18 years ago, I got garlic from my father and he got it 7 years before me from my uncle that had been growing it about 20 years before us. I don’t know what kind of garlic it is, but it’s a hard neck. over the years we have been noticing the flavor of the garlic has improved it has gotten stronger. Last year was our best year ever for garlic, the heads were so big, but the coolest thing about this garlic is, it has been in the family over 35 years. I can’t wait to see your garlic next year. Just a tip. The smaller heads of garlic you can store either in your pantry or in the freezer and next time you make broth just throw it into your pot without peeling and then strain it out.

That is what I do! Turns out great every time👍🏻 or (rarely) I will just cut them in half and roast them with anything I'm cooking in the oven. Then squeeze out the centers and use that for compound butter, or freeze.

I have a life hack for you Becky, when you’re moving leaves around, rake them onto a tarp and then grab two corners and haul to your destination. It makes for far fewer trips!

Becky, you are absolutely amazing!! I really appreciate your fast pace. I don't have time to wait for people to hem-haw around, just tell me, show me, I want to have time to try it too. You are doing a fabulous job with everything you do. Even when there's a "setback" you use it wisely by learning from it, not giving up. I'm proud of you! All you have accomplished this past year or two has been a joy to follow along and do with you. I really enjoy Becky's videos, and I couldn't put my finger on what was the thing that really set her apart from other channels I have watched, but you are 100% on the money about her pacing! Sometimes if feels like creators try to stretch a 5 minute video to 20 minutes or more with a lot of filler, but a 20 minute Becky video is 20 solid minutes with little to no filler. I'm invested for the entire time rather than opening other tabs and tuning out because I lost interest.

@@catr8604 YES! The filler is a killer for me, or the long intros! Even a short intro I'm out. I'm sorry but you're not a TV show, I'm on YT because I don't want to waste my time anymore. Some just try so hard that it's too much. Dramatic camera work, I don't really need to see ya walk out to your garden or barn in silence or drama music, cause I got stuff to do. I spend half the time skipping to the "meat of the subject" or hitting 1.75 fast mode just to get to it!! You are 100% Right it's about SOLID minutes! I just pray she doesn't change and listen to those who say oh to have a better channel do this or that, cause she could teach them a thing or two about "a better channel"!!!

FYI, the pampered chef garlic press can smash those small heads with the skin still on. I do that when I want fresh garlic, but feel lazy;) Goodwill has them a lot, I try not to pay full price;)

I just give the garlic a quick smash with the flat side of my knife and then the peel pops right off. Makes chopping the garlic easier too and it doesn’t always even smash the garlic just pops the peel off.

My hubby just said to cut off the tops of those small heads, put olive oil in it and roast them. They’ll be easier to pop out then. Love your vids!

For all those tiny heads of garlic, I would remove the loose skins, just slice the tops off, throw them on a foil lined baking sheet. Drizzle with olive oil, cover the pan with another sheet of foil and bake at 400F for about 40 minutes. You can squeeze out the garlic then freeze them whole or mashed. Great to just thaw and throw in with mashed potatoes or for garlic bread or pizza!

Isn’t it so satisfying when you get the garlic in the ground? It’s good that you planted some hard neck because you will be so glad for the scapes. I planted four pounds of hard neck. They do really well in the cold weather, but they are smallish. I don’t mind the small heads because it’s just me here, so I don’t use a ton. Music is my favourite. So juicy and flavourful. 💚

Growing garlic is my most favourite thing to grow! Don’t despair about the little cloves, sometimes I plant them deliberately in a spare area just because I like the small single bulb clove that forms (called “ a round”). Also, small heads of garlic are useful roasted as whole bulbs (once cooked, the cloves squeeze/slide out easily), or for throwing into bone broth. The reason why “seed” or organic garlic is used to plant with, is because ordinary store bought garlic is usually sprayed with a growth inhibitor chemical, to stop it sprouting in the supermarket. If you plant these, you will likely get retarded growth patterns, or a situation called “brooming”, because they were kept in cold storage for so long. Home grown, certified organic or seed garlic is best 👍 Good luck with your crop, can’t wait to see your harvest! Love your videos ❤️

I often roast the individual cloves with their skins left in tact - just coating lightly in oil and then at the end I squeeze out the innards and this is a nice mellow tasting way to eat garlic. It goes well mashed into potato or any dish.

