Hi Mrs. Linda, I’m enjoying your videos. My poor momma is a blessed 77 but is in beginning dementia and doesn’t do well at cooking anymore. I like to eat cold leftovers! Even as a Kid. I am an elderly widow and I waste nothing. I cook large portions of stews, gumbo’s, chili, spaghetti . I have a vacumn sealer and freeze much of it. I cook just like my Grandmother did and have all her cast iron skillets etc . ❤

I would have cut the chop in small pieces and warmed them up with the potatoes, then scramble some eggs and cooked all together. Put some cheese on top if you have any.😋

Pork chops, eggs and fried potatoes was a favorite "farmer's breakfast" when I was a youngster living with my grandparents. You just short-cut the process by using dinner leftovers...nothin' wrong with that. It looks delicious! I often bake up a few extra potatoes to make fried potatoes with a day or two later.

i just made breakfast casserole for this next week. i used cut up leftover baked potatoes ,leftover ground sausage,left over cheese,2 eggs,black pepper,onion powder.cooked in oven and then when cooled slice up in serving size portions. love making dinners out of leftovers

I would suggest that you never ever use country crock again.. that is vegetable oil. What is vegetable oil? Well that is mainly omega 6... what does omega 6 do? it gives you inflammation, meaning arthritis, joint pain, all kinds of things. You want omega 3, mainly, which takes away inflammation.. and that is mainly in olive oil, flaxseed oil and butter etc... but throw away canola oil, vegetable oil, country crock, anything that is vegetable oils. Canola oil is typically high in omega 3, but it is highly refined and heated and washed with all kinds of pesticides and poisons.. so there for if you ever walk thru a healthfood isle and it says canola oil free on certain items, there's a reason for it. So stick to Olive oil, coconut oil, or even Lard. Or butter.. but stay away from vegetable oils and live a healthy life.

Good morning Linda, I’ve missed keeping up with your channel over the past number of days. I am currently far from my Georgia home on the other side of the world in The Philippines. I traveled a long with a family in friends with to visit as they visit relatives here. Trip was planned 4 years ago but was canceled due to you know what. I’m missing home for sure and can’t wait until I return to Georgia May 31st, but meanwhile I’m trying to enjoy this once in a lifetime opportunity to visit here. Right now it’s difficult adjusting due to the fact it’s 12 hours ahead of eastern time zone that I’m use to. Hope all is well.

What we do in the UK is called 'Bubble and squeak' You mash left over potatoes down and add all left over greens and smash it all down and fry it up, Chuck in a fried egg or two and you are golden! 👌

I do something very similar. I bake extra potatoes, next morning for a meal, I’ll dice half of one of those those potatoes, cook some onion in butter and when softened, I’ll add the diced potato and fry until heated through. Then I’ll add whatever meat I have in the fridge, stirring until heated through. I’ll serve with a fried egg or two. Looks yummy!!

A poor man’s breakfast, whilst I appreciate you were utilising leftovers in the fridge, I would hate to see a rich man’s breakfast. In my household there is seldom left over meat unless it is by design. If I cook a gammon steak, it’s got to do me at least 3 main meals. 1 will be a small piece of steak, one will be a stir fry, one either a soup or stew type dish. If I cook two pork chops, one will be used just as a chop, the other will be diced up small and used to make stir fry rice which would do two meals, one hot and one cold as a rice salad. I only cook one type of meat, once a week and even that has to be stretched. So often I see a “poor man’s meal” and think to myself, “that’s rather gourmet”😂😂

And if you don’t have leftovers to make breakfast do in the pantry and make biscuits and gravy. I like to save a bit from meals such as pieces of peppers, onion, or tomatoes and make omelettes real often. Healthier and better than a plain egg. Keep up what you are doing, and hopefully help people learn what we grew up learning.

I cut up peppers, onions and jalapeños and freeze them in ziplock until needed .Just stick them in hot water ,drain and put on paper towel .That get rid of any moisture that will make grease pop!

I live alone so I don’t care if I make leftovers. I cook a pack of bacon and have it for a BLT and also for breakfast the next day. I put any leftovers in little bags and add stuff to it to make omelet the next day .

I usually have left overs for breakfast. Also I bet the potatoes are better fried for a second time .
