same drink (something fruity as I read oxygen can increase floral and fruity flavours), one batch shaken vigorously all throughout fermentation, then straight up splashed/poured into the secondary, just going wild with it. And then taste testing both out after a month or so but not too long for the oxygenated one to become dull/flat. It'd be an interesting experiment to watch for sure.

Dilution is the only way really. We also weigh and measure everything to prevent that.