Tips for the smaller garlic. I sit down and peel all the small ones and throw them in a baking dish and cover with oil. Wrap tightly in foil and then bake until golden. Drain off the oil, smash up the garlic and then press into mini ice cube trays and freeze. Once there frozen transfer to a Ziploc bag and keep freezing until you're out of garlic. then the oil can be saved as flavored garlic oil

Thanks for the video. I planted 100 cloves this fall (all from my 2021 garlic grown in my garden) and everyone I told said I was crazy, that it was too much. It is only when I see other gardeners like you that I realize I am not nuts and instead I am just mentally in a different place than most of my family and friends. You have given me a new goal for next fall... 500 cloves. :)

We grew the silver rose variety last year, and we’ve been super happy with it! Besides Polish white (it got so much bigger), silver rose was our absolute favorite.

The leaf you showed us is an Oak leaf. They are the best for protecting your beds and are what squirrels use to line their nests because they don't decompose over one winter.

Just an idea for the smaller heads of garlic... I roast them and when cool I squeeze out the delicious insides and store in the freezer in small containers. Amazing spread for sandwiches or baked potato.

Use the small garlics to dehydrate and turn into powered garlic for when you need only power garlic in a recipe and you can give it out as a gift for the holidays or for a newly married couple as a housewarming present.

Easy way to “peel” a clove of garlic (or several) is to put them in a jar, put a lid on it and shake real hard. The papers will come right off rather quickly.

Little tip Get some straw bails and cover or mix with leaves.. Nice balance for incredible soil and will protect ground. You can always pull some back once seasons change and ground thawed, then reuse..or turn under before planting again.

I separate the cloves and store them in the freezer, peels on. Get them out and let them sit before you want to cook with them, and the peels will just slip right off. That way you don't have to waste any, no matter how small the cloves are.

Use your little heads of garlic for broth making. Simply slice them in half and drop them in. You could use them to flavor soup base and remove them before serving.

You can cut the ends off the small garlic , put them in a pan lined with foil, drizzle with a little Olive oil, cover and roast it until soft. Then you can squeeze the garlic and freeze it. No need to peel it.

Good common sense Becky! I do know composting; I took a Master Gardener Composting Class, as an addition to the Master Gardener Class offered, in my area. As a rule, you never add weeds or diseased plant matter to ur Compost. So, I trash my spent 🍅 plants. Also, 🍅 horn 🐛s go dormant or their eggs will survive in the soil, til time to come awake next season. So that’s another reason to remove all worms (using a black light) and dispose of spent plants asap. Don’t leave the foliage up any longer than you hv to, next season, cuz the horn worms will enjoy the free meal and the lack of vigilance from keeping em at bay. I live in Dallas, so our Winters aren’t right for bulb development, But I keep trying. Gonna Try some 🧄 Again soon. Thanks for your wonderful tutorial.

So a tip with the leaves is to mow the leaves with a bag mower and that chops them up and then put them on your beds the breakdown really well and you won’t have to remove them, also I use leaves instead of straw to suppress my weeds because I have lots of trees and then it coasts me nothing but time.

Becky drop your garlic cloves in water. Let soak for about 5 minutes. Your cloves will practically peal themselves.. learned this trip from a Chef I worked with years ago.

Next time you have a bunch of small garlic bulbs, maybe make some torshi seer (whole garlic bulbs preserved in vinegar). By the time they’re ready to eat (years later) the skins should be easy to remove. =)

I've seen on KZfaq that some gardeners shred their leaves before they use them, in order to make the process of breaking down go a bit faster. They did it with a lawnmower.

One way I like to preserve garlic is to ferment it in honey. Makes for great addition to Asian dishes, marinades and salad dressings;)

I found your channel by watching one of your food prep videos a while back and I am now fully invested in you and your gardening ventures 🤣 I love watching your progress! I got inspired and saved some rose hips from a bush in my yard.. hoping to grow a matching one in the spring! Turns out though after research roses are notoriously hard to grow so fingers crossed something has rubbed off from your videos lol!

If you use your lawnmower and chop up the leaves, they will stay in place better and not blow away in the wind as easily. Great job on the garlic!

Bake the little clove heads in the oven for 60 min. The paste is beautifull in taste. I am planting my garlic today. Here in Norway we wait a bit longer so they dont start before frost hits. Soil can get too wet.

Thank you for your garlic videos, they’ve been a great help with me planning my first garlic bed. I’m in Oz & it all (nearly) went in today, 13 varieties, with 3 to go (need more soil). I ordered one pack of every variety from The Diggers Club here. ~248 cloves in total, with the leftovers to go into pots to make scapes for eating & to use the leaves for flavouring.

