*Traditional Balsamic Vinegar of Modena = ABTM
This family used to make balsamic vinegar for home use, but they liked it so much that they started selling it, and it became one of the largest producers in Modena. He is also president of the Association of ABTM Manufacturers and the Association of Expert Tasters.
What is traditional balsamic vinegar?

A menu of local dishes good with ABTM that you can taste there.
・Three kinds of Parmigiano Reggiano (aged for 18, 24, 30 months or more)
・Two kinds of ricotta cheese (cow milk, sheep milk)
・Two types of omelets (peperone and onion, zucchini)
・Three kinds of focaccia (olive oil, cheese and mushrooms, cheese and ham)
・Local hams (Parma ham, Bologna mortadella, salami, ciccioli, coppa, pancetta, lard, coppa di testa)
・Parmigiano Reggiano Risotto
・Two desserts (cheesecake, ricotta cheese cake)
・Two types of Lambrusco (grasparossa, sorbara)
・Two types of liqueur (limoncello, nocino (walnut liqueur)

ABTM aged for at least 12 years
ABTM aged over 25 years
One bottle each are prepared for you, and you can use as much as you like during tasting.
It costs 30 euros (as of January 2023), including balsamic vinegar, an explanation of this family, a tour of the storage area, and lunch.
All the dishes are very delicious, and when the weather is nice, it is possible to taste them outside. I recommend you to visit this place.
