You should prep scramble eggs in the morning. Then used a scoop that equals 2/3 eggs per omelette/scramble eggs.

1:05:10 Maybe the difference is how it looks. They want he eggs blended before you cook them. I think I read on the web that you wisp the eggs and then put them in the skillet. To start the cooking and then chop them will not look the same. To me egg is egg. I like mine over easy with thy yellow not totally cooked, just the white part. Blends well with the hash browns.

I love watching your videos, and it's obvious you've got the menu memorized. I've got to wonder though, what's your opinion on people who order off menu items or custom orders? I frequent a diner and sometimes I'll order a cheeseburger as an omelette (usually the lunch special burger). I got some bombastic side eye from the cook 😅 Probably because 3 other people ordered the same thing after they heard me order it 😂 but she (the cook) was cool about it.

Scrambled Egg Difference to me: The size of the scramble egg Chunks. It is a texture thing for a lot of people, actually. I like the smaller chunks of scrambled egg. which is to constantly scramble. When chopping up at the last minute, it ends up , to me, more a " scramble frittata" like texture and again, to me, over cooked. To put it in another context too, a lot of people like egg salad differently, small chunks vs. large chunks. Smaller for me is better . It is all a personal preference thing.

The difference in scrambled eggs is that I don't particularly like the texture of the white part of the egg, so id you use the fork, it kind of dissappears.

Escuche que si tostas el pan de los french toast antes de remojarlos en el huevo agarran una textura mas rico, enserio amo tus sartenes que no se les pega nada y tu parrilla, vi morir a esa papa que salto a la otra picina de aceite cuando las serviste haha, para las hashbrowns solo usas papas crudas o las medio coces? e visto que algunos hacen eso pero no se que tal jala. el chorizo no solo es mexicano, tenemos nuestra version pero existe el español y el argentino y en mex existe tmb otras variaciones como mas en el centro/sur hay un chorizo verde que tiene jalapeño, cuanto te dura ese bote de aceite? y la cantidad que tienes en la vasijota junto ala parrilla cuanto te dura? yo me sentiria inutil con guantes en la cocina... no entiendo como gente no comprende que los guantes no son practicos cuando cocinas, cuando sirves si o cuando puede haber cross contamination pero de ahi en adelante usar guantes inutiliza cabron cuando cocinas.