I'm new to planting garlic and have never planted in the fall. I grow exclusively in grow bags and pots due to small space restrictions. Now I know to plant the biggest cloves. Great video 👍

I only had 3 bulbs from last year’s harvest,they were tiny but I planted them all and they are all coming up It’s great to have some things growing. I’m saving all my leaves in compost bins when have broken down I put them on the beds for the next season. I use the spent compost to cover the beds until the leaves are ready. Can’t wait for your clean up video with your Dad

I love my seed square! It helps a lot when you want to minimize thinning of seedlings. I planted my soft neck garlic, Nootka Rose and Inchelium Red, here in S. Florida this past week. It’s my first time planting garlic, so I am hoping to get good results.

Hi Becky, I live in Connecticut we have an abundance of those trees, they're oak tree leaves. A pretty green when alive but turn a boring brown during the autumnal change. Take care!

Oak leaves are fairly acidic which might impact some soils. They also have natural tannin which can be used to dye paper and fabric. You might have seen dead oak leaf imprints on sidewalks after fall or winter rains.

If you divide the garlic and put it in a metal bowl and cover it with another metal bowl, so the openings of the bowls face one another, and shake really hard, it peels itself! It's AMAZING, how it works!!!

Perhaps an idea for leftover ends would be shallots. They don’t need a huge amount of room and they are so so good. Give it a try!

My dad did a home garden for.years and at the end of the season instead of pulling up the plants he would till them into the soil with a tiller.

Awesome. I planted 100 cloves of garlic yesterday in large cement mixing tubs. I have moles in my property so I will have to do lots of container gardening until I can afford to build the raised beds in a way the moles don’t eat my crops

I haven't had much luck with this method but I suspect different varieties have looser skins which would help a lot. I usually just smack a few of the smaller ones together on the cutting board a few times, pick out the big pieces of garlic meat and toss the rest. I admit it, I'm lazy.

At the other end of this process. When you want to peel large amounts of garlic, break up the bulbs and drop into a bucket/bowl of boiling water leave till cool and the skin should just slip off. I know it's not hard to get the skin's off but we used to do this in the Greek kitchen I worked in and when we had to do an bag of garlic a day it took the fiddle out of the process. I am now looking for garlic to plant.

Someone may have already mentioned this, but I ended up with a lot of smaller heads last year (now I know why!) and instead of pealing them and using them in dishes I literally just throw the entire head in with my broths that I cook down and it works out perfectly.

I would be thrilled if I had the ability to plant all that garlic. I’m in the south so I just planted short neck varieties and I planted 3 5 - gallon buckets for the first time.

I do that with my peppers. I save the seeds so I can plant them. That way I know they’ll produce. I planted large cloves this year hoping for large heads/cloves. I bought organic garlic and planted it. Hopefully it’ll work for me. I’m a garlic lover…my husband too. Tfs.🤗

You can use those small garlic cloves in your bone broths…. Just toss them in with the skins on…

I grow only soft neck garlic because I live too far south to grow hard neck effectively :) Unfortunately, because I moved this summer, I didn't get my garlic bed up and ready before October passed (which is the prime time for growing garlic here!) I MIGHT be able to put it in, but despite the fact that I live in the same zone as I did before, I've found that moving just 60 miles north of where I was before the climate in the country is DRAMATICALLY different than in the suburbs. Instead, I'm taking notes about my microclimate so I know exactly when and how to get my garlic in the ground in 2022 to have a monster crop in 2023. I can handle buying garlic for a year for great results happily ever after! I'm also super interested in planting Transylvanian garlic. I've heard the flavor is amazing!

If you put your garlic cloves no matter how small in a plastic container or glass jar and put the lid on then shake the jar the skin on the garlic loosens and you can just pull the papery skin off, I don’t bother peeling the garlic when roasting with vegetables or when crushing as it will just cook in with the dish hope this helps take care 😀

I ended up with a failed garlic harvest, planted in the spring, all the heads were small. So instead of peeling them and using them in recipes, I just toss the whole head in when I make stock. This year I planted in the fall and I can't wait to see what I get. Cheers and Merry Christmas!

Get yourself one of those rubber garlic rollers. I don't know what the actual name is. You put the garlic in the middle and just roll. I've always just smashed and peeled. Bought one of these and I love it. Works great on any size head of garlic.

I planted a few garlic bulbs when I saw this two weeks ago, and I already see several garlic sprouts that around about 2” high! By the way, on another channel, Daisy something or other, this guy Jag said that planting large bulbs produce larger heads. So I selected do large bulbs snd we’ll see what we get.

Becky, this has nothing to do with planting garlic but peeling it. I was peeling garlic to dehydrate by hitting the clove with a butcher knife which began to hurt my hand. I got my kitchen pounder (flattens chicken) and hit the cloves with that. It did not hurt my hand and the peels came right off. Just an FYI.
