The simple ones are always the best! My Sardinian mother in-law swears by cooking prawns in Fundador (Spanish Brandy). I’m going to do this one for her when I get out there next week. Thanks Pete, keep up the best cooking show by a clear mile on KZfaq! Truly Inspiring.

I love flaming prawns with Pernod for a wonderful fennel and licorice flavor. I think aquavit, a Scandanavian spirit flavored primarily with cumin, caraway, and dill, could also work very well for flaming.

@Captain_Cocktail There is no cumin in Aquavit, that’s Kümmel. PS We all know what aquavit is, there’s no need to mansplain.

I’m going to try this as bizarrely I have a small bottle of that exact gin recently donated but I usually do them in Pastis and love them that way on a really really high heat for the wok hei flavour too as the Chinese say. So give the Pernod a go if you haven’t already. Keep finding gems in Pete’s back catalogue - love it!

This is a dangerous recipe, after a glass or three of the first part you might not want to bother with the prawns.
